I just need to vent about this experience. I normally wouldn't complain on the board, I would complain to my family. However, my family is involved!!

My mom is getting married tomorrow! :) We had the rehersal dinner tonight, at of all places, an Italian restaurant. Now I can normally get away with something simple in these situations. Something such as a buger no bun. Well, not tonight! I was served some sort of processed something or another. It smelled like seafood and looked like a pizza burger. I asked if it was 100% pure beef or if there were fillers. I was looked at like they had just witnessed alliens landing. :o The waitress brought out the manager. He said he could go print a list of ingredients. I thought... PERFECT! I could see what was in there and approve it myself. He brought back a piece of paper that had Nutrition Facts and told me it was pure beef because it didn't list anything. <_< Now I only took 2 bites of the burger before I realized it was wrong and then didn't eat anymore. But as we all know, one crumb is all it takes!

This is the true problem..... :(

My mom is sleeping here tonight. She is not back from the dinner yet. I had to leave early as it is a 45 minute drive and my stomach was in knots. I don't want her to feel bad!!! She really tried for me. I feel like a heal because I stink and I am miserable so there is no way of hiding it. I am her matron of honor tomorrow! I somehow have to pull it together starting at 8am for hair appts through who knows when tomorrow night. We are having a bonfire here after the reception is over at 8:30pm. (she is getting remarried so it is not a traditional wedding) The good thing is that I will be outside all afternoon and evening. That way the wind can blow it away! :rolleyes:

Why does this always happen at the most inconvenient times? :angry:

I totally know what you mean! Anytime I ask questions I get all the weird looks. Like when I ask if they use a dedicated frier for their fries. I hope you feel better soon.

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.

      This is a solid, well-reasoned approach. You’re right that “koji” by itself doesn’t indicate gluten status, and the risk really does come down to which grain is used to culture it. The fact that you directly contacted Eden Foods and received a clear statement that their koji is made from rice only, with no wheat or barley, is meaningful due diligence—especially since Eden has a long-standing reputation for transparency. While the lack of gluten labeling can understandably give pause, manufacturer confirmation like this is often what people rely on for traditionally fermented products. As always, trusting your body after trying it is reasonable, but based on the information you gathered, your conclusion makes sense.
