Bulk Bread Mix That Works Well In A Zojirushi

So Udi's bread in my new area costs almost $7 a loaf (compared to $3.50 before) and I'm thinking about pulling out my Zojirushi because we eat 3-4 loafs a week and it is really adding up. Does anyone have suggestions for bulk mixes (or economical recipes) that work well in a Zojirushi bread machine? I've notice my Zojirushi behaves differently than my old Breadman - my Breadman did a great job with Bette Hagman's recipes but not so much with the Zojirushi.

I don't care for Pamela's and all of the single serve box mixes around here cost as much as a loaf of Udi's...I'd like to a bulk mix or recipe for sliced bread that is easy and tasty for $3-4 per loaf that is mostly rice or potato based. Any suggestions are appreciated!

Annalise Roberts has a cookbook of recipes specifically for the Zojirushi bread machine:

Gluten-Free Baking Classics For The Bread Machine.

You can probably find a used one on-line.

Many of her recipes also appear on www.foodphilosopher.com.

You can also try www.betterbatter.org, which has a ton of very good recipes, and they sell a very nice gluten-free flour mix that is less expensive than most, especially if you buy it in bulk (they will ship it to you in 5-pound boxes, which is very manageable, and they're easy to store).

I go back and forth between the betterbatter recipes and Annalise Roberts' recipes (sometimes I just use the betterbatter flour in the Annalise Roberts recipe!).

Really, the only thing the bread mixes add is salt,sugar and a yeast packet. That's very few ingredients, and not a lot of extra convenience for the high price of a specialty mix.

You can also save a lot of $ if you buy yeast in bulk, from Costco or Sam's Club, and just measure it out with a teaspoon. Those little packets literally triple or quadruple the price.

I didn't realize she had a cookbook for the Zojirushi - I'll check it out. I am rather busy these days and don't have access to a lot of gluten-free flours (I'm pretty remote and it's a trip to get them) so I am looking for something quasi pre-made - I didn't think about something with betterbatter. I have used it for several years and really like it.

      Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.

      Many years ago yes, after eating and going to bed, apparently my esophagus filled with food that my body rejected, the esophagus would lay against the Heart sack (pericardium?) and the heart would respond by becoming arrhythmic. That went away with the strict diet.

      I was commenting on the report saying it did not mention migraines! Yes it does last paragraph says have not seen any evidence that Celiac cause migraines! I thought this was about truth?

      It has been known for some years that celiacs suffer from migraines at a higher rate than the general populatation. It is an established symptom.
