  1. I feel every bit as miserable, frustrated, tired etc. about all this as you. I won't whine here since I do plenty of that here and there from time to time. Since going gluten-free 5 yrs ago I have been dx with adult onset type 1 diabetes and 26 food allergies. Yes, I totally get that everything revolves around food! and dishes! You may not be in the...
  2. The starter culture for miso can be grown on barley and when it is that barley is not considered an ingredient since it is later separated from the part that is put into the miso product. If you go to South River Miso Co.'s website they have a great explanation with photos of the miso making process. I know some disagree with me, but that part of the process...
  3. Yes good idea to test fasting BG but also wake yourself up and test at nigh when you feel like that. I was going mildly low in the early a.m. regularly without insulin. I finally got organized, put a meter by my bed and forced myself to wake up, pry my eyes open and test and that's how I found out. I also found that by my usual wake-up time my body corrected...
  4. It's tricky with the nuts. You'll have to ask your allergist. Some people with nut allergies also have trouble with various seeds and see oils and coconut. My reaction was to almonds. I also react to flax. I seemed to be ok with other nuts and no pos. test but I am a little nervous about trying any nuts again. I did test pos, to cashews and did react...
  5. Your numbers look good Some foods can take a bit to show up in blood sugar so it is wise to check both 1 and 2 hrs as you did. The treatment for hypoglycemia is dietary modification, but your numbers do not indicate hypos. I feel weak, shakey, can't think well and such when I am too low. Tired/fatigue is usually from high BG for me. 83 is considered...
  6. I have to agree with bartfull. I've learned the hard way. I have an allergy to almonds and may be alleric to other nuts and seeds as well. Almond I avoided after testing pos. to after I reported mild symptoms. I avoided a LONG time then reintroduced them and seemed fine and then all of a sudden it burned my mouth, tongue, all the way down to my stomach. prior...
  7. Food for thought! no joke. Makes me wonder again what it is in the tea that is bothering me. I drink only black or green but am corn-allergic and the other chemicals in the bags or the hemp might also be a problem. Back to loose to see! I use to buy Fortnum and Mason but the quality has significantly declined, at least the recent purchase from William's Sonoma...
  8. Fasting blood sugar, which is commonly the standard screening for dx, is not a good measure. I could still pass a fasting BG test at time of dx and probably could now because my fasting without insulin can still be non-diabetic around 85-95. I can be at 200 or more within minutes of eating any fast acting carb without insulin and yet can go slightly low as...
  9. There are a number of folks with adult onset autoimmune T1, esp. w/ more testing options, education and research done now. Adult onset is called T 1.5 or LADA, stands for Latent Autoimmune Diabetes in Adults. It is becomeing more known but still many docs do not know about it. My primary didn't. I had to ask for the tests. There are T2's who eventually become...
  10. I use coconut aminos as sort of a soy sauce replacement. It is sweeter and slightly thicker than the soy sauce that most Americans use so it is not a direct spoon per spoon, cup per cup replacement.
  11. I often start with ground beef in a skillet and sautee with onion and various veggies, depending on what I've got on hand and seasoning/herbs to match: cabbage, or summer squashes(zucchini), sometimes thin sliced carrot, italian herbs or crazy salt, then don't drain the grease unless it is excessive and add in cold leftover rice and heat through, not exactly...
  12. I handle many gluteny foods and do fine, I just don't work with flour. Just wash hands a lot. I serve, organize all my church potlucks BBQ's and events that involve food and am fine so long as I keep my food away from the rest and wash hands well. You also have to take the usual precautions when using their equipment for making you food-no using their non...
  13. What kind of symptoms are you experiencing?
  14. TKS for the info. Pauliewog. I'll keep that in mind.
  15. Thanks for the info.! I've been wondering and yes, GoPan is the one I had in mind. We were so excited at first, until we found gluten listed in the ingredients. My DH is still debating on buying one for me when he goes this summer but we wondered if the cost was worth it, for what we surmised as limited function/recipe/variation if any. What do you think...
  16. Beware of rice bread! This is a new issue since my past posts. It has become popular in the past couple of years, some really cool breadmakers for it and bakeries making it, but it contains gluten added back in as an ingredient My understanding is that their point in making it is not to avoid wheat/gluten so much as to utilize their traditional staple crop...
  17. If you do a search on the forum for Japan(type it in the search box) you'll see our responses to other similar posts as well as reports from those of us after getting back from our trips. Plenty of posts from me here. Long story short, when I went last time I stayed at MIL's house and packed my bentos every a.m. before heading out for the day. The only time...
  18. I have a 14 year old who does not have these issues but has eating habits that are similar and that is a challenge for this mom. He has gotten that attitude that I am a restuarant that will cater to his whims and has gotten fussy. He hardly wants to eat B and L and just wants junk. But I feel for your son, maybe he is feeling like I am right now, I...
  19. One potential problem is overbeating eggs. This can cause even non-gluten-free things to rise and fall. I find with some yeast bread that they are more stable if the are alllowed a slower rise. I have one recipe that if I heat the oven on low a few min. and turn it off and let the buns rise in the oven, they rise too fast and become unstable. If I set...
  20. Oh, I am SO with you on that Julie! This scenario happens a lot with me too. Because of the hypo issue you mentioned, and I take Novolog, I wait 'till the food is on the table, whether it is at home or the restaurant, then I do my thing. Sometimes I will wait 10 min. after that for the insulin to start working so that I get better coverage and numbers...
  21. I've had some success with converting muffin and quick bread recipes-like banana bread. With the quick breads, I sub in the gluten-free flour blend and add Xanthan gum according to the package direction for the type of baked good I made. I've converted a zucchini bread and a sweet potato bread recipe successfully. For my muffins I started with recipes...
  22. Thanks, that's interesting. I had read about leaky gut a bit but not the rest. I haven't been up to fighting the battle again or researching lately. I thought leaky gut fit me well but my endoscopy and colonoscopy and biopsies showed nice healthy tissue so I don't get it. My GI doc was younger and a Harvard grad and up on current issues and celiac disease...
  23. Good luck to you in getting some back. I tried really hard for 2 years but I still have the same number off the menu, just slight variation from the original list. I become allergic to frequently eaten food too. I got pumpkin back-only once in 4 days but so far so good for a few months now. Reintroduction of brussel sprouts was once in 4 days also but I had...
  24. My sis has a baby due any day now, otherwise I would have had her come here and made a meal for the family myself at home. I'm sorry you don't eat out Bubba's Mom but it helps a little to hear that.
  25. I usually wouldn't pick Mother's Day either but this is the only chance we hadto get the family together and we had to go out of town to meet up with family, But really the end result wasn't much different from recent experiences at other places during other times. The whole ballon issue is what throws me off and leaves me less prepared for other things-whay...
