ARCHIVED How Much Acommodation Should We Expect?
cyberprof replied to Irishgirl76's topic in Parents, Friends and Loved Ones of Celiacs
It's nice that your sister is so thoughtful and good that her hubby is seeing benefits from gluten-free too. Most of the time, my house is gluten-free (kids at college) but I do occasionally have gluten in the house when DD comes home from school. I don't allow gluten on my cutting boards, teflon skillets, in the tupperware etc and I have separate gluten... -
I like Rudi's gluten-free bread, which is sometimes kept in the freezer section to keep it fresher. Be careful, because they also make gluten bread. THere's also Udi's (yeah, Rudi's and Udi's...confusing) which some people like better. Making bread may be cheaper if you can find a mix you like. Pamela's has a good mix and so does gluten-free Pantry...

BTW, on the gluten-free pasta, cook it until it's almost (but not all the way) soft. Drain it and pour some hot water over it to separate it. Then coat it in your sauce immediately so that it doesn't stick.

Can you eat zuchini and other squashes? I have some good recepies for squash puree which would be a good alternative to mashed potatoes and cheap too. I have some other ideas. I'll send you a PM (Personal Message).
-
Have you tried quinoa? It's a great side dish. Cooks easier than rice and is more like a noodle taste. How about potatoes? Cooking baked potatoes in the microwave couldn't be easier. Top with a can of hormel chili or some Classico spagetti sauce and meatballs. You can also get pre-cooked mashed potatoes in the deli case. There are corn...

Yay for you! I use Blackboard too for my classes. Online classes are da bomb. Good luck and have fun!
-
Hang in there Alex. I hope things go well for you today. BTW, I'm a professor and I teach online college classes (part-time...I'm also a manager.) Many colleges and community colleges have online classes. If you want to learn about online classes, send me a message and I can help you (or anyone else reading this) with finding classes and working toward...

ARCHIVED Kinda Don't Know What To Do
cyberprof replied to Gfresh404's topic in Coping with Celiac Disease
True. I also forgot to mention that I'm a college professor, so I've seen a lot of college kids over the years. College is - for most people - not the best time of life, even though it's marketed as such. If you're 21, you may just be feeling stiffled by college and looking forward to being out of that environment. -
ARCHIVED Kinda Don't Know What To Do
cyberprof replied to Gfresh404's topic in Coping with Celiac Disease
Gfresh404, I feel for you I really do. It's hard to be 1) different and 2) feeling left out. It does sound a little like depression or at least grief that you don't have the easy-going life that your (non-glutenfree) buddies have. But (sorry about starting to sound like your mother) what do you want to get drunk for? (I have two college kids of... -
ARCHIVED A Milestone
cyberprof replied to egallag's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I spent about 25 years like that. After a meal I thought that I had to run to the restroom shortly thereafter because: 1) Everyone does that. Isn't that normal? or 2) I ate too much. (Doctors always indicated that my stomach wouldn't hurt if I wasn't overweight). Rolling on the bathroom floor in pain was normal, right? Gah. OP... -
ARCHIVED Why Do I Now Get Sick From Gluten When I Didn't Before Going Gluten Free
cyberprof replied to JulieAC's topic in Coping with Celiac Disease
BettyG and JulieAC, I hope you both will stick around. While I totally disagree with some of the punative responses (a slap is never what I would think even in the abstract) but I do understand where they are coming from: Untreated celiac = pain and needless suffering. Eating wheat as a celiac while pregnant is a huge risk, both to mom and to... -
This is something that I would call the company about. They have such an extensive list Open Original Shared Link so they either missed this product or it does have gluten in it. Plain Rice shouldn't but the words "whole grain" are unusual and got my attention.
-
I'm not sure anyone has proved a gluten connection but there is a celiac and/or gluten-intolerant connection: It took me all of FIVE minutes to find the following peer-reviewed research papers, which should be official enough to show your doc.(Docs tend to dismiss anything that is not peer-reviewed.) Open Original Shared Link Open Original Shared...

ARCHIVED Another Piece Of The Puzzle, 30 Years Late. Do I Laugh Or Cry?
cyberprof replied to MitziG's topic in Coping with Celiac Disease
Thanks for this thread Mitzi. For me: Weekly mouth/canker sores - check Arthritis at age 16 - check "Growing pains" daily from age 8 - check Decaying teeth - check Horrendous stomach pain after eating - check Big D almost daily - check I am so grateful that I was able to have a relatively normal life but it could have been much better. I... -
ARCHIVED Shaky, Nausea, Feel Weird After Eating.....help?
cyberprof replied to TTNOGluten's topic in Coping with Celiac Disease
IrishHeart - as ususal - is right on target. I had these symptoms for years even pre-diagnosis. I could never eat just an apple it has to be an apple plus peanut butter or cheese or an egg. In addition to what she said, a sublingual multi B is my choice because I know it will get absorbed. Plus I have to have a Magnesium supplement daily or I feel... -
ARCHIVED Could This Be Celiac?
cyberprof replied to Cher18's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Cher18, did you know that UBOs ARE symptoms of celiac? Ravenwoodglass and other posters here had them before diagnosis. Maybe someone has a link to a scholarly article that you could show to your doctor. -

ARCHIVED I Had Hoped To Never Return To This Place
cyberprof replied to zus888's topic in Coping with Celiac Disease
I too also read the articles earlier this morning and agree that there is no evidence that going gluten-free cures the PSC. BUT...medical science isn't very knowledgable about PSC (compared to some other diseases) and IMHO doctors don't know much about celiac. It might be that being gluten-free would reduce the inflamitory process enough so that the... -
ARCHIVED I Had Hoped To Never Return To This Place
cyberprof replied to zus888's topic in Coping with Celiac Disease
Zus, I truly feel you. Watching other people (even my daughter or other relatives) eat my favorite Pagliacci Pizza - unbearably painful. Walking into a PTO meeting, wedding, business event, Christmas party and watching every.single.person.there eat what they want, without thinking about it - excruciating. Knowing that I'll never be able to travel... -
I've made the Fantasy Fudge recipe for years: It's the one on the jar of Kraft's Marshmallow Fluff. Open Original Shared Link It calls for butter and evaporated milk. My son is Dairy Free too so I was looking for a Dairy-free/gluten-free recipe. I found one online that was good but it didn't set up. So I tried the Fantasy Fudge recipe using Earth Balance...

ARCHIVED Type 1 Diabetes - Triggers From Celiac Or Dairy?
cyberprof replied to alicewa's topic in Coping with Celiac Disease
The main celiac gene - HLA DQ2 - is also the type I diabetes gene: This includes DQ2.5 like I have. The combination of DQ2 and DQ8 predisposes the holder to LADA (late oneset Type 1). See article: Open Original Shared Link So, yes, there is a connection, especially for DQ2 holders. I have DQ 2 and my maternal grandfather had Type I late onset (he... -
ARCHIVED Celiac And Poor Growth
cyberprof replied to AnthonyinMaine's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Anthony, glad you had a good visit and a helpful doc. And I hope the test results show good news. About the hereditary nature of celiac, yes the potential to have celiac is hereditary based on whether or not someone has one or both of the main celiac genes, which are HLA DQ2 or DQ8. (There are some people with celiac without the genes...but that's a... -
ARCHIVED Wheat Allergy And Grain Alcohol
cyberprof replied to creesal's topic in Related Issues & Disorders
Ellie, your statement is confusing. Vodka may be safe for many celiacs, but some highly sensitive celiacs (or highly allergic wheat-allergic people) state that they avoid grain-alcohol products. I do, just because I hate getting sick. Grain-based alcohol may not make me sick but I don't want to take a risk. A good tasting, reasonably priced alternative... -
Keratoconus is an autoimmune disease, so yes it is likely to be related-- the way we celiacs say "If you've got one autoimmune disease, you often get more." This article talks about a link. Open Original Shared Link The article even says that "IBS" is autoimmune. Silly doctors. IBS is a catch-all condition that is really just a cop-out by docs. And yes...

ARCHIVED Celiac And Poor Growth
cyberprof replied to AnthonyinMaine's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Anthony, please (if you don't mind) report back after the endo visit. I'm curious what he has to say and what he thinks of the VitA/Iron supplementation. Are you going to show him the study on vitamin supplement? If you reply to this thread we'll get notified. Good luck!
