I agree the dairy. I've only been gluten-free for about a month now and I've noticed some strong reactions to pure dairy and butter. The reaction is less when I use skim milk and margarine. I have heard that the older you are, the longer it takes to heal. I'm 45 and that certainly seems to be the case with me. Some symptoms went away immediately while others... -
My GI felt that the blood work and my reaction to the gluten-free diet were sufficient for his diagnosis. Fine by me.

That's possible. My GI has been very good so far and seems to really understand Celiac, but I have to keep reminding him that I no longer have a gall bladder. -

Thanks Laura, I think you are correct. I'm definitely not 100% and while I feel much better each little "incident" like this certainly throws me off balance. You're right, I have a long way to go - I just never expected the reversals like this to occur. It's a lot to deal with! -

Yep, I think I need to let folks know. I'm just trying to figure out the right words. I think my best course of action with the biopsy is to talk it over with the doc. It would be nice to know the extent of the damage and how long before the villi recover - my stomach's in a very delicate state right now and I get terrible heartburn from even the mildest...
