It should show up in the basic test, though the complete test includes not only the gene test but casein intolerance as well (which many celiacs seem to show up positive for). Most condiments and canned goods have gluten, yes, but it's case by case. How long does it take to notice a difference? That's a darn good question, and the answer is complicated... -

Yeah, my girlfriend (who also was just diagnosed Celiac, ironically!) agrees it's probably just a legal statement to cover their bums. But it still really makes me nervous! I've heard Arrowhead Mills is a respectable brand for gluten-free cereals (puffed rice, maple buckwheat flakes, etc.) and I've been eating them every day. I've actually had minor ecsema on my hands my whole life and was always aware that certain food caused it (namely for me, vanilla, maple, honey, chocolate, peanut butter, etc. maybe sugar too?). When I recently was struck down with the celiac saga starting in April, my hands got really bad! Since going gluten-free 6 weeks ago, my skin is improving again.... -

I'm a newbie at this but I've heard processed chocolate is often off limits b/c of cross contamination while "pure" chocolate is OK. I know in my own case chocolate still disrupts the fragile digestive track and I avoid it! Perhaps another poster has details? -

I'm a newbie at this too but I've read that you may able to reintroduce dairy after 8-12 months , when the villi have had a chance to heal up. (The villi produce the enzyme necessary to digest dairy, so if they are messed up, dairy intolerance can result) -

Thanks for clarifying for us! As a newbie I was just staying away from the word as another "to be avoided." So as long as it JUST says "Maltodextrin" (with no mention to wheat or rye) on a form of US packaging it's OK, yes? Thanks again! -

Maltodextrin CAN be made from barley or other gluten containing grains (it usually is in fact in this country), but in some cases it is not. In general I think you have to avoid it. I'm not an expert but I'd say you could probably trust gluten-free chips if they are labelled as such... if you're not sure, it's usually easy to contact the company. -

Nate, Welcome! I would recommend visiting www.enterolab.com ; a lot of people on this site have been evaluated by this lab, which specializes in gluten intolerance.
