Spinach Meatloaf - No Gluten, Casein Or Egg

Here's a link to a meatloaf recipe that avoids gluten, casein, and egg.

It is by Barbara Kafka, who is gluten intolerant. She writes fabulous cooksbooks, and answers questions on her blog. I have Soups, Roasting and Vegetable Love and whole heartedly recommend them all. She also does a lot of microwave cooking.

I don't have any teff flour, but I hope to try this out soon and I would love to hear from any one who does try it. (The population of people who eat gluten-free/CF/EF must be fairly small?)

I printed it. It sounds good or really awful but its worth a shot. I only have to be gluten-free but don't need to add alot of cheese to stuff because of fat & calories.

Hmmm... I can't really fathom flour or quinoa in a meatloaf. Or soy sauce for that matter. Also can't see cooking it in the microwave. But maybe it will work.

I do a meatloaf with ground beef and plenty of vegetables, including spinach. Just depends on what I have in the house. I used to use ground flax instead of egg, but this last time I tried some baby food squash. I saw this on another board and any way I can get more vegetables into my daughter, the better! I also use gluten-free oats and some V8 or similar juice.

I bake the meatloaf in the oven. The problem I have with it is that it gives off a lot of liquid. At times it has been so much that it dripped to the oven floor. But this last time it did not. Just made it hard to take out of the oven. But after it sits for a while, it absorbs the liquid.

I've been told that perhaps I should cook the vegetables first. I haven't tried that yet.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?

      Thankyou so much for your words.Its a hard battle when a supposed well known hospital whose celiac " specialist " has down played me because my colon looks fine and put it in my medical and so pcp doesn't take seriously. In their eyes we all carry that gene.Im having alot of bad days trying to be positive because of it.
