I will be attending a conference in November in Las Vegas. I will not be staying at the conference site but a few miles away with a refrigerator. I know that I will be eating some of the meals out and want to know if anyone has suggestions. There will also be a few conference sessions that are sponsered that have meals what should I do about them.

Hannah,

I live in Vegas - you actually have a number of options.

Here is some advice

1. No Buffets -- too much cross contamination -- it sucks, but its reality

2. Outback Steakhouse is on the Strip!

3. Any of the nicer restaurants should be able to accomodate you (especially steakhouses) - I have had good experiences at Fix in the Bellagio, Craftsteak in MGM, etc

4. The Burger Bar in Mandalay Bay is a great option (similar to Fuddruckers) -- bring your own bun/bread!

5. Vegas has Carrabas, Flemings, Bahama Breeze, and PF Changs -- all have gluten free menus

If you have other questions, e-mail me

I've posted this before under Vegas (in case I forget a restaurant name) but I stayed at Ceasar's palace. And was fortunate enough to be able to go to the nicer restaurants in Ceasars. I called, or asked to speak with the chef beforehand - and every night I had a delicious salmon / mahi-mahi / or steak. I even had bacon and eggs at the buffet in the morning - I just spoke with the chef. Niros is the name of one of the restaurants. I can't remember the others, but I find that the nicer the restaurant the more they can afford to / want to / and safely can serve gluten free food.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
