  2. Is standard ground pepper OK? If I go into a random restaraunt should I be wary of the pepper in the pepper shaker? If pepper is a concern, what type should I buy? I'm on a spice witch-hunt... Thanks!
  3. I had a similar experience recently. I was at the grocery store and I saw a beautiful tray of hot yummy lemon peppercorn chicken. I asked the cook about the gluten, they said it was gluten-free. Regardless, I asked if I could check the ingredients list on the spice they used... the list looked OK to me, so I promptly purchased and consumed the chicken whole...
  4. Depression/ brain fog come and go! As the antibodies stay in the system for at least 1 year I think the body continues to react to them and it comes in waves. Hang in there!

I asked the same question on this forum and was told by several others it's the "last symptom to go away." I've read it takes 1-2 years to completely recover!   6. I've been told bloodwork can show up negative and one can still have celiac's. Or it can be potentially misinterpreted: My blood work was classified as "negative" by two doctors, and then a third doctor said my elevated Antigliadin IgG (only) meant positive for celiac's. The bigger problem for me anyway was the fact that certain symptoms (especially brain fog, malaise, etc. in my case) can be quite tenacious.   10. You said you had grilled cheese before you got sick... perhaps it is actually casein intolerance? From what I understand a lot of celiacs who are have immune reactions to gluten also have reactions to casein (the protein in dairy products). In fact Enterolab tests casein automatically when you order the celiac panel. Just a thought! Christian
  11. It was only a couple weeks after I went gluten-free that I had terrible horrible intestinal pains. They occurred after every time I ate for about three weeks (even though I was gluten-free), then went away. I also think it's true the body reacts to gluten in a different way once gluten has been removed for a while: if you've removed it and then added it here...

  13. I have used Stevia to cook in the past, it is doable but in my opinion it doesn't taste as good baked as it does straight. Honey is a great tasting substitute in many recipes if you can have it. I'm interested to see what you discover as I am also trying to avoid refined sugar. I seem to react to foods that have any "sugar" in it, but not so much to foods...
  14. Elizabeth, Not sure about the thyroid issue but as Carla articulated an endoscopy can definitely miss celiac disease damage. Go to Enterolab if you need test results: www.enterolab.com .   15. I think many of us celiacs are made to feel like hypochondriacs by the docs at some point. Don't let the looks the docs give you bother you too much - you are the patient, you largely know what's wrong with you. Good luck with all the crazyness!
  16. I'm not a dietician, but 8 x 8 oz glasses of water is what they say normal full water intake should be which I guess is 64 oz (vs the 85 oz + 1 bottle of water you drank yesterday). But really, it shouldn't matter how much water you drink as long as you are intaking enough sodium, potassium, etc.
  17. Just a comment = some soy milk has gluten in it. I believe Silk brand is safe. Also, brocolli causes lots of gas b/c it feeds the good bactery w/ all that fibre. Good luck, things will improve!
  18. Enterolab is very definitive that any number at 10 or above means you are having an auto-immune reaction to gluten and it should be removed from the diet. Christian
