Caprese Salad

One of my favorites... I'm guessing I'll be snacking on this often when I'm in Italy this summer.

Caprese Salad

Ingredients:

4-5 Large Ripe Tomatos, sliced 1/4" thick

1 lb Fresh whole milk Mozzarella or Burrata sliced up to 1/4" thick

1/3 Cup fresh Basil, thinly sliced

Thinly sliced red onion (if desired).

Extra Virgin Olive Oil

Aged Balsamic Vinegar

Salt and Pepper to taste

Prepare ingredients. If you are using Burrata save any of the cream that leaks out when slicing and pour it into the center of your serving dish.

Starting at the center of your serving dish, layer tomato, onion and cheese in a circular pattern while working your way to the outside of your serving dish.

Drizzle first with approximately 1/4 cup of Aged Balsamic Vinegar and then approximately 1/4 cup of Extra Virgin Olive Oil. Add salt and freshly ground pepper to taste.

What I would give to be able to eat that with no fear!! I used to LOVE it. Also dairy intolerant!

So just use ripe avocado instead of the cheese.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute.
