Because of my corn intolerance all breads have been off limits to me. But after taking two day's worth of corn filled antibiotics and NOT reacting to them I knew that the very first thing I would try was some Udi's. I hadn't planned on doing this until October, but a tourist came through and we got to talking. She has celiac too, and she had never tried Udi's before. She went down to the healthfood store and bought a loaf and brought it back here to the shop. She had two slices and loved it. I finally broke down and had a slice myself.

That was at two o'clock. If I have no psoriasis on my hands by ten o'clock tonight, I'll know I'm in the clear. It only takes eight hours for me. And if everything looks good, I'm going to have another slice tomorrow because she left the loaf here!

It's amazing how good it tasted. I really like Udi's multi-grain anyway, but after not having any bread for over a year, it was absolute HEAVEN!! If I could live on the stuff I would. I'm doing the happy dance right now! Only a celiac could understand the joy of eating a slice of bread.

(And if I do break out tonight, I'll give the loaf back to her tomorrow. She's going to be in town for another week or two.)

But I sure hope I can keep it. :)

Yay!

Take it slow. Put the loaf in the freezer soon or it gets moldy. I have made my sandwich with the frozen bread andf then it thaws by lunch.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.
