ARCHIVED Grocery Depression Be Gone!
DestinyLeah replied to DestinyLeah's topic in Coping with Celiac Disease
I have had to cut milk, casein, acidic fruits, and fatty foods as well. Especially with the fatty and sugary foods, I get very ill. My Doc says it is from the damage done, and will gradually get better. Until then, I have to be good. Or ninja my meals past my intestines and stomach. Oooohh... IV ice cream! -
ARCHIVED Employer Doesn't Get It
DestinyLeah replied to DesertRatCeliac's topic in Coping with Celiac Disease
Ugh. Bosses can be so much fun, eh? Definitely give them some info on Celiac, since they are misinformed. Also, demonstrate technique for removing foot from mouth, as theirs seem firmly lodged. At any rate, you have a right to be happy and healthy. Find out what is making you feel so blah. Even if you don't have to travel, I hate to think that you... -
Hey y'all, what are the yummy gluten free products I can find at Whole Foods? I'm going to try this whole "shopping" thing again for the first time since my one post- hospital meltdown. Words of encouragement appreciated much! ~Destiny

My GI has decided that I need to go see a dietitian. Normal, right? My GI is from Dallas. They have heard of Celiac there. We live in New Orleans, world capitol of DENIAL (No, really, it's going to hit Florida!) I have called four area dietitians so far, and my trick is to call and ask to speak with the Doc. I then ask what they know about Celiac...

ARCHIVED Allergic Reaction Or Not?
DestinyLeah replied to wowzer's topic in Related Issues & Disorders
I have had a note put in my medical records hat they are NEVER to prescribe Diflucan for me. It turns out that I was malabsorbing it, but at just the right amounts to irritate an already unbalanced system a little more.Every timeI use that med, I get upset stomach and the infection gets worse, even if it is a confirmed yeast issue. I wind up cutting processed... -
ARCHIVED Death By Chocolate?
DestinyLeah replied to DestinyLeah's topic in Coping with Celiac Disease
I have a long list of lovely related problems: 40 ovarian cysts Migranes Seizures Depression Stomach Ulcers Mood swings with hormone fluctuation Severe damage to 3/4 of my small intestine Lactose intolerance Respiratory issues from constant inflammation of inner organs Low Iron, potassium, vitamin K, A, E and B vitamins Low bone density Nerve... -
I had a great lunch out today at Semolina's, where I had rice sticks and sauce and never get glutened. They are very careful with my meals. Then I went to Mountain Chocolate and got a huge peanut butter cup. I think that was the issue. I almost immediately started feeling nauseous and fell asleep when I got home. I at some point woke up, broke up with...

ARCHIVED Handling Bread Dough?
DestinyLeah replied to EVERYBODY'SAUNTIE's topic in Coping with Celiac Disease
I am a baker, and I would rather watch other enjoy my food than eat it myself. Heavy baked goods disagree with me, but baking is my passion. I'm one odd duck. I don't swell, peel, crack, or turn red, but I wear gloves & wash my hands religiously. If you handle dough, wash very well before eating or touching your face or mouth, do not eat in a room... -
Louisiana has a brand made locally called Crystal, and it is gluten free. I called the company, and they said yes, so I still get soy sauce. Kari-out is also gluten free, so when I go out to eat and need soy sauce, I just ask for the little packets, for some reason Kari-out is the only take-out brand I've ever seen anywhere for asian sauces. Hmm. I was...

Another thought- your muscles cannot function correctly without potassium, neither can your brain. It is the 'lube' that makes the signals from nerves transition smoothly. The other thing you would notice in this case is a rapid or odd heartbeat, where beats are either skipped or added where they shouldn't be. Definitely get tested for deficiencies, as...

Open Original Shared Link Open Original Shared Link Research your rights, but I would still get out of there and to a new doc. To bad you do not live in New Orleans! I have a doctor who would hang the moon for y'all if you did. -
ARCHIVED My Husband Spent The Last 24 Hrs. In The Hospital
DestinyLeah replied to T-Bird's topic in Coping with Celiac Disease
Know that you and your husband have rights as a patient. You have the right to know exactly what tests are being run, the results of said tests immediately upon receipt, the right to request certain tests and be taken seriously (If they refuse the tests, ask why and tell them you want a written statement saying that the exact test you requested was refused... -
ARCHIVED Calling All Gluten Free "chefs"
DestinyLeah replied to JennyC's topic in Gluten-Free Recipes & Cooking Tips
From the South, I must send a recipe for pecan pie. Use a food processor (actually, the drip setting on a coffee grinder works best!) to grind pecans until you have 2 cups coarsely ground pecans. Grind another 1/4 cup until very fine. Mix both with 1/4 cup melted butter, then press into a pie plate to use as crust. For the pie: Ingredients 3... -

ARCHIVED Why Doesn't Heat Destroy Gluten?
DestinyLeah replied to little-c's topic in Gluten-Free Recipes & Cooking Tips
The bleach doesn't kill gluten, it causes the sticky parts of it to become much less sticky. This makes it easier to clean, and hrader for the gluten in the water or on the sponge to stick back to the pans. You can actually contaminate a pan by using the same sponge on a safe pan that was used on a contaminated one. Putting safe and unsafe objects together... -
ARCHIVED Gluten Free Poptarts
DestinyLeah replied to justme's topic in Gluten-Free Recipes & Cooking Tips
A recipe I found for a Brown Sugar Frosting: INGREDIENTS: * 1 1/2 cups brown sugar * 2 large egg whites * 6 tablespoons water * dash salt * 2 teaspoons vanilla extract PREPARATION: Put brown sugar, egg whites, water, and salt in top of double boiler. Put double boiler over boiling water. Beat sugar and egg mixture with... -
I just got back from a divine dinner date at Semolina's, where I ate gluten free, without any trouble whatsoever. The Rice Sticks pasta is gluten free, according to the company, and I had the best dinner. You can sub it for the pasta in any other dish, and they will go to any lengths to ensure that you do not get cross contaminated food. The Rice Sticks...

ARCHIVED How Does Oranges Affect You?
DestinyLeah replied to T-Bird's topic in Coping with Celiac Disease
When you are feeling bad enough to drive to the Er, go in. Your husband felt that he needed medical attention, but did not have a good reason to go in and take up a spot in the system. I felt that way when I first went in before my diagnosis. I came back two hours later unconscious- and nearly dead from dehydration, hypokalemia (low potassium), low salt,... -
ARCHIVED Is Brain Fog Due To Iron Deficiency?
DestinyLeah replied to mamabear's topic in Coping with Celiac Disease
Popular explanation from doctors for brain fog as a reaction to gluten is that it is a neurological reaction. Simple as that. The gluten in your system interferes with your body's ability to fire off and translate those little electrical impulses that you otherwise never think about. I have apparently been a Celiac my whole life, and the nerve damage... -
ARCHIVED gluten-free In Hospital
DestinyLeah replied to georgie's topic in Coping with Celiac Disease
When the the hospital I was at was finally able to feed me, but told that I needed a gluten-free diet, I found myself eating scrambled eggs and chicken broth for days until I asked my doctor to talk to the kitchen. From then on, the diet included a variety of foods, but was still very safe. Ask your doctor to talk to the staff about your needs- they will... -
I work in a bakery. My boss has every contact number imaginable, all my medical info for an emergency, and requires me to wear a medical ID tag and a face mask every day, as well as wash my hands and change before eating or leaving the store. Today I accidentally got gluten poisoning from "corn tortillas" that were actually mostly wheat flour. The mistake...

ARCHIVED Does Anyone Have Hypoglycemia Along With Their Celiac?
DestinyLeah replied to Run-4-Jesus's topic in Introduce Yourself / Share Stuff
I was told I was hypoglycemic two years ago. Since I cut wheat, I have not had a sugar crash. The Celiac is turning out easier to deal with than the hypoglycemia was, because you just eliminate gluten. With hypoglycemia, you have to balance sugar in your system. The first few weeks are hard, but try replacing sugary snacks with fruit or soy crisps. they... -
How Long Have U Had Celiac?
DestinyLeah replied to Kara B.'s topic in Introduce Yourself / Share Stuff
I got my official diagnosis this morning. My doctor said that with the damage I have and my medical records, I have had it my whole life, and it nearly killed me. I was really surprised to find so much support on the web, though. It is making it easier to be gluten free, which I have had to be since I was released from the hospital a couple of months... -
ARCHIVED Ive Been Cheating On My Diet..please Help
DestinyLeah replied to Speedy's topic in Introduce Yourself / Share Stuff
The symptoms of when it will get really bad? If you are feeling it, it is bad. Symptoms of Celiac are autoimmune responses, and you are doing more damage to your body every time you take a bite. It is already "really bad", and the doctor can't change our eating habits. You have to commit to eating what is right for you, all the time. Otherwise, the reality...
