  2. I make a "hot pocket" type calzone using a biscuit dough. Smoosh it between two sheets of plastic wrap to about 1/8-1/4" thick, spread a little pizza sauce over half of the circle (stay back from the edges a bit, though), then add the pizza toppings. Fold over and crimp shut. Bake the same as a biscuit, I believe. Maybe a few minutes longer.
  3. I just made our Easter chocolates with the Enjoy Life chips. They turned out pretty good! I used molds to make pb cups and truffles, and then used large silicon molds to make large, hollow eggs that I put a little trinket into. Besides that, I'm doing Peeps and Starburst Jellybeans.
  4. I've been concerned about my calcium levels, too, since I've gone DF. I'm making a conscious effort to get enough every day. Best sources I've found are: hemp milk (something like 46% of the RDA for calcium in 8oz), fortified orange juice, and Citrical w/vit D.

  6. Just wanted to chime in that I have the same symptom of sloshing (definitely sloshing, but I get the gurgling too). It's pretty much gone away since I went off gluten (and dairy & soy). You've gotten a lot of good advice so far. Don't hesitate to come back and ask tons of questions - this is a great place to learn and get wonderful help.

  8. Yeah, well, unfortunately we're casein intolerant as well, so that knocks out most of the gluten-free choices. :-( Dh is the only one in the family who eats "normally" any more. The kids do, fortunately, like salad, so that's one choice.

  18. I made the Bette Hagman's french bread last week & it turned out quite good. AND, I baked it on a cookie sheet (my trick was that I "piped" it onto the sheet through a hole cut in the corner of a plastic bag). After that it remained shaped just fine (it wasn't quite as soft a dough as some of the gluten-free breads, though).

I just toss together whatever I have on hand - most often a mix of nuts (peanuts, cashews, pecans, almonds, sometimes walnuts or pistachios), dried fruits (usually just raisins, but sometimes cranberries, apricots, prunes, dates), sunflower seeds and pumpkin seeds (pepitas), occasionally some chocolate chips too.

  22. Huh. I never made a ganache before, but when I read your post I thought the filling to a cookie I made would probably be good. I looked up what a ganache is, and lo & behold, that's pretty much what my filling was. The site I checked for ganache said the basic recipe is 1 part cream to 2 parts chocolate, so you may have to tweak it a bit if no one else...
  23. I just switched to Friskies Signature Blend. It doesn't appear to have gluten in it. I'm sure it's not the best food out there, but it's better than what we were using & the price is still reasonable.
  24. Sorry I didn't get the rest of them typed up - ran out of time & packing/leaving today. I would think you could sub any flour mix. Some I used the 4 bean flour mix, others I used a rice flour mix...but I've only made each recipe once, so haven't had time to experiment. Hope you have good luck with them!
