Rolled Sugar Cookies?

Hi, this is my first post.

I've known I had celiac for all of my 16 year old life and for a time I ignored it, and during that time I realized I utterly adore sugar cookies! But ever since I went back to a gluten-free diet, I haven't been able to find a sugar cookie that I can actually use..

So. Does anyone know a tried and true rolled sugar cookie recipe that doesn't use xanthan gum, sorghum, milk, nuts, chocolate, corn syrup, cream of tartar or butter?

If you have an old family recipe that you love for sugar cookies, you could use that, substituting in palm oil shortening for the butter. If your recipe calls for milk, you could easily substitute almond, rice, or soy milk without any problems. I use rice flour for sugar cookies for DH, and have found cookies are just fine without xanthan gum.

Here's my recipe:

1 c. sugar

1 c. butter

1 egg (beaten)

1 1/2 c. rice flour

1 tsp. baking soda

1 tsp. vanilla

1 tsp. salt

3/4 c. potato, corn or tapioca starch

M&Ms or Reese's Pieces are great in these cookies.

Cream butter and sugar until pale yellow (you can use a mixer for this step). Stir in the remaining ingredients and mix well (by hand). Drop onto cookie sheets by the tablespoonful.

Optional rolled: Roll out to desired thickness using extra potato (or whatever) starch. Cut out, place on cookie sheet.

Bake at 325 degrees for 12-15 min. (I always use parchment paper to avoid sticking.)

For chocolate chip cookies: use 1/2 c. regular sugar + 1/2 c. brown sugar and your favorite chocolate chips.

      Welcome to the forum, @yellowstone! The most common ones seem to be dairy (casein), oats, eggs, soy and corn. "Formed" meat products (because of the "meat glue" used to hold their shape) is a problem for some. But it can be almost anything on an individual basis as your sensitivity to rice proves, since rice is uncommonly a "cross reactor" for celiacs. Some celiacs seem to not do well with any cereal grains.

      What foods can trigger a response in people with gluten sensitivity? I've read that there are foods that, although they don't contain gluten, can cause problems for people with gluten sensitivity because they contain proteins similar to gluten that trigger a response in the body. I've seen that other cereals are included: corn, rice... also chicken, casein. I would like to know what other foods can cause this reaction, and if you have more information on the subject, I would like to know about it. Right now, I react very badly to rice and corn. Thank you.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
