  1. You have a wise doctor. If you go gluten free and your antibodies drop, then you have your answer before your intestinal villi got really flattened and you suffered even more bad effects from the auto immune reaction. Anxiety is a sign of celiac, so after you have been on a gluten free diet for a while, you should feel more comfortable with eating in general...
  2. Oh, believe me, we get this. It's only been a week, and it takes time for your immune system to quit attacking your own body, including your brain, over this. You may want to try to stick to eating as much unprocessed food as possible, in other words, food that looks like how it was harvested, instead of coming out of a box. Make sure anyone kissing you...
  3. I think I would want to soak them first because of the way they expand.... I would not want that going on in my stomach! It doesn't take long. I don't know if I can attribute any specific benefit to them, but they are supposed to be good in terms of nutrition content. They have fiber, and Omega 3 EFAs, and magnesium. Anytime I find something I can eat...
  4. I use chia seeds soaked in room temperature (tap) water to make a "gel" to replace gums in gluten free flours. Or I just toss a spoonful into the gluten free flour and water, and let it soak a bit. This would also work for egg sensitive people, who wanted to experiment. Some people make chia seed "puddings" out of this soaked chia goo, or make chia seed...
  5. Yes, it is possible to have negative blood tests and confirmation by other means that one is celiac, or at least severely gluten intolerant. Two examples I can think of, besides the positive biopsy of the small intestine, are a positive skin biopsy for DH rash, or a scan in another part of the body showing brain lesions, aka "bright spots." But, you also...
  6. You don't actually need much "new" stuff at first, depending on what sort of cookware you have, already. I already had and used mostly the old fashioned stainless steel pots/pans, so they were okay. It is the porous stuff you have to worry about. For example, we had an ancient toaster oven with a metal wire rack, until I replaced it, that rack got scrubbed...
  7. Oh, so you have acid reflux, too, besides the bloating ? The family will come around, at least the immediate family, if you insist they respect your choices, the older generation tends to be nearly impossible, because they really tend to be set in their ways and they'd rather keep eating the same old thing and complaining about their indigestion ...
  8. That is brilliant, mommida ! Honestly, if your doctor(s) are refusing to refer to specialists like pediatric gastro docs for attempted diagnosis, your insurance is the problem bottleneck, as it's selecting doctors in their plans that are less likely to do this. Try complaining to your state's health insurance regulatory authority. File a complaint. ...
  9. Look at the bright side. You will put him on a gluten free diet, and after a short adjustment period figuring out the details, your son will have a "normal" life, other than he won't be eating gluten. You will have stopped the auto immune reaction going on inside of him early, before there was a lot of damage. He should gain weight and height, his speech...
  10. Re: feeling like you can't get a deep breath - that's the southeast heat/humidity, combined with whatever is ailing you. People who have not tried to athletically train hard in that environment haven't a clue how difficult it is, how careful one has to be, and they don't understand how those of us out here in the semi- arid west, where the normal high temperature...
  11. I strongly suggest not, unless one likes playing reaction roulette !
  12. Sort of the classic was it the chicken, or the egg question....... I was just reading a bunch of stuff from our dear friends the Wheat Lobbyists, and they have this alternative nutrition narrative that is insisting that normal humans should eat whole grains, and lots of them, to lose weight, complete with studies showing that whole grain eaters are...
  13. Oh, wow. The things we find out from our parents/grandparents when they get really old. This is completely anecdotal, but folk wisdom has it that smoking tobacco will suppress celiac symptoms, and you said you quit not that long ago. May explain the flare up, but the only healers that will take you seriously on this are Indigenous, so perhaps just...
  14. Isn't there some sort of nifty little chip holder cook thing that one puts in the microwave, and ends up with chips ? You should search "microwave potato chip maker" then see if you already have something you could fake this with, I think you just slice the potato thinly and lay it out on a friendly, non stick surface and zap it a lot.
  15. You're not clutching at straws. They kept telling me I "probably" had MS, in addition to all this other stuff, for about 20 years, went through all that testing, and I didn't have MS, just the symptoms of MS. The last time it flared up badly, they wanted to repeat the puncture for spinal fluid test, I absolutely refused and said no way. They did my brain...
  16. Is this where I am supposed to suggest baked sweet potato homefries for supper ? I don't want contribute to a possible migraine ! I ate through several bags of corn chips last Nov/Dec after years of abstaining, and thought I had a keeper, until the rash showed up. And it became inflamed right along a critical underwear line. And it was so bad I almost...
  17. This is wonderful that you can find your special holiday foods, the last time I was in the Whole Foods I noticed the Passover display had the gluten free items with the regular Kosher ones. Sort of like finding out that Peeps are gluten free.... yay! only more serious.
  18. I was wondering where the latest propaganda with the Wheat Council/GMO plant breeders talking points was going to show up this week, now we know. This Daily Mail anti - gluten free food article, which is horrid, is based on another truly wretched piece in "Jezebel" by professional neophyte writer "Elissa Strauss, who suffers from celiac disease." biography...
  19. Sigh. Not if it is the USDA "rules" they claim to be using. "Loophole." Barley not on the official allergens list. So nobody has to list this if it is a barley derived natural flavoring. Barley's got gluten. Sorry. Claiming barley is scarce when this nation brews so much beer from it... not really. Can't wait until we get stuck with the new rules...
  20. Agree with Peter. Try visiting the office at a time when they are less busy, and sweet talking them into getting a copy of your test results. In the USA, they have to provide you this. I did this once when a doc was pulling the "wait 6 weeks for the next appointment" routine and then cancelled the appointment on me without notice, so I was there anyway...
  21. Watch out, not all organic type items are more or less likely to be gluten free or not, it is the ingredients and the labeling that you have to worry about. Baking soda and water makes a perfectly fine toothpaste substitute, while you are doing the Great Product Search. (the milk... have you tried coconut milk yet ?)
  22. Of course, the entire thing is diet related. Are you taking a gluten free vitamin B complex, and a gluten free calcium (citrate is good) magnesium, and D mineral complex ? Your unresolved symptoms really are screaming that you were getting cross contaminated before you fell "off the wagon," that and eating gluten = malnutrition and cravings, and...
  23. Hmmm. Maybe hang out in wine bars or go to wine tastings ?
  24. Yes, this is a very little known loophole from USDA that the food manufacturers love to exploit, when they think it is in their favor. I looked at the ingredients lists for several of the Atkins frozen meals, and they had the word "flavorings," such as "modified starch product, ingredients dah, dah, dah, etc, flavorings." listed as a separate ingredient...
