My worst glutening was earlier this year. I had Sam's Club rotisserie chicken that said it was allergen(wheat) free on it. Oh, yeah, sure. I had it two nights in a row and had a lot of it. I still don't remember much of the week after that, but about a day after my brain started to recover, I got lactose intolerant for the first time ever! And it was so painful... -

It usually takes at least two days fo rme to react, as far as I can tell, and itlasts from 2 weeks to a month depending on how much gluten I got. -

Megsbaby, I read about behavior like this in a book called Toxic Parents. It's a very good book for anyone who has to deal with controlling or abusive parents, whether they're yours or not. Even if it doesn't change anything, it helps you understand what's going on so you can be less bothered by it. -

I second that wholeheartedly, I made hamburger buns out of Chebe, which is tapioca flour, and they were amazing! chebe is remarkably versatile. Almonds will be a good snack with dried fruit that you can have too. I would hazard a guess that anything topical with gluten in it would be a no-no for anyone with kids. They're too touchy-feely with their sticky hands that then touch your face and everything else in the house that I wouldn't risk it. Oh, that's no fun. What I've studied about candidiasis is that the yeast is what's making you crave the sweets, because that's what it thrives on. Completely off-topic comment- Fiddle, I learned from my chef daddy that if you tear instead of chop greens, they'll last a good bit longer for you. Obviously, you're not having a problem with that, but if you ever find you need to keep lettuce longer, just a hint from the chef. Of course, tearing takes longer too.......

I know you've probably heard this a bunch of times, but it sounds like you have a bad stomach reaction every time you eat something starchy or sugary, so it's probably a yeast (candida) issue. Are you prone to yeast infections, or do you get that thrush in your mouth, especially after fruit or baked goods? -
Oh yeah, that! I forgot about the whole winter thing... I got glutened this past weekend, my IQ still hasn't recovered. I take Dr Ron's cod liver oil, but it's pretty expensive, Carlson is the next best. And you said it doesn't taste bad?

I think the important thing is that you feel better. It took me over a year to start gaining the weight I needed, so patience is definitely a virtue with this disease. I think you're doing fine, the important thing is that you feel better. Just don't do drinking Ensure or any crap like that to try to gain wieght, that stuff's full of sugar, which won't help...

Cody- The waffles likely have soy in them, and maybe the cookies and check the oil on the corn chips. I know Van's gluten-free waffles have soy in them. Also check any salad dressing, most conventional dressing has soybean oil.

I'd try an hour outside in the sun every day. Of course, some of us don't have the time for that (ha ha) but it's a noble idea.

The key in your comment here is "Those who test positive." Did your edocrinologist have any observations about people who test negative for Celiac trying a gluten free diet?
