I am not rice intolerant but have been using a 3 way mixture of amaranth, sorghum, and millet flour in a lot of baking experiments, and getting nice results, especially if mixed with some almond meal and another "white" starch such as cornstarch or potato or tapioca. Agree with ditching the soy substitutes and trying to go to lactose free dairy like hard aged cheeses and gluten-free safe yogurt. For the nuts, try ditching cashews. For the bread, try getting the hang of a quick bread recipe made without yeast, with a baking soda and apple cider vinegar leavening instead.
