So I am new to cooking with gluten free mixes. I have shyed away from anything that needed dough and stuck with the basics. For New Year's Eve I decided that each family member could pick an appetizer and I would make it and that would be our dinner celebration. My oldest son chose pizza dippers. So I bought Whole Foods gluten free pizza crust mix and went...

ARCHIVED New Years Resolutions
gfmolly replied to blueeyedmanda's topic in Introduce Yourself / Share Stuff
First off, thanks for all of your positive atitudes and support this year. My resolution is to run three times a week. I have a decent walking exercise routine, but I need to amp up my cardio. When I was so sick, I couldn't eat, so I didn't gain weight. Now that I am healthier and know what to stay away from, it's much harder to keep the pounds off! ... -

gfmolly replied to Ashley's topic in Gluten-Free Foods, Products, Shopping & Medications
I have reactions to all types of birth control. There is lactose in a good amount of the pills, and that seems to get me everytime. Good luck! Terri -

Do you use a crockpot? That is my saving grace since i work full-time with two young children in the house. In the crockpot I make: chili roast beef with potatoes and carrots Salsa chicken (someone's recipe from this site) Carribean pork (again someone's recipe from here) italian sausage in Trader Joe's marinara sauce pineapple chicken (take... -
Hi gluten-free mom, I am making your salsa chicken recipe for the second time and have to say it is soooo good! It is so easy and tasty. I am dairy free as well, so I used tofutti cream cheese instead of regular and it turns out great served over brown rice. Thanks!! Terri

I have both celiac and endometriosis. I am new to celiac as of April of this year, and the diet has actually helped my endo quite a bit. I was diagnosed with endo when I had a tumor the size of a softball removed from my ovary! The first few months of the diet didn't change my endo symptoms. I decided to go off the pill this past cycle, and any other...

ARCHIVED Sheep Or Goat Milk
gfmolly replied to sickchick's topic in Gluten-Free Recipes & Cooking Tips
I forgot to get back on here and post the name of the goat cheese that I love!! It is from the Mt. Sterling Creamery in Wisconsin. They make a variety of goat cheeses that come in a brick and can be used to replace brick cow's cheese if you can tolerate the goat milk. I can't tolerate dairy in any quantity, and small amounts of goat cheese/ice cream are ok... -
I lost about that much when I first went on the diet as well and it has stayed off. I am at 135 lbs now, (5 foot 3. I could probably stand to lose a little more, but I am so happy to be able to eat without having d, and it seems like my body is making up for lost vitamins/minerals. I seem to be hungry all the time!

ARCHIVED Gluten Free Dairy Free Potluck Ideas
gfmolly replied to gfmolly's topic in Gluten-Free Recipes & Cooking Tips
My potluck is for adults and children. I don;t think I could do au gratin because of the cheese. My favorite types of potluck recipes are the kind with noodles and pasta sauce and cheese! I'm not sure if that's helpful or not. I love tinkyada noodles and I can have goat's cheese. Any other ideas? Terri -

ARCHIVED Symptoms Lead Me To Believe That I May Be Suffering From Something Else Too
gfmolly replied to Bravie's topic in Coping with Celiac Disease
Potatoes are bothersome to me at times, which stinks because I love fries!!! (: As someone else mentioned, it does take some time to heal and you could just be feeling the residual results from your body healing up. I think at four months out I started to have stretches of feeling great. Best wishes, Terri -
Hi Frec, I am a teacher as well, so I know what a half hour lunch is like, when you've got kids in and out on both ends of lunch! I also use the brown rice tortillas, Food For Life are good, and Applegate farms turkey wrapped in it. I also like tuna for lunch. Often I will do leftovers that I can carry around with me and eat easily. I try to eat a piece...

ARCHIVED Celiacs And Leaky Gut Syndrome.
gfmolly replied to keylimepie's topic in Food Intolerance & Leaky Gut
Yes!! That was my first diagnosis before deciding to eliminate gluten from my diet. My gut has been damaged from all of the gluten, to the point that large particles pass through the membranes of my intestines into my body, which is damaging to the immune system. I am currently staying off dairy as well, since I react strongly to that as well. Good luck with... -
ARCHIVED Sheep Or Goat Milk
gfmolly replied to sickchick's topic in Gluten-Free Recipes & Cooking Tips
I am dairy free as well and goat and sheep cheese seem to be easier on my stomach if I eat in small quantities. There are some great goat cheeses out there that are similar to colby jack and other cheeses so you can try to make a pizza. Also pecorino is from sheep's milk. It is more like a romano or parmesan. The cheese is a little tangier, but I have really...
