ARCHIVED Hubby Can Be So Frustrating
JNBunnie1 replied to wowzer's topic in Coping with Celiac Disease
HAHAHAHAHAHAHAHAHAHAHAHAH!!! Tell your mom I said she rocks! I wish things like this were easier for everyone, and that i could share my boyfriend and my Mom. My boyfriend doesn't let any gluten in the house (except his goldfish for work and his box of stroopwafel) and he loves my cooking and encourages me everytime I screw something up. i just don't... -
Pffff, no kidding, I think that's a wonderful idea. Every time someone's teased me about gluten (my brother-in-law) I threaten him that he'll have to be the one to take care of me when I get sick. That shuts him up. Adults make much bigger messes than kids! Telling the in-laws that they'll be responsible for the kids care if they're responsible for the kids...

ARCHIVED Heavenly Pumpkin Bread!

Or the tapioca, too. Which is what I'll be doing when I try this! Since it seems corn makes my belly go GGGGGRRRRRRRRRR. -
ARCHIVED Which gluten-free Flour Is Closest To Regular Flour
JNBunnie1 replied to maze4's topic in Gluten-Free Recipes & Cooking Tips
Maze, it's kind of a given that a lot of hte gluten-free stuff you make at first will be scary and inedible. Someone actually made a joke about having a perfect score tossing things from the oven to the trash. Don't worry, things will get better. Maybe you could share some of the recipes that haven't worked out for you and we could take a gander at them? -
That is the cutest avatar ever.

ARCHIVED How Do I Overcome Bad Advice?
JNBunnie1 replied to sharps45's topic in Parents, Friends and Loved Ones of Celiacs
That's true, I was VERY sick. It does seem harder for people to follow the rules when they don't have major repercussions for breaking them. People have been trained to expect everything to be convenient and easy. On the other hand, every single person I know has supported me wholeheartedly in my gluten-free eating. They are more on top of things at restaurants... -
ARCHIVED How Do I Overcome Bad Advice?
JNBunnie1 replied to sharps45's topic in Parents, Friends and Loved Ones of Celiacs
I think it's a little unfair to say that just because someone is young, then they have a hard time with self-discipline. I figured this out on my own when I was 19 and I've never cheated, and I know a lot of older people that cheat all the time. From a younger person's perspective, it's much easier to be open to what someone has to say to me when they don... -
ARCHIVED Chock Full Of Questiony Goodness
JNBunnie1 replied to Nyxie63's topic in Coping with Celiac Disease
Ooooo, fun. ok. Make the flour mix amount depending on how much chicken you have. When I have 8 boneless skinless thighs, which I prefer because theyre cheaper and easier to eat, I need only 1 cup of flour. For flour ratio, I use one third starch and two thirds flour. So whatever you prefer, arrowroot, corn, or tapioca starch, and sorghum, rice, millet... -
ARCHIVED How Do You Keep Going When You're Not Getting Better?
JNBunnie1 replied to FootballFanatic's topic in Coping with Celiac Disease
Ok, just kidding. Maybe use olive oil to lightly saute all your greens. Get some decent coconut oil to use for baking, and sweet potato tastes really good sauteed in coconut oil. Mashed potatoes with ground hamburger, and use the hamburger drippings to moisten the potato, that will up your calorie count and it tastes yummy. -
ARCHIVED What Happens To You When You Are Glutened?
JNBunnie1 replied to tbradley93's topic in Coping with Celiac Disease
Oh, boy. First week I have no brain, and can't remember words right or if green means go on the stoplight. Also Am very dizzy, and nauseous, and have super-celiac-poopy. Then I'm lactose intolerant for a week, and I mean OW. Then I get the DH rash really bad, depending on how much gluten I ingested, which lasts for over two weeks. I'm sure I missed something... -
Your body probably had the starvation: save everything! reaction. Some people, when not absorbing nutrients, will save every calorie, valuable or not. Some people will lose all their weight, the stereotypical celiac (me). Even though you're getting more calories, you're getting the nutrients you need now, so your body won't hold on to all those unnecessary...

It sounds to me like you need some more nutrients and fat in your diet, especially with the joint issues. How do you feel when you eat avocados? I make guacamole almost every day when I'm not feeling well, the fats in avocado really help my stomach feel better. You can use gluten-free chips or carrots and cucumbers or whatever other veggies you like for dipping... -
ARCHIVED Achey Joints For Days
JNBunnie1 replied to FootballFanatic's topic in Coping with Celiac Disease
Actually, the ingredients in most sunblock are rather toxic. It's very difficult for your liver to handle. People need sun, there are societies on the planet who live in the sun all day long and don't have any skin cancer, but they don't eat a modern american diet. -
I get the fragrance-free, too. The smelly one smells just like my grandmother, which I thought was just too wierd. For feet, my boyfriend and I will take a little plastic tub just big enough for our feet and put water hot as you can stand in it, plus some body oil. Coconut, olive, cocoa butter, whatever. I have an organic blend of oils I like to use because...

ARCHIVED Achey Joints For Days

A run of the mill tanning bed would NOT, it's probably taxing your system. It's MUCH better to just get out in the sun, or get some full-spectrum lighting online and install it in the place you sit the most at home. -
Um, people have been living without any kind of grain whatsoever, very healthy, for thousands of years? edit: Don't you get folate from greens?

I don't think he should lose his license. I think everything else you said should happen and he should watch his practice crumble due to his prejudicial thinking and stupid behavior. His (early, unexpected) retirement should be beset by news institutions picking up on the story and broadcasting nationwide about the new Hitler. Tell everyone on the planet...

ARCHIVED Achey Joints For Days
JNBunnie1 replied to FootballFanatic's topic in Coping with Celiac Disease
The D3 is a good topic to bring up. you might try, for now Fanatic, supplementing with cod liver oil. (yes, they sell it in capsules). If you're still at the beginning of this joint pain, then you may be able to rectify the situation naturally, without visiting a doctor. I think everyone should take cod liver oil anyway, but it will give you the vitamin D... -
Yeah, I'm curious whether there's any scinetific analyses of oats as compares to the gluten protein in wheat, rye, blah blah blah......
-
The same thing happens to me, I use a humidifier at night and take cod liver oil, and sometimes use aloe vera gel all over me, it's much easier to spread than a lotion and dries faster. I also like Neutrogena Norwegian Formula hand lotion the best, it works really good. I like your name, by the way.

ARCHIVED gluten-free Baking Tips

ARCHIVED Flourless Pb/chocolate Chip Cookies
JNBunnie1 replied to Joni63's topic in Gluten-Free Recipes & Cooking Tips
I mentioned this on an earlier thread about these cookies, but I'll mention it again. Don't use turbinado sugar! Not unless you like crunchy sugar in your PB cookies. I'll be trying these with honey sometime soon. -
That is very good to know. Explains a few things.......
