Banana Bread Recipe

I made this banana bread tonight and it was very good.

Gluten and Dairy Free Banana Bread (has eggs)

1 cup sugar

1 cup of rice flour

1/2 cup buckwheat flour

1/2 corn starch

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

3 eggs

4 bananas

1/2 cup oil

1 tsp vanilla

Preheat oven to 350F. Spray bread pan(s) with nonstick cooking spray or grease. Combine dry ingredients in a large bowl with a whisk. In another bowl, add eggs, bananas, oil and vanilla. Beat with a mixer until smooth and frothy. Add the wet ingredients to the dry and mix until blended. Pour into bread pan(s). Bake 25 minutes for mini loaves or until toothpick inserted in the middle comes out clean. Cool for a few minutes and then take out of pan to cool completely.

This makes a spongey quick bread that my DH says it's hard to believe it's gluten-free.

This recipe sounds great! I love banana bread! About the cornstarch - is that 1/2 a cup? tablespoon? teaspoon? :P

      Thiamine interacts with all the other B vitamins.  Thiamine and B 6 make a very important enzyme together. With more thiamine and other vitamins available from the supplements your body is absorbing the ones you need more of.  The body can control which vitamins to absorb or not.  You're absorbing more and it's being transported through the blood.   It's common to have both a Thiamine and a Pyridoxine deficiency.  Keep taking the B Complex. This is why it's best to stop taking supplements for six to eight weeks before testing vitamin levels.

      Yes I took a supplement that had B6 in it, low dosage though. I've stopped taking that. B1 doesn't affect other B vitamin levels?
