ARCHIVED Easy To Make Foods And Easy To Eat Foods
bakingbarb posted a topic in Gluten-Free Recipes & Cooking Tips
It seems when we all start here we are scratching our heads going what can we eat? So I thought a thread on what's easy to make would be helpful. I have only been doing this gluten-free for a month now and still run low on some days so all ideas would be great. Here is what is easy for me and I like to eat plus it keeps me worry free Scrambled eggs... -

ARCHIVED Thanksgiving Disasters
bakingbarb replied to Tephie's topic in Gluten-Free Recipes & Cooking Tips
I made cornbread stuffing also but didn't let the cornbread dry out enough so it was too soft. There is a gumminess/moistness that comes from the bread not being dry enough to start. I liked everything else though. I didn't even try to make rolls this year, I wanted to relax and not try something else new this time. -
ARCHIVED Thanksgiving Disasters

Rhonda is there another thickner you could use in place of the gluten-free flour? Personally I think it is a bad choice in this type of filling. Cornstarch, arrowroot, tapioca starch would all be better choices. -
ARCHIVED Stand Up Mixer?
bakingbarb replied to EdgarVerona's topic in Gluten-Free Recipes & Cooking Tips
Alex I am wondering how you fared today? I would say to you that anyone of those mixers would be fine. I wouldn't worry about how heavy the gluten-free batters are though. My thoughts are all of these are excellent mixers. I had my first one (medium size for 14 years) and bought my second one last year (the larger one). The only reason I went up a size... -

ARCHIVED Breastfeeding And Alcohol
bakingbarb replied to Guhlia's topic in Introduce Yourself / Share Stuff
I'm so glad I read this thread. We have a friend whose Grandson is going through some terrible food allergies and the Drs want to put him on all kinds of drugs. He is just turned 1! I saw the Neocate and am going to pass that on to her. I won' t get into the rest of it here but it relates to me saying STUPID DR Oh and when I go out and drink I also... -

ARCHIVED Seriously, How Long Is This Going To Take?
bakingbarb replied to LoriG's topic in Coping with Celiac Disease
I am in the same boat. I feel better in all ways except fatigue. When I walk up my stairs I have to sit down. UGH It does make me sad and angry at the same time. I used to think I was wonder woman. We have a family, I garden, I bake, I do all the cooking and most of the cleaning and I worked. Now I am preparing to go back to school for a year or so. I... -
I have insurance now and made an apt with a new Dr. I went to one last year and was tested for all kinds of things, none of which applied. I am not sure what to ask of this Dr. I am fatigued beyond what I have ever felt in my entire life and assume there will be blood work. Do I tell this Dr I did the elimination diet? Do I bring up the Celiac at...

ARCHIVED Apple Butter Pie
bakingbarb replied to Guhlia's topic in Gluten-Free Recipes & Cooking Tips
It is apples cooked until they are thicker then applesauce. The true way to make it is to cook whole apples in a pot with a tiny bit of water then to run them through a mill, return to the pot and cook on very low or in a slow cooker until very thick. Stir often. BUT you have to add a few things to get the brown color and the right taste you have to add vinegar... -
ARCHIVED Coconut Flour A Godsend
bakingbarb replied to draeko's topic in Gluten-Free Recipes & Cooking Tips
I also ground mine in my vitamix and thought it was a bit coarse. I am assuming that the coconut flour shouldn't be coarse? Have you ground other things with it? I should say for flours, I did brown rice but not sure if it is fine enough. I just bought a bag of brown rice flour to compare. -
ARCHIVED Legs And Feet Hurt So Bad
bakingbarb replied to LoriC's topic in Related Issues & Disorders
I too have this bad muscle fatigue. We have stairs, my bedroom and the laundry are in the basement! We also have puppies right now so up and down, up and down etc. The muscle fatigue drives me nuts, my family just looks at me. Last night I just sat down, I was so done. I used to think I was wonder woman and could do it all, mentally I still like to think... -
My teeth have spots on them, discoloration, soft spots, cavaties, yellowing, uhm what else is there? Oh and I always had sores in my mouth which I just read is related (dn't know where I read it tho). ARCHIVED I Feel Like I Am Starving
bakingbarb posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Is this going to go away as my body adjusts to this new lifestyle? It has been this way for years and I read that it is pretty normal when you are eating gluten. What I want to know is once I stopped how long is this going to last? I get woken up in the middle of the night (abandoned puppy) and I am starving then. When I get up in the morning I am starving... -
I followed your advice and used a regular recipe and made it gluten free. Brownies that are to die for. AHHHHHHHHHHHHHHHH yummy

ARCHIVED Help! Desperately Seeking Advice And Support!
bakingbarb replied to tgrand's topic in Coping with Celiac Disease
I don't think you sound negative, I think you sound REAL. Some people just don't get the Celiac thing and then some people are mean. If you think she is messing with you, go with your instinct because maybe she is. People don't want to believe that others can be that mean but they can be. People that are mean like that also try to make it your fault somehow... -
ARCHIVED Which gluten-free Flour Is Closest To Regular Flour
bakingbarb replied to maze4's topic in Gluten-Free Recipes & Cooking Tips
I too am fairly new and a baker at heart (bakingbarb!) so this does take some getting used to. THere is a thread on baking tips, read that. Lots of people give really good advice. The thing I have learned the best is use your cookie recipes but sub the gluten-free flour and add the xanthan gum BUT most importantly freeze the cookie dough it works the best... -
ARCHIVED I Think My Doctor May Possibly Be An Idiot
bakingbarb replied to LisaN's topic in Coping with Celiac Disease
As far as shampoo and such you only have to change it if you know it bothers you. Mine doesn't but some people react. Face lotion I react to though. If you have good pots and pans they need to be cleaned, normal pans don't hold food in pockets - at least mine don't and I have never had pans that would. Non stick is a bit iffy in my mind. Most people will... -
