  1. How about you post the entire recipe and we'll either fix it or just find another one for muffins that would work ? (Please list any additional restrictions or allergies.) Of course if you're using 7 kinds of flours already (congrats, that's even worse than when I get carried away) it might not matter that much. I am another fan of almond meal,...
  2. I would liberate my pocketbook from paying for this doctor's next round of golf. I just ate two pieces of homemade gluten-free sorghum amaranth almond toast, cherry jam, a piece of dark chocolate on top, a mini tangerine, half an apple, and some imported irish hard cheese, with some coffee with coconut milk, and you know, I just feel so.... so...
  3. Bread machines have their own custom pan with a little paddle mixer in the bottom to stir the dough, which is powered by the machine before it bakes. If you are going to do gluten free baking in one, you should start with a brand new, uncontaminated bread machine because the old ones will be nearly impossible to totally clean the gluten out of. I haven...
  4. Will they put it in writing? I'm suspicious of the "natural blueberry flavoring" being made of something else entirely, and this isn't a gluten reaction. Being "natural" means nothing, in fact, for the gluten intolerant/celiac, the word "natural" is a red flag for "ingredient list unknown or unwilling to be stated by manufacturer." For instance, it could...
  5. You may want to start carrying your own teabags. And artificial sweetener if you use it. Call the shop and tell them you need the lot number of the tea, then call the manufacturer and ask them what the **** is in the so- called "natural blueberry flavorings." That was quite a reaction. I have had some of those in the past, to medication...
  6. I tried that when I first went grainless on the SCD, I couldn't even do the yogurt (not knowing that one must be very, very careful of just what yogurt one eats) and it didn't do anything for me once I had gotten my gut to heal up. So I carefully added back in some goat cheese to see what would happen, then some aged cheese, mostly organic. Once in a while...
  7. It's like we're all on Star Trek and the Universal Translator
  8. I am another person who has recovered a great deal out of being plagued with neuropathic symptoms that strongly resembled MS. I still have some minor buzzing constantly in my hands/arms, but this is because of the spinal stenosis and bone spurs in my cervical (neck) spine. My spine is this way because I have had spondylitic arthritis my entire adult life...
  9. Very good topic. First off, if there is a bad storm forecast, do your shopping before the storm hits, in case the retail sector loses power. GAS UP YOUR VEHICLE before you return home, because a gas station without power can't sell you fuel. Buy some BOTTLED WATER. Put a blanket and a warm knit cap in the car. Now you have the bare minimum to be able...
  10. Almost all of these raw ingredient protein powders are imported from China, because they are cheap, and there is just no way to know for sure what is really in them. China does not have our standards of food manufacturing inspection (not that ours don't need improving after this rotten peanut problem) and what is worse, at the time of import, there is...
  11. I read the article and it says the plants are the result of precision (selective) breeding and not genetic modification. That is why this was able to be done at UC Davis , because California has banned the breeding of genetically modified rice so far, because the California rice crop is renowned for it certain qualities and exported to countries like Japan...
  12. Cravings for carbohydrates and junk foods are caused by mineral deficiencies and a diet too high in refined (white) carbs just makes it much worse. You have to set limits now or in a few years you'll have a monster on your hands. Start giving her a gluten free calcium supplement and a multivitamin daily, and if she doesn't like it, too bad, she's taking...
  13. I don't have a formal diagnosis of being gluten intolerant, but since I have other auto immune problems that go along with being celiac, and I responded so dramatically to changing my diet back in 2003, I don't really care at all what "other" people think about my eating habits. It's much easier to eat this diet than to be sick all the time. As to the...
  14. No, a gluten free diet won't cause problems if the person isn't celiac. Many households go completely gluten free just to make life easier avoiding cross contamination for the ones who do have to avoid gluten, and they don't have any problems adapting to the diet as long as the quantities of whatever they are consuming match their metabolic needs. My husband...
  15. Do you have a grocery or a health food store nearby, that you could visit, and then when you visit her, bring her a bag of gluten free goodies ? (you could run your potential shopping list past us first after reconnoitering to see what is available). I know that processed foods that are gluten free are expensive and perhaps she is also not able or willing...
  16. That stovetop and then broil technique does do a fast, acceptable pizza crust. Okay, it's not like a pizzeria but then I don't have a professional oven and I've screwed up enough yeast crusts already. I thought a standard loaf bread pan for yeast breads was 9" x 5", that's what some of my really old ones are that I don't use anymore. Then the next...
  17. While you will get conflicting advise on this, my personal rule is that I eat things that don't make me feel sick after they are consumed, and to **** with whatever anybody else thinks about that, including anyone on an internet board (not here, but there's another disease support board I used to post on where the mods thought it was fair game to troll me...
  18. I think the pan absolutely has a lot to do with the baking result being a success or an also- ran. The other thing I do, is if it's being baked in a loaf pan, I always TEST THE RESULTS before pulling it out permanently. I take a table knife and stick it in to the bottom and pull it out and make sure it's clean- you'd be surprised how often it...
  19. Carnation just changed their labeling and website very recently because I remember looking this up a few weeks ago. Open Original Shared Link
  20. Our house is almost gluten- free except for a few boxes of cereal which are wheat- free if not technically gluten free, which my husband eats. Since it is just the two of us, he made the switch even though he didn't have to, because it was easier to cook and shop that way- he eats lunches and some business dinners out, and says he gets plenty of the "other...
  21. I would go back to the health food store and complain to the manager because that clerk is being completely irresponsible. I make quick breads all the time using almond meal that I grind myself in a dedicated blender- I just toss in a handful of nuts and whir it for a minute and that's much cheaper than buying the almond flour. I then use this by itself...
  22. It's times like this I gain 10 lbs just reading a recipe. I eat a lot of avocado in place of cheese, I can eat cheese but not too much of it. I wonder if coconut milk with lemon juice could be substituted for the sour cream, and olive oil for the butter ? That still leaves the problem of the cheese topping. It might taste good topped with guacamole...
  23. Come to think of it, I haven't seen rice lasagna noodles in the store in a long time. I have used cabbage in place of noodles- sounds weird but it comes out really well. Take a whole cabbage, slice it into rounds, and steam it in the microwave with some water, before using it as you would noodles with the other lasagna ingredients.
  24. At this point, having just read that, I would like to verbally smack the corporate "cover- one's - butt against any possible whiff of liability" team of lawyers who probably made the suggestion that they should take off the "gluten free" label just in case somebody somewhere in bean counting decided to purchase ingredients that were no longer gluten free...
  25. I can make a pizza pretty fast. I just make it a habit to make sure I have purchased the ingredients at the grocery, so they are always in the house. Keep on hand: high quality extra virgin Olive oil, tomato paste (read the labels, a few brands now add garbage to theirs), McCormick's (this spice brand is good for calling ingredients out on labels) oregano...
