Vitamix Has Changed My Life!

I received a Vitamix as a - very generous - gift a couple of months ago. I had no idea what they did, but someone special thought that it would help me manage my restricted diet. I'm currently sticking to a Specific Carbohydrate Diet, so no sugars and no grains - except that lately I started eating rice again. It takes a lot of work in the kitchen to feed myself, so some help is welcome!

The Vitamix is completely extending the possibilities of what I can eat. I make:

- raw juices, so 12 ounces daily of nutrient-dense juiced fruits and veggies: apple/carrot/ginger, spinach/carrot/beet, apple/pineapple/ginger, celery/carrot/parsley/lemon, etc.

- nut milks from raw almonds, cashews, and coconut

- smoothies from nut milk

- fresh lassis with probiotic yogurt (yum!) which it turns out is just yogurt, ice, & water

Plus, I can easily make spreads (hummus, salsa, pesto), sauces, dressings, and pureed soups (including Indian dal) from scratch. All natural ingredients! And so much cheaper than buying them pre-packaged, once the investment of the Vitamix is made.

I'm not someone who would ordinarily recommend this kind of fancy kitchen appliance. Honestly, when I first got it, I thought "what? a fancier, more yuppier food processor?" (not that I've ever had a food processor). But I have been completely won over. I think it's worth the price. It's making me healthier.

The Lindt (Lindor) dairy-free oat milk truffles are definitely gluten-free, and (last time I checked) so are the white chocolate truffles and the mint chocolate truffles.

I've used magnesium taurinate and magnesium taurate vitamins.  Didn't notice much of a difference when I used them.

More great tips, and a good excuse to shop at M&S and also buy more iced buns!   I wish we had an ASDA near us, as the few times we've been to one their gluten-free pasta range seemed very reasonably priced compared to other shops.  Thanks so much, @Russ H.
