ARCHIVED All This Talk About gluten-free Bakeries...
JNBunnie1 replied to mythreesuns's topic in Coping with Celiac Disease
Yeah, I just went to their website, and they use spelt in half their stuff, and it would cost me 20 EXTRA dollars to get a dozen brownies shipped from NYC to CT. Their prices seem great for a NYC bakery if you were to walk in, but I'm not paying that for shipping! I could screw up five of my own batches of brownies for that! -

ARCHIVED gluten-free Baking Tips
JNBunnie1 replied to bakingbarb's topic in Gluten-Free Recipes & Cooking Tips
Yes, people would buy it! Online gluten free food is exploding right now, people ar epopping up everywhere. But Juliebove is right, you gotta really be good to have it last for longer than two days, so a lot of people are freezing and shipping, but that's even more expensive. Maybe you could start out small-scale in your closest six towns, and just take out... -

Ok, my turn to rant about cholesterol. Cholesterol makes up a healthy percentage of the membranes wrapping your brain cells. If you are unable to DIGEST your cholesterol, it can wind up too much in your blood stream and not enough in your brain cells. This happens for one of two reasons: one: you're eating crappy cholesterol (trans fats, whatever). Two: you... -
Maybe you should pinpoint the foods that typically trigger a cheatfest and try to get some replacements, and ask for recipes here. Or start telling yourself, "I am giving my self cancer just like cigarette smokers" every time?

ARCHIVED How Do You Deal With Gluten Cravings?
JNBunnie1 replied to mythreesuns's topic in Coping with Celiac Disease
Actually, I make oven fried chicken and to me it was fabulous. Everyone's taste is different, but if you go to Allrecipes and check the oven baked fried chicken recipes, just replace the flour with sorghum or rice and 1/3 some kind of starch, and you're fine! It tends to leave a little dry flour on the top, even though it's crispy all over, so I just pick... -
Hey, I'm not laughing, I still have boxes from moving in two years ago. guess I don't really NEEEED anything in there, huh? Dang those crawlspaces!

ARCHIVED How Do You Deal With Gluten Cravings?

You know what I really want? A croissant. Shauna at glutenfreegirl went to Italy for her honeymoon and they had a GLUTEN FREE CHOCOLATE CROISSANT. I told my boyfriend we're going to Italy! Or making an online friend who will ship me some. That's probably more cost effective I suppose.... sigh..... -

The website sells frozen dough, but I doubt that many stores carry it. It's a lot easier to find the dry mixes. I used the 'original' flavor to make calzones, they're fabulous! -
Speaking of which, I read about a restaurant that's completly gluten-free in Texas, maybe you should Google it Barb. I told my boyfriend our next vacation is in Texas. Maybe it will help give you some hope!

ARCHIVED Chock Full Of Questiony Goodness
JNBunnie1 replied to Nyxie63's topic in Coping with Celiac Disease
It took a while for that to happen, so don't get too excited just yet. That and i had some emotional hang-ups as well, but the neurological effects of gluten were definitely to blame for some of it. My libido also increased twofold (but still no orgasm, wierd huh?) after I went off birth control. -
I live in Portland. I know that the last time I went, the Rainforest Cafe at the Westfarms mall had a gluten-free artichoke dip! I usually avoid any place that does pizza (all that flour flying around the air) but other than that, I'll go pretty much anywhere and get a burger patty no bun. I also ask to make sure they don't toast buns on the grill, though...

ARCHIVED Stomach Pain During 3rd Hour Class At School
JNBunnie1 replied to Virgie's topic in Parents, Friends and Loved Ones of Celiacs
Hi Virginia. Oddly enough, that actually used to happen to me, too. For some reason, my stomach would have a hissy fit the same time every day. It went away eventually. But I would have her double check every cosmetic and lotion. And the idea about the desk being glutened was a good one too. I'm curious though, she's having stomach cramps and having to go... -
Barb, if you want osme encouragement in gluten-free baking, check out GlutenFreeGirl's blogspot, just google glutenfreegirl. She even has a book out now, I love her. She makes cooking so much fun.

HAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAHAH!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! I SO DO THAT!!!! Anyway. Thanks for the info, Hathor, I had no idea. The package of my xanthan gum says it comes from the 'leavings' of harmless bacteria. I don't think it has anything to do with corn. Good call on the bone density thing, I didn't catch that. And you're right, you don't actually need a 'reason' to do all that testing, other than idle curisoity. You definitely have your proof already. And your family... -
ARCHIVED Pumpkin Recipes?
JNBunnie1 replied to cooki.dough's topic in Gluten-Free Recipes & Cooking Tips
Carla, help! I did exactly what you said, and it's awful. It's like gooey gelatin in the middle, but it's completely baked, not underbaked at all, it just lookes really strange and tastes wierder and is very dense. What gives!?!?!? I wanted pumpkin blondies.... waaahhhhhh........ -
ARCHIVED Chock Full Of Questiony Goodness
JNBunnie1 replied to Nyxie63's topic in Coping with Celiac Disease
Keep this in mind. Celiac can make it harder to get both health and life insurance. If you have no official diagnosis, they can't hold it against you. So that's something to consider when discussing this with your doctor. I've been a klutz all my life too, and it's gotten better gluten free, so you're not alone. If you've been beating yourself up on... -

JNBunnie1 replied to cgilsing's topic in Coping with Celiac Disease
I was just curious whether anyone on the anti-dairy bandwagon here had ever done any research on the science of raw dairy and the nutrition it provides, or the health concerns it poses. Just curious what info everyone else has found on the difference between commercial dairy and raw dairy. -

You're welcome! Get everything you can get at Trader Joe's, their stuff is cheaper. When I said immediate, I just meant much sooner than most. I actually take two days to know I've been glutened (which makes finding the culprit a little awkward), and most people take at least a few hours, is my understanding. Your neurological symptoms would suggest... -
ARCHIVED Chock Full Of Questiony Goodness
JNBunnie1 replied to Nyxie63's topic in Coping with Celiac Disease
Nyxie, considering your reaction to the wheat challenge, I wouldn't even bother getting tested. That was a pretty extreme, immediate reaction. I'd wait one month and have something with rye or barley in it, if you're still curious whether gluten is the problem or just wheat. And I use Whole Foods Gluten Free Bakehouse white bread for grilled cheese sandwiches...
