  1. Yes, it's been whipped up, but it was made with a unflavored gelatin (like in Jello) I think it had sugar, vanilla, and a pinch of salt also....then it was chilled to get set like Jello....then it was whipped....I have not made the recipe...I saw it on TV on a 7th Day Adventist program....if you are interested in the recipe, it may be on the 7th Day Adventist...
  2. There is one place I have heard of....Gluten Free Oats, 578 Lane 9, Powell, Wy...82435...tele # 307-754-2058.... there is also Bobs Red Mill that has Gluten free oats.....I have used Bobs Red mill...with no problems....been thinking of ordering some from the Powell, Wyoming place...but haven't yet.....
  3. I make salmon patties....mix a can of drained salmon with cooked potatoes...any kind, like baked and chopped or mashed, any kind as long as they are not very wet.....use about 1/2 the amount of potatoes as the salmon...if you have about 1 C salmon mix in 1/2 C potatoes...add a little chopped fine onion (if you like) or even some onion powder....and a egg...
  4. I don't have a exact recipe, but in place of breadcrumbs, etc...I sub cooked potatoes...about 1 C to 1# meat..I've used baked chopped up, mashed, etc.......I use ground turkey.....just a regular recipe with 1 egg is what I use....
  5. If you want to find recipes that use sorghum flour just check out..... twinvalleymills.com .....there is quite a few on that site....
  6. I got a Nutramill from Pleasant Hill a couple years ago...It takes a long time to grind rice flour if you want it to be a finer flour...probably 1 hr for 2#.....so I set it to grind courser and use it that way....it works OK for baking...but I would like a better grain mill....and I don't know what grain mill may be better....at the time the Nutramill sounded...
  7. Rice Guy.....where do you get your Buckwheat?....I would like to find a source.....
  8. Thank you everyone....I got some really good ideas to try!!...sorry I didn't mention earlier that I can't eat soy either
  9. I can't use dairy...and what I've been doing is just use water for milk...for buttermilk I've tried using water and adding about 1 Tab. of vinegar....for butter I've been using olive oil in a lesser amount, I'm also trying lard.....If you can't use dairy...what do you use...I'd like a better sub....any ideas?...
  10. I have had the same problem...couldn't find rings to make the gluten-free english muffins, etc...so I looked at canned goods, like tuna cans...but they had a bottom that couldn't be cut off...I found some small cans, about the size of tuna that was canned pineapple (about 55 cents each can)....so I got enough of the pineapple cans to have enough for my muffin...
  11. Check out the recipes on this site..... corckpot365.blogspot.com .... they are not gluten-free but you can sure get allot of ideas and recipes from a site with 365 recipes....
  12. I have a Nutrimill and it does a good enough job grinding brown rice flour...I have long grain rice and it does take forever to grind 2#..from 45 min to 1 hr...It will grind fairly coarse rice grits, I'd like it a bit coarser, but it is OK....Like you, I can't eat gluten and corn either....When I was looking for a mill the Nutrimill was about the most promising...
  13. When I make meatloaf I put in a little chopped onion, thyme, garlic powder, and some cooked potatoes....I have used mashed, chopped, or grated potatoes...and a egg or maybe some sweet rice flour for sticking it together....
  14. The pick and choose ones I would use.....brown rice flour, sorghum flour, potato starch, tapioca fl/starch, sweet rice flour.....
  15. I have a Nutramill...and I grind my brown rice flour...and it does take a while...longer than I've heard others say other grains take....I got my mill from pleasanthillgrain.com...they are in Aurora, Ne...I have used this one for 6 or 8 months...the first one I got from them did not work good...so they readily exchanged it for me...this one has worked well...
  16. Maybe your yeast is not good....Every once in a while I proof my yeast to check it out....I put 1 tsp dry yeast in a glass of warm water with a little sugar and let it set a while, like maybe 10 min...if it gets foamy on top the yeast is good...if it doesn't you need new yeast....I don't know anything about the elevation issue...
  17. You could check out the recipes on the site for sorghum flour.... twinvalleymills.com....
  18. I got some sweet potato flour at a Asian store....it was a bit pricey... I won't continue to buy it....there is too many other choices....I just use potato starch and tapioca flour, and it is at the Asian store too....
  19. MNBeth....I took the first mill back to the dealer...as I don't live too far from Aurora....took a bag of rice along...they ground it there....they was a bit surprised when it took that long...but didn't say that something was wrong with it.....the flour is pretty fine....maybe that's why it takes that long....??
  20. I would like to find a place to buy cleaned buckwheat or other gluten-free grains..grain that is ready to be ground into flour...Where do you get your grains? I hope to find a source some where near my locality....hopefully it will be less shipping expense....
  21. I have a Nutramill...had it for most of a year....so far I just use it for brown rice flour...I like it...perhaps it does not grind as fine as the flours you buy, but the baked foods are just fine to me....it takes quite a while to grind a 2# bag of rice...over 1/2 hour...but then I try to set it on the fine grind, so that may explain the length of time....
