Well, since I've discovered nachos with tomatoes, cheddar cheese, hot sauce and sour cream is gluten free, they've become my favorite late night comfort food!! Problem is...I've been craving them and eating them nearly every night since...I'm sure it's not helping me lose those last 10-15 lbs, but it's one way I deal... :P

Good thing you can have dairy! I can't. Never did like sour cream. I have to use rice cheese on mine and I use refried beans. They're good but not like the real thing.

well...I eat it...I'm not entirely sure if it's ok for me or not. lol I still have some gas pains occasionally, but not nearly as bad as before. I contribute that to the fact that I still have some time for my insides to heal...I'm hoping this is the right choice. Refried beans sounds like something healthy to add to them, though. I never tried (or heard of)rice cheese??? I'll have to look for that ;-)

Have you found rice cheese that actually melts? The one I've tried just sits there like plastic.

I envy you. I cannot have dairy OR corn so no chips and cheese for me. I might try rice cheese.

For those of you who are corn free like me though, a yummy alternative to nachos is taco lettuce wraps.

Make black beans, taco meat, tomatoes, salsa, avacado (OR Whatever other yummy mexican ingrediants you like) and wrap them in big pieces of lettuce. yummy. :)

There are ways around anything!

OH, that sounds similar to the lettuce wraps at my new favorite gluten-free restaurant, PF Changs ;-) I will definitely try making lettuce wraps using the ingredients you mentioned too! Thanks for the advice :-)

Hi, I, too am intolerant of all grains & milk and dairy, so I choose Vegan Gourmet cheese, made of soy, and it melts almost instantly in the microwave. Food For Life now makes a large brown rice tortilla that you would think was made of flour, that you could cut up for nachos. Hope this helps. Welda

There's lots of different corn tortilla chips out there that are totally safe. I regularly use Trader Joe's yellow corn tortilla chips, & Whole Foods has several different brands too. Also, Tostitos has a natural chip line that includes tortilla chips that are huge, but very good. Open Original Shared Link

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
