Have tried several gluten free breads and so far gluten free pantry seem to be the best. In testure and taste and actually looking like regular bread. I was not much of a bread eater before, and not I still don't eat that much, I have made the bread in a machine and when it is cooled I slice it then place in freezer bags. I leave out a few slices. Yes, toast seems to be the best and I also liked it made as french toast, as a sandwhich it did seem to crumble a bit, but I have not found another that tasted better. The french bread one I did not like. Bob's red mill came out gooey even in the bread machine or oven, have tried both. There was another brand not sure the name but that tasted aweful as well. With the cost of the breads I am not going to try different kinds every day. When I bought these it was far and few between and tried again a couple weeks later. Good luck in finding a better bread and if you do, let us know.

Unless you have a problem with an ingredient in the quacker oat rice cakes, you should be ok. Rice cakes are what you would want. Read the ingredients and check labels on everything.

I am in western NY and we are starting to get snow and over night about 3 to 6 inches, tomorrow during the day another 6 to 12 inches and possibly over night tomorrow night another 3 to 6. We are getting a Nor"easter. Lucky us. Last time this happened and we were ready for it we got nothiing. Not so ready so probably will get dumped upon. I like snow on Christmas eve, and Christmas morning. Then it can all gl away.

I made chocolate chip cookies for my boys and peanut butter cookies for me. The boys asked for sugar cookies. I told each of them to find me a gluten free sugar cookie. One did and this is what it was. Didn't take time at all to make, bake, cool and frost. They taste great, plain or frosted.
1 cup rice flour
1/2 cup tapioca flour
1 cup cornstarch
1 teaspoon baking powder
2 1/2 teaspoons xanthan gum
1 teaspoon salt
1 cup sugar
1 cup Butter Flavor Crisco
1 egg or 1/4 cup liquid egg substitute
2 teaspoons vanilla
1/4 cup potato starch, for kneading
1. Preheat oven to 350 degrees.Have on hand 2 ungreased cookie sheets.
2. In a small bowl, whish together the flour mix, baking powder, xanthan gum, and salt. Set aside.
3. In the bowl of your mixer, cream sugar and crisco. Beat in the egg and vanilla. Add the dry ingredients, mixing enough to combine. The dough will be a soft ball. With your hands, knead in enough of the potato starch to make the dough easy to handle and roll out.
4. Using about half at a time, place a piece of plastic wrap over the ball and roll out to about 1/8 inch thickness.
5. Cut into desired shapes and place on pan.
6. Decorate with coloured sugars before baking or use frosting to decorate after baking.
7. (With this dough, you can use all the scraps.) Just scrape them together and roll out again. They will not get tough.
8. Bake for about 13 minutes. Cool very slightly before removing from the pan.
Good luck

A few weeks ago I felt fine. Went over to my mother's to help her with something and as soon as I walked in the door I asked wht the smell was. She was cooking a roast with a ton of seasonings. She opened the oven door I immediately started feeling sick. She thought it was me cause I have never reacted that way. I went home and just being outside breathing in the cool air and then laid down I felt a lot better. I called her to ask what seasonings and she said there were a lot and she couldn't remember.
I have never felt that way before even from my own cooking but then again I cook mostly gluten free. All gluten free for me but cook gluten for the rest of the family. Everything is seperated. So I believe it is possible to have a reaction just from the smell.

I buy it at Wegmans and it is about $10, but you don't use much. I have a small bag and it has lasted over a year. I keep it in an air tight container.

I have gotten gluten stuff. I was always taught to be polite. I have instilled that into my kids and neices and nephews. Even if you got two of the same thing. Take it and say Thank you. But being gluten free is a hard thing. Not every one knows or remembers for that matter. I am the only one in my house gluten free. SO if it is something I can not have my hubby or kids can. They certainly will enjoy it.

Hi, when I saw that recipe on the internet or tv can't remember which, I have only made those since. I have done it with only one egg. Does two eggs make a difference? Also I use only Jif peanut butter. I grew up on it and seem to only like that.

Thank you for your ideas. I have never made quiche before but there is always a first time. If it turns out well I may make it for Christmas for the family. Kids are always up for food. Thanks again!

I have found that Bob Red Mill bread and other products have never come out for me and I bake quite a bit. So not sure maybe like someone said aboutt he altitude or weather.

It sounds like with the cows milk she is having the reactions. Maybe you need to try rice milk or soy milk. You could always ask the pediatrician. After being diagnosed with celiac and going gluten free to help recover most people have to go off dairy. It was about a year after I went gluten free that I had problems with dairy and I went off it for about 6 months before re-introducing it back into my diet. But it wasn't everything dairy, just milk and cheeses. I did fine with ice cream (gluten free of course) and yogurt. Change your childs milk, if any questions ask the doctor, hoepfully they will be able to help.

My oldest son went many years physical after physical and was never diagnosed until he was almost 17. He ate like a typical teenager. Then he got sick. He was vominting everyday for about a month and we thought he had some abdonimal thing. THe doctors said it was viral and nothing could be done. After the month, my and my son was vominting he said it burned, I called the doctors again they said he had to go to the hospital. She called ahead to get some tests ordered and we found out 9pm on a Saturday night that his level was over 600.
If your levels are a little high, it could just be out of the normal range of 80 to 120. A little high could mean just about anything. They usually say drink more water and watch your carb intake as well as your sugar intake. So ask questions like that, should I drink more water, eat less carbs. From everything else you are saying you are doing everything right. 6 months is not unusually to be rechecked. The rest of my children are checked yearly. My oldest is the only one with juvenile diabetes and after 3 years (and many months after he was hospitalized) of me asking him to be tested for celiac one doctor finally did it. I wouldn't worry. You can always ask to be seen sooner if that would help you. Most doctors are accomodating.
Good luck with whatever you find out.

I use to make stuffed peppers for CHristmas Eve and Lasagna for Christmas day. I am from a Italian background. With prices of everything we now have pizza for Christmas eve, just easier with working and everything else and I still make Lasagna for christmas dinner. If it is at my house then I have everyone bring something and I make them a dish and myself something. Always have snacks for myself cause they will have cookies. This year we are going to our nephews home. Will have to find out the menu so I can plan for myself accordingly. I don't usually carry my own food but try to eat what I can that is safe for me.

Hi Donna, I do medical transcription and letter dictation but as part of my job. I work in a clinic with a couple of doctors and counselors. I do dictation for both. I like the dictation part, but with phones, clients and everything else in an office it is hard to concentrate on doing that job and not have distractions. I have thought about doing this kind of work outside of work at home but everytime I think I want to try I work more hours. So I haven't pursued it. I wish you luck. Some people like it or they don't. I hope it works for you.

I use Tinkyada all the time and cook it like I am cooking regular pasta and keep stiring and checking it. Also when rinsing it use cold water, that takes the sliminess off. I am from an Italian background and love pasta. If it were up to me I could eat pasta everyday. So many different things to make and it all is so good. Makes me think I am making soup with the fettucini noodles. Good luck with future cookings.

I have always made dinner at my home every year since moving out on my own. Married with kids. Diagnosed just about two years ago and this would be the second year that the turkey was made without stuffing which the family would rather have, stuffing made on stove, made baked beans, corn, mashed potatoes, all of which except for stuffing is gluten-free. Made a Srar Lee pie for the family and made a perfect pie crust and over the fall when apples first came out peeled, sliced and made up freezer bags of apple mixes for apple pies. Made one gluten-free and it tassted great. Even attempted the gluten-free bisciuts this year, not too bad. Hope others had a great day. Went shopping this morning......Should have stayed in bed where it was warm. Have a nice Holiday season Everyone!

I was on Tompamax once for migraine control and it made me feel like a zombie. I have been on several medications for migraine control and now just started Lyrica. But for the peripherial neuropathy I am on Nuerontin. That seems to help. Also the Lyrica is made for PN and pain from shingles, but a lot of medications are used for pain control for different reasons. Talk to your doctor and see if there is something else. There is always something new and different that may help. Good luck.

One of our natural food stores did a giveaway that a friend of mine won a bag full of food. The only thing that was gluten free was the Erewhon brown rice cereal with mixed berries that she brought in and gave to me. I just opened it and eating it now for breakfast. I don't care much for the berries part of it. I will have to try the others that are plain. I was wondering what it would taste like and then this morning I found this thread. Coinincidential?????

Where I live in NY State, we have Wegmans and Sauders where you can get tapico starch. We also have a GNC General nutrition Center, not sure what they have as I don't shop there and also a MOther Nature's store, same there, I dont shop there to know what they have. Good luck. Not sure if you can substitute something else for that or not. Sorry

Because my B12 was so low the doctor put me on a shot that I take every 4 weeks. May sting a little to do it but easier to remember than a pill everyday. As
I am on many of those that it looks like I own a pharmacy.

I went through weeks of sharp burning stabbing pain and was told it was a peptic ulcer. They gave me meds for that I told them the meds were not working. So I had the ultrasound done and it showed nothing, no gall stones. Next test after many blood tests was the HIDA scan. That showed that my gall bladder was working 12.8%. I asked "out of 100%" and was told yes. Then I was told to go on a low fat diet and it was my choice whether to have it out or not. Well, that was a no brainer as I could eat low fat for the rest of my life and be in pain off and on OR have it out. It came out 2 weeks later and I have been fine since. This was also when I had the endo done and was told a biopsy was done cause the doctor didn't like the looks of the small intestine, and I found out after all these tests that I had Celiac. I had no other syptoms what so ever. SO all of this news was a shock to me. Went from thought of being healthy, nothing wrong, to being told peptic ulcer which wasn't the case at all to gall bladder disease and in those findings with other tests of the Celiac. So I went gluten free and now when I slip up, most cases not knowing it I pay for it dearly.
Gluten Has Now Affected My Marriage
in Coping with Celiac Disease
Posted
MrMark, I have only been diagnosed with Celiac for close to two years. I am in my second marriage and have four boys. I love to bake and still do. I bake gluten foods for the rest of the family and gluten free foods, desserts and such for me and when I make a lot so I can freeze some the rest of the family shares in that as well. I feel left out when I make them brownies, but I know they enjoy eating them, where mine are gluten free. A lot of people on this forum switched the whole house to gluten free. We are on a tight budget as is and when I do make meals gluten free, a lot of the time I make two seperate dishes so I can have te same as everyone else. I am a big fan of pasta, italian background and I am not going to make it just for them and go eat veggies or something. So yes here we have two dishes, gluten and non gluten. It takes a bit more time to prepare two dishes rather than one. She can still make all those baked goods, just change the flours. It takes a little getting use to of what to get but now it has become no big deal. I made the toll house cookie recipe with butterscitch chips and gluten free all purpose flour, and everyone loved them. I hope she will try to switch things so you can still enjoy those baked goods show her you still love her.
