  1. I agree the dairy. I've only been gluten-free for about a month now and I've noticed some strong reactions to pure dairy and butter. The reaction is less when I use skim milk and margarine.   2. My GI felt that the blood work and my reaction to the gluten-free diet were sufficient for his diagnosis. Fine by me.
  3. That's possible. My GI has been very good so far and seems to really understand Celiac, but I have to keep reminding him that I no longer have a gall bladder.

  11. Thanks Laura, I think you are correct. I'm definitely not 100% and while I feel much better each little "incident" like this certainly throws me off balance. You're right, I have a long way to go - I just never expected the reversals like this to occur. It's a lot to deal with!

    Can't go wrong with fresh fruits and vegetables (apples, carrots, etc.) Add some protein in the form of cheese or peanut butter and you'll be set.
  21. I hasten to point put that only the "Honey Rice" variety of Puffins cereal is gluten free. Some stores accidentally put all varieties in the gluten-free section.

I've had stomach problems as long as I can remember but it was only after I felt that I wasn't getting better after Gallbladder surgery that I've been diagnosed with Celiac Disease (and it took over a year before the doctor thought to test for it).
