  1. Nen, some people can see a relationship (pre-diagnosis) between eating and feeling poor. Others, like me, don't a connection: I think most people are in this catagory. Yes, you are right that the body just becomes inflammed and even if it is a non-gluten day, you still feel bad from one or more of the following: Systemic damage to intestines, nerves, brain...
  2. IrishHeart, do you and/or your docs think that your severe symptoms are because of the heterozygos nature of your genes (hah! I wrote jeans first) or because of the 35 years? My genes are homozygous but I was undiagnosed for 30+ years.
  3. ME: Diagnosed by biopsy 2/12/07 Marsh I. Negative blood tests. Gluten-free (except for accidents) since 2/15/07. DQ2.5 (HLA DQA1*05:DQB1*0201) Symptoms: gas, intestinal pain, bloating, big D, mouth/canker sores, anxiety, joint and spinal pain, vitamin/mineral malabsorption causing low Vit D, low Vit B and ostopenia and general poor health and early menopause...
  4. I use Nature Made. When are you taking them? Do you eat/drink something at the same time? I find I can't take vitamins in the morning, no matter what I eat with them (especially ones that contain iron). I take mine at lunch or dinner time and it's much better.
  5. Looks good! Do you cook the beef before rolling it up or does it cook in the oven like meatloaf? What do you do with the spinach in the recipe?
  6. That's what I said. I said they wouldn't work.
  7. I think that between the benefiber and the juice-plus, you're getting more gluten than you realize and more than would be good for a celiac. Oats that are not certified gluten-free are most likely contaminated. Barley bran itself (just the hull) may not have the offending protein, but you can't convince me that there aren't protein particles adhering to the...
  8. Shauna's theory is that there is an optimal ratio of starches/whole grain flours. I wouldn't substitute tapioca, arrowroot or cornstarch for the millet, any of the others would work, depending on the taste you are going for and what you are making. Just substitute the same number of grams. The problem you get is that if you use something like almond...
  9. Celiac and IC can be related. But the most important thing for you to do is to get tested for celiac, as all first degree relatives (including your IBS brother) should be tested. Then it wouldn't hurt to do a gluten-free trial after the test, even if you test negative for celiac. As you probably know, it's essential to be eating gluten before and while being...
  10. If you don't want to cook much, I'd suggest a salad routine. Once a week, cook up 4-5 chicken breasts, 3-4 chicken or pork sausages, 1/2 pound shrimp. Get some hard boiled eggs or make them. Get some canned tuna. Buy lettuce, spinach, cucumbers, in season fruit (peaches, grapes, berries in the spring/summer and apples, bananas and oranges in fall/winter...
  11. 1974girl, thanks for the info. Do they take kids over 18? I couldn't figure it out from the trial site. I'm going to have my DS do it if they'll take him. He's going to be a doctor, so it should be interesting for him anyway. Thanks for the info on Vit D. We supplemented that for years because I read a PubMed study that said Vit A and D supplementation...
  12. I don't know that any vaccinations are risky for celiacs. I am looking into getting the shingles vaccine. Is there a reason you suspect that it might be risky?
  13. ljgs, I can understand the worry. My DS teases me when I worry about him getting diabetes. First, has anyone in the family had Type I? I assume that she doesn't have any Type I symptoms (or else you'd be at the doctor's instead of here). Second, have you had her genes tested? DQ2.5 is the most highly linked gene to Type I diabetes, particularly...
  14. Wow, I've never heard anyone describe me exactly like that. My hubby never believed me that fruits and veggies would make me feel sick and light headed. Even eating them with fat and protein didn't help. Pasta and bread were necessary for me to feel "full". But I was not skinny.
  15. 1) Yes, looking back I've had symptoms at least since I was 17, 30 years prior to diagnosis. At 17, I had symptoms of Rhuematoid arthritis, but the docs couldn't figure it out. Finally they said I didn't have it but they were probably on to something. I had "bathroom attacks" 20 minutes after eating where I had to rush to the bathroom 2-3 times a week...
  16. Hi PersianCeliac, and welcome. I hope you (and your mom) can not worry too much. The risk of refractory celiac is low and she's on the right track, so try not to worry. The best thing to do is to eat naturally gluten-free whole foods - meats, veggies, fruits, rice, potatoes - and limit eating out to start with, and then see how she does. Is the doctor...
  17. I am in awe of your science knowledge, Skylark. Very useful.
  18. Nicole, my son's story is similar to yours. He was 100 percentile in height and weight at birth, decreased to 75% in height after pneumonia (and unexplained stomach pain) put him in the hospital for 8 days at age four and then down from 75% to 25% from age 10-15. I forgot to mention that I had a disk in my neck rupture when I was 27 and had some paralysis...
  19. Nicole, the docs thought that I had RA too for a while at 17, which is when my symptoms first becme known to me. And I was/am always hungry and also go the shakes if I don't eat - still even now. I guess 30+ years of undiagnosed celiac will do that. Kinda funny story. My dad is 6'4" and I am 5'2" so I just assumed I took after other people. My...
  20. That's too bad. I wonder if there are sources for "natural" turkey w/out injections? At the farmers market near me, you can get meat and eggs direct from the farmers and it might be a way to get something untreated.
  21. I don't think you have to have the biopsy but the drawback is (unless your doc agrees to officially diagnose you based on blood results and positive reaction to diet) that you are not going to be an "official" celiac and your pediatrician may not agree to test your kid(s) based on your lack of defined diagnosis. Some people have a hard time convincing doctors...
  22. I agree with Mitzi that you need time gluten-free to adjust. Enterolabs has its place (Ive used them) but theyre not fool-proof. With your list of foods, I dont know that you could have a healthy, nutritious diet totally vegan with no protein sources like soy, nuts or dairy/eggs, no rice or corn, no beans or nightshades. If you are going to do that...
  23. Yes, scare tactics aren't too effective, especially on the young. I heard it said that telling young people that they will die if they drive drunk doesn't work, because they think it won't happen to them and they feel invincible. Instead tell them that they could end up in a wheelchair like Christopher Reeve and unable to hang out with their friends. That...
  24. Thanks Chad. I think that's something I'll have to do. Since my DS is gluten-free/DF and my DD is mostly gluten-free/DF, going DF will be easy for me (but sad). I've read here and other places that giving up dairy helps with sinus issues, so it must be similar. I'll start with diary and if that doesn't help, I'll try eliminating tomatoes, melons and...
