  3. Made fish tacos for the first time ever - lightly (rice) floured cubes of ahi tuna browned in a skillet with olive oil, then served with tomatoes, guacamole, white shredded cheese and cole slaw in warmed corn tortillas. Pretty awesome!

  22. My son was diagnosed at age 10 (he is now 17). Most days for lunch he packs a ZonePerfect bar. Not all the versions are gluten-free, but several are, including Double Dark Chocolate, Chocolate Almond Raisin, and Fudge Graham (despite the name). Supplements with chips, snack pack pudding, applesauce, and fresh veggies or fruit.
