Well, I'm doing fine. I still sneeze for 10 minutes after I eat gluten and my lips get a LITTLE puffy, so........ maybe more research is necessary.

I have a bad aversion to it, tried to eat a burger on a bun and couldn't get myself to bite into that bun. I ate a cookie and yesterday I ate a half a corned beef sandwich on rye....did ok with that.

Well, let me tell you what we live on when it's so darn hot out....

a box of gluten-free pasta, like elbow macaroni or whatever

chop up some green onions

chop up some picklin cucumbers

leave those in a bowl with a large can of tuna

put some sugar, salt and pepper in there, let it sit while you're cooking the pasta.

Then, when the pasta's about half way done, throw a couple or 3 eggs in there with the pasta.

When the pasta's done, throw all that in a strainer, let it set for about 5 minutes then run cold water over it, peel the eggs, chop them up.

Then mix all that stuff together in a big bowl with mayonnaise. This is full of protein, keeps you full and is NOT HOT! Seriously, in Kentucky, we mostly live on this and fruit all summer....So far in June, we've had ONE day that wasn't in the 90's....and it's only JUNE!

Thought I'd share this "recipe" with you, it's a great thing to have on hand, and if you don't like the eggs, leave em out. You can use regular onions and cucumbers, but the picklin ones are sweeter and the skin isn't so thick and bitter, and green onions don't make ya cry and add some color....you cook up a big pot of it, and you're good for a few days, plus the longer is sets, the better it tastes.

Hi Connie, did you decide to get more testing done? You know even if all your celiac tests come back negative, it's okay to just decide to not eat gluten. Plenty of people here were never officially diagnosed, but they know that gluten makes them sick. Listen to what your body is trying to tell you!

Connie, that sneezing and puffiness sounds like true allergy! You need to tell your doctor this is happening and see what he thinks about allergy testing. True food allergies can get worse, and can become dangerous. (Like when your windpipe puffs instead of your lips!) Wheat allergy is a little unusual in adults, but we specialize in unusual around here.

If that were happening to me I'd take a little Benedryl to be on the safe side and stop eating whatever made me sneeze and swell. Then I'd nap for four hours because Benedryl makes me incredibly sleepy. :lol:

By the way, your recipe sounds good. I'll have to try it once it gets hot here. Thanks for sharing.

      Although sensitivity to gluten varies between individuals, multiple research studies suggest that consuming up to 10 mg of gluten a day is safe for most people with coeliac disease. Wheat flour contains approximately 10% gluten by weight, so this is equivalent to 100 mg of flour, or a piece of wheat bread the size of a small pea. There is a case report of farmers with coeliac disease developing symptoms from inhaling gluten containing dust from cattle feed but that is an extreme example and they were exposed to very high concentrations of airborne gluten over a long period of time.       You might look into wearing an N95 mask when others are creating baked goods with wheat flour in your environment.

      @trents thank you for that information. My parents feel that cooking flour in toaster isn't a thing as its already cooked product before made? but Airbourne particles is my fear. Like I have had symptoms from 6 meters away had to leave massive migraine.

      Yes, except for the most sensitive, cross contamination from airborne gluten should be minimal. Highly sensitive people may have nutritional deficiencies.  Many times their bodies are in a highly inflamed state from Celiac, with high levels of histamine and homocysteine.  Vitamins are needed to break down histamine released from immune cells like mast cells that get over stimulated and produce histamine at the least provocation as part of the immune response to gluten. This can last even after gluten exposure is ended.  Thiamine supplementation helps calm the mast cells.  Vitamin D helps calm the immune system.  Other B vitamins and minerals are needed to correct the...
