  1. The easiest way to dry herbs is the old fashion way. I do it every fall before the first frost. I cut the herb stalks and tie several together with string and hang them from the side of one of my cupboards. Within a week or two they're dry enough. I've tried other methods, but simply letting them air dry seems to retain the most flavor. You can take...
  2. Some fruits like melons have a high glycemic index. That means they contain a high amount of sugars that metabolise very fast. The fact that you're eating one food at a time is a problem with fruits or anything with a higher sugar content. You're literally getting a big push of sugar that can cause nausea and digestive problems. Were you eating the fruit...
  3. I have to agree with this. The worst of my problems before and after going gluten-free were caused by malnutrition and low blood volumn. Though I would have killed for just tingling. I got white hot needles stabbing in to my arms and legs instead of tingling You also could be describing allergic reactions. Keep in mind that it's not uncommon to...
  4. Please believe when I say EVERYTHING, I mean everything. I've removed entire catagories of foods from my diet, I've added different supplements, herbs, done all of the above in combination, etc etc etc. I've had three years of experimentation. Nothing makes a difference. Herbs are a relative thing since most of those a herbalist would want me to use I...
  5. This may sound like an odd suggestion but it helped me quite a bit early on when I would get frustrated with my diet. In addition to avoiding gluten I avoid most things in the daisy family as I invariably am allergic to them. I also limit my nightshade exposure to potaots or tomatos once or twice a week. Absolutely cannot touch eggplant ever again And...
  6. Hmmm, I've had chronic bronchitis for about 12 years now. I've been gluten-free since 12/06. It hasn't made a difference for me. Nothing really has, I've tried everything. I refuse to go back on a steroid inhaler so I live with it. Chronic bronchtis is however a different beast from the bronchitis that follows colds.
  7. If they're gonna splice genes into me I want German Shepherd genes
  8. If someone is still healing from the intestinal damage caused by gluten intolerance, fats can be hard to digest. The small intestines, which is the area damaged by gluten interaction, is where lactose fats vitamins and minerals are digested. If the villi damage is still present, which it usually is for sometime after you initially go gluten-free, then you...
  9. The ancient ancestors of wheat were considerably lower in gluten. But gluten's interaction with yeast is part of what makes bread rise and become larger and lighter in texture. So the higher the gluten content in the wheat, the bigger the loaf of bread and the fluffier. This was seen as a good thing in a world where food was in short supply. Wheat was...
  10. I think you're kind of looking at this backwards Many people become more sensitive to gluten the longer they go without eating it. So when they accidentially or intentional digest some gluten after being gluten free for a long period of time they may have a much much stronger reaction to gluten then they ever had before if they truly are gluten intolerant...
  11. I don't really remember, I'm sorry, but I know it wasn't a magic instant presto change. I believe it was a gradual reduction rather than a sudden AhhHaaa lightbulb moment. I want to say that it took about six months. Most of my worst symptoms where neurological rather than digestive. I can still react badly with depression and rage to specific other foods...
  12. I used to have them all the time. It's been a long time since I've had one though. I went gluten-free in December of 06. The gluten-free dreams for me were a type of anxiety dream. They were a reflection of how anxious and frustrated I was about going gluten-free. I never felt guilty for eating gluten, but rather horrified, angry and scared. But that...
  13. Having grown up the youngest of four I can safely say that it's a siblings job to torment you. But he taunts you becuase he knows it's going to upset you. He only does it to get a reaction out of you. He's only taunting you becuase it's fun for him. If you ignore him when he does that there's no pay off for him in doing it; it's no longer fun. If you...
  14. I can sympathize. I'm certainly not 23, just over twice that actually, but I'm frustrated by what my body cannot do. At one point, years before I was diagnosed I spent a year or so falling down a lot. I'd be walking along and just suddenly be on my knees with no memory of tripping. I retrospect I now realize it was a form of nerve damage. But the damage...
  15. I use Cheba's basic bread mix to make pitas. The texture and the taste are different of course, but if you flatten out a ball of dough and bake it, you can split it and fill it. That's pretty much the only "sandwich" I make anymore.
  16. "The Spanish researchers analysed the gut microflora of ten healthy subjects with an average age of 30 assigned to consume a gluten-free diet for one month." If I'm understanding this study correctly, I don't see how it could be relevant to people with Celiac Disease. For starters, how did they determine these people were "healthy"? Did they test them...
  17. I'm well aquainted with the "It was there a mininute ago??? DAMN DOG!" scenario. It's a wonder she doesn't think her name is damn dog. It does get easier, but I won't kid you, the first six months or so are the worst. I would suggest just concentrating on getting the food thing down for now. Don't worry about utentils bowls etc, just learn what's...
  18. If most fast food were quality food with modest amounts of sodium and fat I might buy your argument about convenience, but 95% of the stuff served at Fast Food places is nutritionally poor to terrible and drenched in oil. It doesn't begin to be worth the risk to me. I suffer from intestinal as well as neurological problems when I ingest gluten. The...
  19. That in a nutshell is why I don't eat at fast food places ever. The risk is too great. They do not have any allergen protocols in place nor would the workers there even understand the concept. It's hard enough to go into a good non chain restaurant and explain what you need and have them understand it. Trying to explain to most 16 year old part time employees...
  20. I did email Angel Food directly. I never received a response. That was when I contacted the local organization who couldn't tell me who made the breaded meat but just assured me it was gluten free. I don't believe anyone anymore unless I know the comany or can research them and can actually see the ingredient list. I've been at this too long now and...
  21. I seriously don't get why anyone would go to a place like Taco Bell and expect to be safe. Have you seen how they line the products up and shove them down the assemly line? Hands that touch gluten items also touch so called non gluten items. Someone who just handled a flour tortilla is now handling your so called gluten free item. Ingredients slop...
  22. I was wondering if anyone had tried the allergen box. I was terribly disappointed when I saw it was all breaded meat. I don't eat breaded anything anymore no matter what it's breaded with. That's just something I got out of the habit of years ago when I went gluten-free. I've tried emailing them, I've tried talking to the local reps in my area but...
  23. For my sake I hope this does not catch on. I have a bad allergic reaction to Amaranth flour. They start throwing this into everything gluten free and I'll be SOL for specialty manufactured gluten-free foods like crackers and breads and mixes.
  24. Ohhhh, wanna bet I can guess your gene type, LOL. One of the things I keep coming across when I google DQB1 0602 is a "striking association" their words not mine, with Narcolepsy.
  25. I was diagnosed with Celiacs via blood test medical history and response to diet. I went ahead with the gene test because I was the youngest of four siblings and the only one to "show" gluten sensitivity and I was wondering why. I did it purely for me; not to confirm or disprove anything or anyone. I found through the DNA test that I have a double copy...
