Did you read the books by Harvey Diamond, Fit for life. I tried to include a link but it wasn't working I read his books years ago and followed them for about 3 years. Chocolate can be melted with other liquids BUT it has to be VERY low slow heat and not direct heat. How are you melting it? A double boiler works best. I have learned is heat the water to a simmer then turn it off, you can leave the pan on the burner though, place the chocolate and what ever else in a bowl (metal works well) and let it sit, stirring often... -

I was going to say long slow cook too. You can soak them for an hour before you cook them to let the grain soak up some of the water. If you soak oats they release some of what ever it is that makes them gooey but I don't know the explanation behind it. -

I use the McCanns also, ground my own in the vitamix. I am not worried about oats, there have been enough studies to show them to be ok. I wouldn't go and eat a pkg of instant - the add hot water too type, I think that would be taking a chance. But as for oats I will keep eating them with no worries. I used to have those mouth sores. My entire childhood and teen years oh heck just keep going through the ages... Those sores were so painful and never went fully away. Makes my mouth hurt just to think of them. I read recently those sores are a pointer to Celiac, too bad the medical and dental community don't know that. -
I cannot agree with you all the way. Yes I do agree we have to educate ourselves and the internet helps us greatly. BUT put the big D in and you will not get Celiac for an answer right off the bat. I would like to say that it isn't just us with Celiac that get the shaft from the medical community. My son had pyloric stenosis and was in the process of looking like a starving child. He was skin and bones with a distended tummy. Ya there wasn't anything wrong with him was what I was told over and over. Oh and one ER nurse told me she wasn't go to waste...

We had gluten-free cornbread stuffing. It was ok. The taste was new to me and will take getting used to. To the leftovers we added 2 eggs and 1/4 cup cream, stirred in well. Fried in some olive oil and yum yum. I liked it better this way! -
