  1. Breadfruit is pretty common on most tropical islands. I have a few trees here in Kona. No gluten and nothing to do with bread. If you remember Mutiny on the Bounty, Capt. Bligh was sent to Tahiti to get breadfruit to feed slaves in Jamaica which he eventually did. It is illegal to ship the fruit from Hawaii but you might be able to get it from Fla. Not...
  2. My kids are in their 30's and have not been tested but I can say that vomiting was my first symptom that something was wrong. It happened almost daily for 6 months until I went gluten-free. Even if I didnt eat or tried to drink coffee, I'd have dry heaves. I'm sure there has to be a connection with celiac and throwing-up for no apparent reason. Ken
  3. The flavoring chemicals in coffee can be pretty scary even when gluten free. I grow kona coffee but sometimes like flavored ones so I use dry orange peel or cinnamon stick or even vanilla bean and grind it with my beans. Dry orange peel ground with coffee beans is really great!

ARCHIVED How Do We Make This Better?

When I hear stories like it took them 22 years to diagnose you, I have to feel lucky. It took them only 6 months to figure me out -- 3 years ago. Although there is still an appalling lack of medical community knowledge, I can't help but think it's getting better thanks to the efforts of a few people like your father and the doctor he met as well as Scott...
  5. Happened again! Something everyone has to remember if visiting a department store here. Went into the basement food section of Tobu departmen store in Ikebukuro Tokyo which is a great store... and I should know better. There must be 10 bakeries and even more tenpura makers there. as I headed to the spice section I smelled the wheat and bread in the air...
  6. Hi, I'm still working on those guidelines for chefs in Hawaii but mostly on the Big Island and to a lesser extent on Oahu. With luck some of this will rub off on the other islands, especially Kauai. Merrimans will open there later this year and Peter Merriman is very aware of the issue. The last time I was on Kauai the only thing I could find to eat was...
  7. I used to love Thai food but have become very paranoid about much of it. Asked the waiter to check if there was any flour in the curries and he took the flower off the table!. Also Ive seen rice papers which are not 100% rice. Soy sauce is tricky. Is the lable in English or were they translating for you? I also worry abour cross contamination in thai...

  9. talked to a lot of italian food companies at the show here in tokyo. its amazing how familiar they are with celiac and how many products they make. looking forward to seeing bunches there. just have to save so i can ship a bunch home!
  10. We'll be there all of July too. I was worried until the fourm members filled me in on some of the possibilities and that site that gfp sent you. Seems like there are many more options there than other places I've been. gluten-free pasta is rather common too. Just let people know aheah of time -- somewhere there is a list of gluten-free restaurants by...
  11. Hi, I live in Kona and dont get to Kauai too often but there is a Lotus Blossom Cafe which had some gluten-free items on the menu last year. There are also a number of farmers markets and smoothie stands with fresh produce. Good luck and have a great trip Ken
  12. Yes, thanks much for posting it. I have a feeling there are many more things out there that should be recalled! ken
  13. Thought you would like this stuff. I bought a ton to bring home and play with. The kabocha flakes and purple sweet potato flakes look like they would make a great breading for something. Have another 2 weeks to explore and see what else I can come up with here. take care
  14. Hi, Didn't find a terryaki sauce. I tend to make my own with the san-j soy sauce, sugar and some fresh citrus. Something which I cant remember but if you remind me when I get back in a few weeks I'll check my notes at home. I guess it depends on what you like to eat. I used to enjoy the grilled fish and thanks to some creative chefs can do so again. ...
  15. Hi, Finally compiled the pictures from the food show in Tokyo. I added a section to my web site --See my profile for the link. It shows many pictures and some translations of different foods that can be found in a health food and department stores. Also pictures of gluten-free foods from Venezuela and Thailand as well as a link for gluten-free pasta...
  16. Hi, I make them fairly often as my granddaughter loves them too. (same one in my picture<G>) We use soba / buckwheat flour although I will coat my hands and spatzle maker with quinoa flour. Dont really know why but the soba is very sticky and it seems to work better. The machine is just a little thing I picked up which holds a hand full of dough where...
  17. We have 5 types of corn tortillas in Hawaii and only 1 of them is 100% corn. The rest are mixed with wheat. True of many of the chips too. It's really a pain to eat out sometimes without asking to check the labels. Hope your feeling better soon Ken
  18. Glad bouzoukia was great and hope your feeling better tomorrow. Your English is great and spelling better than mine! Just feel better soon! ken
  19. Well dont be surprised if we show up in Athens one of these days soon! Ever since I was a small boy I always wanted to go to Greece but it is one of the few countries I've not visited yet. I know within the next few years we will be there! By that time I hope you know many gluten free places to eat <G> Also to have retsina <G> hope you had...
  20. for me, going on 2 years gluten-free, it was strange cross contamination issues like licking envelops. Paying bills was making me really sick again! There are other non-food issues as well. I cant walk into other kitchens if they've been baking bread or the bakery depts. of grocery stores etc. Just too much in the air. There are also so many hidden...
  21. Hi Meline I think already you know having no gluten is healthy for you no matter what doctor says. Having it as an offical diagnoses would be nice and if this doctor will say that based on biopsy then its good. You shoudl not stay in pain and with trouble more thana you have too. NO matter what you know what you have to do to feel good. Only ...
  22. Thanks much Ursa, I know that in the US there are advantages to being "officially" diagnosed. Tax and food cost deductions mainly. Since we are all so different, it is interesting to see how things work. Visiting with man Italian companies here in Japan, everyone knew about celiac but in the US very few do. I suspect even fewer in Greece and virtually...
  23. i'm curious now, if it takes 2 years or less for our vili to heal, wouldnt a biopsy show some damage even after a short gluten-free period? I dont know how the medical stuff works. When I had my biopsy almost 2 years ago they really didnt explain the process well. ken
  24. the conections between gluten and all these other problems seem to be cause to promote gluten-free diets as something for everyone and not just celiacs.
  25. Oh I understand -- just wish it was not that way.
