Has anyone done the Candida diet? i need to but my biggest concern is loosing weight....I am currently 5'11" and weigh 150 (I should be closer to 155-157) but if i start cutting out carbs & sugar im gonna drop down even lower and I dont like the way I look when Im too thin & everyone starts complaining that i look too thin. What kind of carbs am I allowed on this diet..can i do brown rice and quinoa?

    I believe you can do complex carbs, but no more than 15 grams at a meal.

  2. Posting on behalf of my mother who has celiac disease and intolerances to all dairy and to rice - in addition to all grains and gluten. The intolerances as well as irritable bowel syndrome have caused her to lose so much weight that she fears she will die of malnutrition. Looking for meal replacements (drinks or bars) that do not contain dairy, rice or gluten. If you have any brand names or specific products, please post the information here. Thanks so much. Jan

    Lara bars - they are made with fruits and some with nuts. No dairy, rice, gluten, starch etc. I can get them at my grocery store in the health food department. I really like them, but don't buy them often as they are $1 + each

  3. Can you guys help me? I am interested in this diet but it seems really complicated to me. All this stuff about making your own yogurt and this "dry curd" cottage cheese really confuses me. I don't know where to get this cottage cheese and I've never even heard of it. One of the websites says you can find it at wal mart but I looked everywhere and couldn't find anything. Where do you get it? What brand is it? Also I don't understand how to make the yogurt. Is there no way to make it without some fancy yogurt maker? I don't have money for anything like that so can I just skip the yogurt part of the diet?

    There are many ways to make the yogurt. I bought the yogurt maker as I work full time and it's much easier. Heat the milk, cool it, add starter and drop it in the maker. There are recipe's online that work also. My sister makes her's in the oven - uses a 60 watt light bulb. Or my other sister made it with a heating pad. I've also read some use their crock pot.

    I use yogurt instead of the dry curd cottage cheese. I had problems with the cheese. I substitute dripped yogurt in the recipe's that call for dccc. I can't tolerate much of the almond flour yet, so don't make bread. I stick to the basics. Meat, eggs, yogurt, fresh veggies and fruit. The yogurt is a staple. I eat at least 3 cups a day. It is very satisfying and I don't feel deprived. Nothing better than homemade yogurt and fresh raspberries!

  4. I would suggest eating before you go. I know I'm going to be in the minority here, but I just think it's in poor taste to bring your own food to a wedding. 3 hrs. is not a very long time. A few little snacks in your purse is ok, but I just think bringing a whole lunch box of food is a bit of a spectacle and uneccessary for the amount of time you'll be there.

  5. Starchy foods, dairy and grains give me that burning low back pain. Dairy will also give me a burning pain between my shoulder blades.

    Glad you are doing better. I've been grain, sugar, starch free for 10 months and am doing really. Everyone is so different, but I wouldn't think one month is long enough to be healed. More like 6 month or a year.

  6. I make a lot of broth from soup bones. 1/4 cup of this broth has 1 cup of milk's worth of calcium. I use it a lot in meat dishes.

    I have all sorts of trouble with medications. I get lots of digestive problems from drugs. I don't tolerate otc medicines at all anymore. The broth is suppose to be easily absorbed. We'll see.

  7. Your symptoms are very similar to what I use to deal with. I eliminated all sugar, grains, starch from my diet.

    I am better. In time I will begin adding some things back in, but right now I"m content with my diet and am flourishing. I follow the Specific Carbohydrate Diet.

    You can do a web search or by the book Breaking the viscious cycle. I hope you find the answer to your symtoms. Here's what caused me trouble.

    Corn and gluten free grains - neck, shoulder, back pain - and digestive issues (foul gross stools), fatigue

    Dairy - sinus headaches and digestive symptoms - also severe joint pain- fatigue

    starch and sugar - (potatoes, pasta, etc. ) horrible nightmares and hypoglycemia , fatigue

    Plus I was irritable - paranoid - and depressed. Not any more!

  8. Beans contain both starch and sugar which can be hard for celiac's to digest. You can try soaking them for no less than 12 hours - then rinse them thoroughy - and throw out the water. Navy beans (white) have the least amount of starch.

    Cross contaimination is an issue, however, more times than not its not cross contaimination - it's starchy and complex and simple carbohydrates that cause celiac's problems. Our villi are damaged and we may not produce the enzymes to split these complex starch/sugar molecules.

    Good luck! Remember even a healthy digestive system has trouble with beans - thus the gas!

  9. I'm on my sixth pack of birth control, so by now I would expect my hormonal stability to continue by this point. I got on it because I had ridiculously heavy period and horrible cramping and diarrhea and fatigue (symptoms relating to the menstrual cycles of Celiacs actually). I have ALWAYS had regular cycles, never a week early never a week late, and ever since I got on birth control I've had regular, light, cramp-free periods. This month, however, I got glutened by a pack Fantastic Foods split pea soup mix (it said processed on shared equipment with wheat, but I figured I'd try it --DON'T EAT THAT STUFF). Anyway, got my period a whole week early complete with cramps and diarrhea and moodiness and fatigue and crazy food cravings. I got off gluten the same week I got on the pill, so I have no idea what's causing what with my body.

    I just wanted to see if anyone's gotten glutened and experienced a difference in their hormones and menstrual cycle that month?

    the pill can cause bacterial overgrowth in a damaged digestive system. It may not be the pea soup that caused the problem - but then again it could hae been. If you continue to have problems you may want to look at the pill as the problem.

  10. mushroom, I'm sorry to hear about what you've gone through. Thank you for sharing. It means we all have to be vigilent.

    With respect of chatycady's comments, I tend to agree. I have found that recently I"m experiencing some stomach pain and bloating when eating gluten free grains. I had decided, prior to reading her/his post, that I would start to eat whole foods from the earth as well as chicken and turkey. I was a vegetarian prior to diagnosis, but have found it difficult to remain one.

    I get my DEXA scan results next week. A bit nervous as I do have lots of bone pain. Fingers crossed.

    I plan to implement the suggestions gleaned in this topic.

    Good luck to you! I hope the change will help. Just a warning of caution on turkey and chicken. Find ones that are not processed or are minimally processed. Many brands inject a solution which can also irritate the intestine. FYI.

  11. As k-dawg said, the osteopenia/osteoporosis is probably more related to the bone density already lost before you were diagnosed with Celiac disease. The other consideration is the fact that osteoporosis can be due to other factors besides Celiac disease. Many people have osteoporosis but do not have Celiac disease. It can be a hereditary condition whose exact mechanism is unknown.

    You are young enough that you might benefit from a bone building drug such as Fosamax. Talk to you doctor about it. There is a lot of controversy over these drugs.

    Another issue is the fact that we now know from recent studies that Celiacs diagnosed as adults don't experience the regeneration of their microvilli as well as children do, even though they are very strict about remaining gluten free. So, most adults, even after going gluten free continue to have malabsorption problems. Of course, we should still be diligent about avoiding gluten so we don't experience more damage to or small intestines than we already have.

    By the way, I am a 58-year-old male celiac who was diagnosed six years ago and I have osteopenia. A recent follow-up endoscopy/biopsy showed my microvilli had not recovered and there were still signs of inflamation even though I have been very careful to eat gluten free.

    There is an article I found on this website that addresses this issue. It talks about "gluten free" may actually cause more bacterial overgrowth which inhibits digestion and absorption. I think they are referring to the many "gluten free" grains and new products that were developed for us. They are harder to digest and may actually irritate the intestines. Gluten free oatmeal is discussed. It isn't always tolerated and can cause damage for some. (For some celiacs - more likely older celiacs).

    I do not eat these foods. I eat fresh meat, fresh or frozen veggies, and fresh or frozen fruit, olives, pickled foods. No sugar, starch, unfermented dairy or grains. I make my own yogurt and eat it everyday. It is rich in calcium and probiotics. It has healed my intestine and I am better. I will go back to the Dr. soon and find out how I am doing, but I want to wait another month or two for the dexa scan. I'm much stronger now and actually have muscles again and lots of energy. I am a 53. I may not rebuild bone anymore, but I hope I can stop any further deterioration.

  12. What was your D level? I believe "they" (researchers) have raised the levels for better health. I believe 60 to 80 is what they now recommend. I'm working my way up from 20.

    Start pumping iron and jumping rope or do some jumping jacks everyday. You are young, you can rebuild your bones. Also, lay off the soda - it sucks magnesium from your body - which is needed to build good bone.

  13. Holy cow. What do you people eat? :(

    Well, I eat all fresh meats - nothing processed, fish, fresh or frozen veggies, homemade yogurt with honey, all fresh and frozen fruit, (with no sugar or any additivies,) except for the few I'm allergic too. I snack on apples, carrots, olives, dill pickles, I also eat lots of onions - very good for the immune system.

    I've never felt better and have tons of energy!

  14. I couldn't tolerate the D2. It upset my stomach and I was exhausted for a couple of days. I take D3 the gel form 3000 units a day. It has made a huge difference! I no longer have leg cramps, muscle aches and joint pain. I read that D3 helps heal a leaky gut. Lack of D actually causes gluten intolerance and leaky gut and all sorts of autoimmune diseases.

    I was diagnosed with osteopenia.

  15. This is off subject, but I just wanted to send some words of encouragement for those of you starting or following the SCdiet.

    I am 53, celiac with all sorts of food intolerances. I found SCdiet about 10 months ago. I have just retuned from a 10 day vacation visiting family and hiking in Rocky Mountain National Park. I hiked 6.3 miles one day and 10 miles another day, and rode horses another day. I could not have done this last summer as I was too weak and sick - although I was gluten free.

    Stick with the diet, I know it's hard, but don't cheat. I have two sisters who continue to cheat and they haven't improved like I have. (I realize we are all so different in the healing process, but cheating delays the healing process.)

    I still can't eat a lot of the "legal foods" but maybe in time I will.

    Just wanted to share my story. :D

    P.S. I rented a little cottage with full kitchen and cooked my own food. I also made lots of the yogurt before I left home and took it with me. I was gone for 10 days.

  16. My eperience has been to figure out the food intolerances on your own. My sister has been to tons for Drs and alternative medical practicioners. They all have a theory on what foods are her problems and they all want to sell her supplements for a large fee. All the supplements caused her more distress. She's finally given up and following an alternative diet that is working and like her I follow the specific carbohydrate diet. It has worked for me - and you don't need health insurance to do it.

  17. I too have osteoporosis and was told to take calcium supplements. I suggested they test my D levels. I was extremely deficienct. I am now taking 2000+ units of D a day. I live in the upper midwest where winter months are ccold and cloudy, plus malabsorption due to celiac disease caused the deficiency.

    Everyone who's been diagnosed with osteopenia, or osteopororis should have their D levels tested. The small amount of D in calcium supplements may not be enough to solve the problem. Also, vitamin D has shown to heal the digestive system and for us with leaky guts it can close the "holes" and rebuild the mucosa which is needed for proper enzyme production.

  18. Anemia can cause pica. I craved ice and salt. I had both iron anemia and B-12 (pernicious anemia). Eat red meat on a regular basis - iron supplements will irrate your digestive system - which you don't need right now.

    Anemia causes the dizziness, blacking out, fainting, racing heart and sleepiness. Gluten can also cause the sleepiness. I too could sleep for days on end. I also had low blood pressure with this. It also caused extreme fatigue.

    It will take some time, but you will get better. Have your vitamin D level checked too, it's probably real low.

    Cook a hamburger and make a salad with tomato. The tomato (vitamin C) will help you absorb the iron from the burger.
