  1. I finally got around to trying Chebe. I think it was just the plain 'ol Chebe. We added some cheese and made some dinner rolls. OH MY GOODNESS! SO YUMMMMMY!!!!!! I am dreaming now of making lots of little tiny sammiches! It's the only bread I've found that makes a good gluten-free sammich. Toss on a little honey mustard and some turkey and my daughter was...
  2. Stock that girl up with some YUMMMMMMY gluten-free goodies when she gets to your house! One thing that makes my daughter crazy, too, is talking about food so much! I think when she asks to eat the stuff at parties and such, she is really just testing boundaries--which is a normal behavior. She needs to be told "no" and provided an alternativ food to eate...
  3. My daughter regularly had leg and foot pain before diagnosis. Now it only happens when she is glutened. She'll get cramps for about a week from a single glutening.
  4. WOOOHOOO!!! Way to go on those test results! It felt so good to get my daughter into the normal range after just 3 months! Makes me feel good as a mommy and super proud of her for sticking with it and feeling well. It is quite an accomplishment!
  5. Just in the last few months, Kroger has gotten better. Even back in May when my daughter was diagnosed, it was not a very Celiac-friendly brand. It's just been recently they've taken this position, which makes me VERY VERY happy. I think they are seeing potential business lost by not having Celiac-friendly fare and are taking action! I also noticed...
  6. Well, first start by telling your DH that the stomach aches CAN kill your son. Celiac untreated results in stomach cancer (which, the last I heard, makes a LOT of people die) and can trigger other autoimmune diseases. If I were in your position, and my husband was not completely compliant and continued to gluten my child after a diagnosis with a...
  7. My brother-in-law has many learning disabilities, of which ADD is one. He is 27 years old and lives with his mother. His mother recently made the decision to have him take Adderall to help with ADD symptoms. The last several months here I have read SO much about treating such things with a dietary change, such as gluten-free/CF. My opinion is that at...
  8. Not making them anymore??? I'm going to snatch up every box I find! The kids are *lovin* these right now. I finally found the Dora Stars today and bought two boxes. I'll be up that-a-way again on Tuesday so I'm going to buy up the rest!
  9. My son gets it very badly on the backs of his legs. We cover him in Aquaphor (it is by the Eucerine lotion) after each bath and helps us keep on top of it.
  10. We do pot roast quite a bit. Actually, we get a brisket from King Soopers (no strings). I always rinse it off before putting in the Crock Pot. (I recently got a new one but we never had problems after a REALLY good scrub of our old one, I just wanted a bigger one). We usually use Pacific Natural Foods or Wolfgang Puck beef broth (says gluten-free right...
  11. Ooohhh! I'll be near an Albertsons today. I think I'll peek in! Thanks! My sister's hubby works for Walmart and she goes regularly so she's going to look for them each time she goes. At $2 a box insteaad of $3.75 for Envirokidz that makes me pretty happy. Other than Envirokidz has the organic factor, the Doras and the Einsteins are about comprable nutritionally...
  12. I'm trying the stuffing cubes in my trial-run tomorrow. They look really, really tasty! My daughter wanted some for croutons in her salad. I'm SO excited to make stuffing.
  13. You can consider it a positive diagnosis with the blood tests so your doctor is not entirely wrong. However, there are reasons why the biopsy could be helpful as well--such as to assess the damage, etc. Plus, it is nice to have that "gold standard" diagnosis. I'm definitely happy we did it for my daughter, but it definitely isn't something that is for everyone...
  14. We have a Beta fish and the first ingredient is also wheat. Same with the Gerbil food. I think it is ridiculous, but thankfully my daughter has been aware of that and always washes her hands. No glutenings from the pets, or we will have to give them away. I haven't found any gluten-free fish or gerbil food.
  15. My daughter presented with very mild symptoms--nothing you'd associate with a Dr. idea of "typical Celiac." She wasn't wasting away or super-skinny or vomiting or severe diarreah. In fact, I had never even heard of Celiac before she was diagnosed. She had acid reflux symptoms, seemingly after eating EVERYTHING. Especially since I was giving her Malt O...
  16. I have noticed, especially with General Mills products (of which Nature Valley is one) if it is a newer product or not available everywhere, it isn't always on the Web site. I ran into the same thing with the Dora the Explorer Cinnamon Stars cereal. It isn't on the Web site. I checked the Nature Valley site yesterday and didn't find it either. But, if you...
  17. We have a Sam's very close (and a Costco, too). We tried the membership thing once and we never could leave there without spending $500 I'd love to be able to buy a whole bunch of meat and freeze and not have to buy so much each week at the store.
  18. Speaking as the mom of a Celiac, I wouldn't let my daughter go all gung-ho back on gluten, but as protection from CC reactions, most definitely. I'm in that "wait 10 years bunch" as well, and by that time she'll be 18 and can make her own choice. Of course, I'd like to see her stay off gluten and only use it for the CC times.
  19. Yes! Good find! My daughter is about sick of the Envirokidz bars and she always LOVED PB granola bars!! Now just gotta find someone with a Sam's membership...
  20. We have also had great success at Noodles. We usually do the Arvada location but we have also done the location in Boulder and the Applewood one. We eat there several times per month and have even had teenaged-order takers successfully help us get it right. I had emailed Chipotle with my concerns that there was difficulty simply asking for a change of...
  21. My experience at Chipotle was almost identical to yours. I'm in Colorado, also, coincidentally. We tried eating at the Wadsworth Bypass location. The non-English speaking staff was our biggest obstacle, plus we couldn't get her to NOT put the corn tortilla on the shared corn/flour tortilla press. Plus, getting them to change gloves, eeegaaaahhhds. ...
  22. My step-MIL has it.
  23. We buy walnuts all the time. My daughter loves them in her salad at lunch. We just buy a bag of them in the produce section of our grocery store, King Soopers/Kroger and have never had any trouble. Just walnuts.
  24. We do this quite often. I usually make a large batch on the weekends. I put them in a large Ziploc bag with a piece of wax paper between each pancake to prevent sticking. When we reheat int he microwave, I put a paper towel around it to absorb any excess moisture. Works very well.
