I'm going to have to respectfully disagree. Biscuits aren't cake-like at all IMHO. They have layers and cake doesn't have layers when you pull it apart. We tried the sugar cookie today. Beware, it contains gluten-free oats. It's four 2" cookies, but the serving size is three cookies. They are crispy cookies with a buttery taste despite having no butter in them. It works out to .37 for a 43 calorie cookie. Meh. I'm not impressed. By poofy I think they mean rounded on top. My husband would always make an indentation in each biscuit before baking. He said it was to keep the biscuit from rising too much and cracking on top. Yes, I would say they have elasticity to them. When you pull the top off, the inside should be pillowy, fluffy, and springy. If you pull the middle out of a biscuit and roll it up into a ball, it would be gummy. HTH

You should be able to pull a biscuit apart. It's not cake like to me because cake has a crumb and biscuits don't. The top should be firm and crispy--a bit like a croissant in that it's flaky on top as well. The sides aren't brown at all. They have that elusive tear to them that gluten-free breads don't. He can't make you eat gluten. He can't. Ask him why he wants you to eat it. If it's only to test for celiac, then five days isn't near enough. You get to decide to keep eating gluten longer and take the test, or find a new doctor. He works for you. It's his responsibility to help you understand. -

I worked with incorporating beaten egg whites into a recipe over the Christmas break. I didn't have any luck, but I will be trying this starter idea. I think that's what Udi's bread does to make it so light. That, and a fair amount of baking powder. Thanks for this article! It's inspiring me to keep at it.
