Gluten Free Soy Free Cakes And Cupcakes

My fiance and I recently went gluten free after realizing that it was probably causing many of our medical issues. Surprise, surprise.....something is finally working! After neurological problems stretching out over more than a decade, I am starting to see some real improvement in my health......FAST! My mother is so excited that she overloaded my pantry with way more baking flours than a family of two could possibly use before they go bad.

I figured I would take advantage of this and start trying recipes.....I need cupcake recipes good enough that even the non-celiacs at our upcoming wedding will truly enjoy. I know it will be expensive to bake gluten free for a crowd, but I want to use this celebration to bring awareness to our families.....I think that several of them would benefit from going gluten free as well. We are keeping it casual and saving money in lots of other areas so I figure we can go a little more expensive here.

If you have a great cupcake recipe, I would love it if you posted it or private messaged it to me. I'm starting to get a bit of energy and I can't wait to get in the kitchen and start baking again. :)

It's a mix, but you can't go wrong with the King Arthur Flour Chocolate Cake Mix. Open Original Shared Link

It's gluten and soy free and honestly it's just as good as gluteny cake. The mix is expensive, but generous. It makes 24 cupcakes or two layers, so in the end it's the same price as the Betty Crocker mixes.

:rolleyes: You can refrigerate the gluten free flours you are going to use in a few months, and freeze the ones you will store for longer, and they will keep that way.

I would recommend you get one of the Bette Hagman gluten free cookbooks to keep on hand as a guide, because her gluten-free flour substitutions for cakes work well in regular recipes. And go over to Shauna's Gluten Free Girl blog and read up on the hows of doing gluten free baking.

You can also check and see if you, by any chance, live anywhere near a gluten free bakery by using The Google. Even if it is too far, you can always try a mail order to see what a good result is supposed to taste like.

You can test - bake smaller quantities of baked goods in the microwave using a cereal bowl, if you are not sure if you can eat a certain ingredient. Not all gluten free flours agree with all people.

I'm really looking for recipes from scratch instead of mixes, but I'm sure I will try that one when experimenting for a smaller family gathering.

I live in Dallas, so I am blessed to have a few bakeries close by that at least have a few gluten free baked goods. I tried a cupcake at Sprinkles here in town and I was less than excited.

Having said that, I really want something more interesting than just vanilla or chocolate. We do have a local restaurant run by a trained chef who is also a celiac. We haven't visited it (the Kozy Kitchen) yet, but I don't think that he will be an option for the wedding either. He charges $5.00 a slice for his basic cakes and I really want the entire wedding to be gluten free and delicious.....without breaking the bank. I have done some simple cake decorating before and I have a friend who is volunteering his time for barbecuing the meal. He does a lot of barbecue competitions on the weekends and I think the challenge excites him. I really don't think that creating the savory menu will be much of an issue, but I feel clueless about gluten-free baking, so I have picked up a few cook books to begin experimenting with.....

I will check out that blog, but what about specific recipes? You mentioned Bette Hagman, is there a specific recipe that is incredibly popular in your home. I have a lot of options try, but I was hoping for someone to give me a few ideas of the actual recipes they love.

Regardless, I am making a grocery list tonight and will try a few recipes this weekend. If they stink, they'll go to the trash, if they're pretty good we'll just have to take some of em to work because I really don't have freezer space right now and I need to continue losing weight as I heal. I'd like to be another 25-30 pounds lighter by September.

      The following two lists are very helpful for anyone who is gluten sensitive and needs to avoid gluten when shopping. It's very important to learn to read labels and understand sources of hidden gluten, and to know some general information about product labelling--for example in the USA if wheat is a possible allergen it must be declared on a product's ingredient label like this: Allergens: Wheat.

      Tammy, in the food industry, "gluten free" doesn't mean the same thing as "no gluten". As Scott explained, the FDA (Food and Drug Administration) allows food companies to use the "gluten-free" label as long as the product does not contain more than 20 ppm (parts per million) of gluten. This number is based on studies the FDA did years ago to determine the reaction threshold for those with celiac disease. And the 20 ppm figure works for the majority of celiacs. There are those who are more sensitive, however, who still react to that amount. There is another, stricter standard known as "Certified Gluten Free" which was developed by a third party organization known as GFCO which requires not more than 10 ppm of gluten. So, when you see "GFCO" or "Certified Gluten Free" labels on food items you know they are manufactured with a stricter standard concerning gluten content. Having said all that, even though you may read the disclaimer on a food item that says the spices may contain wheat, barley or rye (the gluten grains), you should be able to trust that the amount of gluten the spices may contain is so small it allows the total product to meet the requirements of gluten free or certified gluten free labeling. I hope this helps.

      As soon as I see gluten free I read the labels. I always find stuff that I cannot have on the products them selfs. Like spices, when the labels says  everything listed and then after like say garlic salt then the next thing is spices. When it says that that can contain wheat and other things I can’t have..

      While hypoglycemia isn't a direct, classic symptom of celiac disease, it's something that some individuals with well-managed celiac disease report, and there may be a few plausible explanations for why the two could be connected. The most common theory involves continued damage to the gut lining or nutrient deficiencies (like chromium or magnesium) that can impair the body's ability to regulate blood sugar effectively, even after gluten is removed. Another possibility is delayed stomach emptying (gastroparesis) or issues with the hormones that manage blood sugar release, like glucagon. Since your doctors are puzzled, it may be worth discussing these specific mechanisms with a gastroenterologist or endocrinologist. You are certainly not alone in experiencing this puzzling complication, and it highlights how celiac disease can have long-term metabolic effects beyond the digestive tract.

      Paracetamol, aka, acetaminophen (Tylenol) just does not do anything for me as far as pain relief. It does help with fevers, though.
