That's great that she's taking ownership of what she can and can't eat I know you just started the diet so you're in transition...but if you really want to go gluten free she can't have school lunches at all. Wheat is in so many ingredients, sauces etc, that there is no way to avoid it even if she sticks to meat and veggies...and the cross contamination...

  13. No problem. I just learned in my maternal nutrition class that human milk is the opposite of cow's milk in that the majority of our milk is whey, with small amounts of casein. So it makes sense that our digestive systems would not handle it cow's milk very well--it simply wasn't designed for humans to consume! take care Liz

So i'm wondering if the allergist is just confused because they're not used to seeing casein sensitivity. If you still have symptoms, i'd recommend cutting out all dairy and soy as they often cause problems for celiacs (the proteins are stucturally very similar so the body thinks they are the gliadin invader). You can try it for 3 weeks and then do a challenge by adding in some soy and waiting a few days to see how you react, then try dairy etc. I was vegan...
