  3. Brownies: easy to bake. Use any gluten-free brownie recipe. Substitute Smart Balance margarine (vegan) for the butter in the recipe, and use egg replacer for the eggs. They should come out fine.   10. I eat Trader Joe's stuff all the time and have never had a problem I could feel on my insides. But, even more objective data is that I just had my annual celiac serologies (blood tests) checked, and everything came back negative, so I say Trader Joes is safe for me. What if you sprayed muffin tins with vegetable spray, then pushed a spring roll wrapper into the muffin tin and baked it to make a little shell cup--you could then fill it with anything: scrambled eggs and ham for a brunch, pudding with sprinkles for dessert, cooked chicken and black beans with salsa for a mini taco salad--that would be a great party appetizer...

It turns out fine in my machine (I have a Zojirushi machine), but I bet you need to pick a cycle that bakes a bit longer. Still, I do get a little cave in on some loaves.   17. You found pan de yucca!!!!???!! I had it in Colombia when I was a foreign exchange student in the '70's and I loved it and I hadn't had it since then--it's a staple there--yucca is.   19. For car trips, I take beef jerky--read labels and avoid the ones with soy sauce--Bridgford Original is OK, and I've found some Kroger brand ones that are OK. I also take rice cakes and peanut butter, nuts, trail mix, dried apricots, Lara Bars, string cheese, salami, rice crackers. These work well for hikes, for camping, and in my desk at work, too...
