  1. I'm interested to know what other symptoms people have from corn. My daughter (8) and I have both been Gluten-free Casein-free for 3 months now, and i'm starting to think we still have some sensitivities like corn. I noticed today after having two corn tortillas with lunch that my stomach just felt tight all day. And last week after my daughter had popcorn...
  2. Often floating poop means there's a lot of fat in the poop, which signifies malabsorption. This can happen with intestinal damage. If your daughter's intestines were damaged to the point of causing malabsorption (which it must have been since you said she wasn't growing properly), then it will take quite some time for the intestines to heal, a few weeks...

I don't have experience with little ones with gluten sensitivity, but from what I understand you should notice improvement fairly quickly with younger kids, like within a couple weeks up to a month. It's usually recommended to go off dairy as well. The gluten proteins and dairy protein casein, as well as the soy protein, are all very similar in structure...
  4. I hope Whole Foods carries it! When you added pumpkin, did you change ratios of anything else? I wouldn't say i'm brave, I signed up before we knew we were gluten and casein sensitive!   5. Unfortunately this mix also uses milk which we can't have...but there are other Gluten-free Casein-free pancake mixes that are decent i'm sure..the only one i've had so far is Bob's REd mill and they were ok. Liz

  7. I'm sold...this is what I'm going to do, the muffins and some yummy fruit. I would love someday to be able to make real stuff from scratch, but with my life right now, quick and easy is necessary! Thanks for everyone's tips, I really appreciate it! Liz

Thanks for the idea, but I kinda want to do something that is good so the other kids know gluten-free can be tasty....and I honestly have not found one gluten-free cereal that I like yet...they all taste like extremely processed high glycemic fluff. But it's something to have in my mind as back up if I can't come up with anything! Liz

My daughter's 3rd grade class has breakfast while they read the Time's Kids news magazine every Friday, so usually every week I have to make my daughter something to bring in for her to eat Gluten-free Casein-free. WEll, I had signed up to make it for this coming Friday for the class and I don't know what to make! I'm not a cook, not a baker, single mom...

Hi Geoff, I posted your lab results on a adrenal/thyroid forum (don't worry, just the numbers no other info) and here are the two answers I got: "Well, his B-12, Ferritin, FT4, and FT3 are all low. B-12 should optimally be close to 1000, Ferritin (iron) should be at least 40-70. And the Free T4 and T3 are both low, so he needs more thyroid....

As far as the baking goes...i'm just not there yet, lol. Cooking regular dinners and making lunches is about the max I can handle. I do on occasion bake things like brownies, today we made gluten-free sugar cookies...

  15. I've already told her milk chocolate is on its way out. We're going to try one month of following the diet very strictly and then i'm going to reward her somehow. I'm so frustrated because she's doing really well with no gluten and casein, but then she'll get some somehow out of my control and then the behaviors start and I'm never sure what started it....
  16. Hi, I was wondering if anyone else here notices primarily behavioral symptoms with their kids and gluten versus physical? My 8 yr. old daughter has been having so many behavioral and emotional issues the past 6 months especially. She was starting to act like she had conduct disorder...that's what prompted the enterolab testing as well as eliminating food...

I think because my reactions are more autoimmune and I don't have the malabsorption so perhaps less intestinal damage...my reactions to accidental gluten are not easily noticed by me...in a way I wish i'd have a stronger reaction to help keep me diligent. I'm very strict, but probably less...
  19. sorry I couldn't get around to doing the research! hope your doc is up on the latest with these labs...just remember to ask for free T3 and freeT4 if you didn't get those yet. Low iron also is often associated with hypothyroid, and celiac of course, so you should check TIBC (total iron binding capacity) and ferritin. hope it goes well! Liz

  21. My daughter's lunches (she's 8) are gluten and casein free, plus the school doen'st allow peanuts. Usually a couple times a week I send in some hummus with veggies to dip and a corn tortilla (but she usually doens't eat the tortilla), and some fruit. Other days she takes in leftovers from dinner that she can heat up like chili, spaghetti, stir-fry with rice...

I especially remember yummy tea when I'd have it in England at relatives' houses in the real teacups...somehow it tasted better!   23. Good to hear everything went ok It is a big change and I can understand not wanting to tackle it all at once with dairy. But for me cutting both out at the same time helped me to not get dependent on all the dairy stuff. I think many celiacs eat lots of dairy because it fills the gap--but then they don't heal because their body hates the casein too...
  24. I've been also having alot of hair loss, and have low ferritin...but I also have adrenal fatigue and hypothyroid which is a major cause of hair loss so might be something to check into. Liz
  25. I should add that I have recently been diagnosed with adrenal fatigue and hypothyroid--so i'm assuming that that is how the gluten manifested itself for me. Thing is, none of those symptoms have improved since going gluten-free either, but I am starting hypo meds and have been taking hydrocortisone for adrenal fatigue for past 5 months which has helped incredibly...
