  1. This whole topic is disturbing to me because it is always well maybe. I am a person that requires facts. The website that hosts this forum has quite a bit of info about oats. I for one will continue to eat them and I will be using my own oat flour in baked goods because I don't eat the whole batch so I can eat a piece of bread with oat flour in it or cake...
  2. Altitude can make a difference for sure (so can attitude but prolly not to the cakes ) I can't remember what the fix is (Longest day of my life in a long time) right now but I can look it up for you. I have some excellent baking books, I will look in the am to see if they have any extra helps for this.
  3. Yes I just got that cookbook. I saw the recipes and am glad to know the bread recipes are worth making. I have heard pros and cons about the bean flours, I am sure it adds bulk but a bean is a bean I would think!
  4. That's how I feel about the bread I made yesterday! Open Original Shared Link The Mona mix is what I used for a couple of reasons, one I had it (a gift basket from a friend) and secondly I figured it was best the first time to use a mix so I know how the stuff is supposed to respond. On her site she raves about this bread. And my other half devoured...
  5. I have a vita mix 5000 and it came with a grinding container. Friday I tried brown rice and it turned out ok but I am going to sift it to make sure there are no large parts left over. I think it will work fine for the most part. I was planning on making as many of my own gluten-free flours but saw that about the quinoa also. I was going to do some more...
  6. Debbie, I am a bread baker by heart. So I can tell you straight up do not try to combine a recipe or come up with your own. The gluten-free thing is so different that you cannot use your wheat bread recipes. I have only been gluten free for a couple of weeks now and yesterday made my first batch of gluten-free bread. It responds totally different. There...
  7. This oat thing is very confusing. I read it was cross-pollination and nothing else. I am making apple crisp today and I will be using a small amount of oats. Our family is large and I have always fed them apple crisp but the flour will be gluten-free. Although I will be adding oats just a much smaller amount then I normally would use. I am going to try...
  8. What is really hard is we always got along so well. But her Dad is very manipulative and how he words things..."I'm glad you love your mom even with all her faults, lord knows we all have them". He cuts me down to her in a round about way. I don't deal with it, I thought it best to leave it alone and not address these things. I don't talk about him because...
  9. Do I even have to say more then I have one? Do you have one? Have you hit the point where you just want to send her back a year or three? Somtime this summer she decided I am the worst person. Everything was good until then. I try to talk with her and the smart ass that took her place is the only one that answers me. This will go away or get better...
  10. This is from my 15 yr old daughter I don't know where she got it from.... O-S-C-A-R M-A-Y-E-R has a way of f'n with my D-N-A
  11. I just wanted to say that your symptoms and mine are very much alike. I went to the Dr and had every test but the one to find this. After a lot of research I tried the elmination diet and it was an amazing difference how I feel. (need insurance for the dr and right now I don't have that but soon) I think this is my second week. All the questions you...
  12. Please give sorbets and smoothies a try. I have not been able to tolerate dairy but yogurt in small amounts is fine. I bought a vitamix a few years back and it is the best thing for this. Use frozen fruit, or fresh fruit and ice cubes along with some juice, orange or cranberry is good. I add a small amount of plain yogurt for creaminess especially when...
  13. LOL His Dad says the same thing. Dad has tried but has given up. He isn't a bad kid in the way you think of a bad kid, he just seems to have no idea his impact on anyone else. Just thinking about it makes me again. Ya his Dad was in the navy and keeps trying to get him to go. If he fails at this job he has been given I think he will get the boot....
  14. I've been meaning to ask, where is the most affordable place to buy all of the flours at? There are so many different mixes and types out there and at the store they are kinda spendy. A small bag at Fred Meyer, Safeway, etc is $4.00. One small bag won't go far with person that likes to bake. Are there mail order places that are less $$$. Is it cheaper...

    ARCHIVED Dr Seattle/everett Area

Ok I live in the Seattle area, actually closer to Everett then Seattle. How do I find a Dr., is there a resource? Also I don't understand all of the ramifications of Celiac yet so what all is the Dr going to be looking for?
  16. I have to ask, why is the endoscopy important?
  17. I don't know exactly what you are going through because I am not a professional in any field but I did work for 1 1/2 years at the same place going through similar treatment. Supervisor from hell, ya that would be me. It was so bad that when I quit I was awarded unemployment because of the mental anguish suffered at her hands. I was able to take the summer...
  18. Over the weekend I got contaminated and was just starting to feel better. Tonight we had a family birthday dinner out and I am sure I got it again. I am so bloated and out of breath. Tomorrow will be spent in bed. I can't see me climbing my stairs to get to the main part of the house, I will be so fatigued by then. I went up about a half hour ago and my...
  19. I don't really need advice, I just need to vent. It will be fine the next day but for today..... For now I am a stay at home Mom but will be going back to school then back to work. Ha, Mom! There is a 23 yrd old son, an 18 yr old step son and my 15 yr old daughter who tries to make it clear she doesn't need me half the time! So really I feel like...
  20. From my experience with baking from before, the fruit purees are a great way to add moisture. There was a book, Have your Cake and eat it too. It was about lowering fat in baked goods while retaining moisture. I am sure her methods would work for us. Also corn syrup or liquid invert sugar (Open Original Shared Linkit can be bought or make your own (I...
  21. I'm in Lynnwood, the north end pretty close to Everett and Mukilteo.
  22. Yesterday I baked some caramel apple bars with gluten-free flour mix. The recipe calls for ground nuts so it is kind of a sandy bar cookie anways so the crumbly was normal!!!! They turned out great, guests had no idea they were gluten-free. She took the recipe to use for a coffee stand she manages (she won't be using gluten-free flour tho). My daughter...

    ARCHIVED Poll

This is so new to me that eating out is scary. BUT my daughter and I used to go out to eat for some us time so out we went. That was 2 days ago and yesterday I paid for it. Lettuce, tomato and chicken breast. I explained and they were fine with trying but forgot and put packages of crackers on my plate It was amusing to say the least. I mean here they run...
  24. I looked at your recipes and am wanting to try some asap. Thank you so much for the link, I am looking forward to trying something soon. One thing I have got to get a recipe for is waffles so I will be looking for that. May I post the brownie recipe here Open Original Shared Link? I have been on that forum for years and even though my baking will now...
  25. Thank you for your encouragment. I think that first off I will try a mix for a baked yummy that somehow includes chocolate! Thankfully my favorite chocolate for baking is gluten-free. I guess I need to stop thinking in negatives and learn how to bake all over again. They didnt' teach this in any culinary classes I took! Makes sense about the vinegar...
