ARCHIVED Best State To Live In For The gluten-free Diet?
Takala replied to crayola's topic in Coping with Celiac Disease
On traveling- What surprised me about Las Vegas was when ordering food at the big Casino restaurants, the wait staff actually understood what I meant and it was possible to get plain, unseasoned meat and vegetable and rice and potato for dinners. My fellow conventioners were sort of amused that I was thrilled to see a request of plain rice come from the... -
I am so happy you listed what you are eating already. This is easy to fix. Add in more (good) fats such as from coconut milk and olive oil, and green vegetables. You're loading yourself up with carbs and fruit sugars which don't have that much staying power. For instance, if you drink coffee or tea, try adding a bit of coconut milk to it. Let...

ARCHIVED I Never Thought Travel Would Suck
Takala replied to Mother of Jibril's topic in Traveling with Celiac Disease
I am so saving this thread in case I ever have to fly again. After the last time, I figure if the airline industry is just that hostile to people who can't eat airline food, they don't need me to spend any money to make myself miserable. My last airport misadventure was some sort of cross between "Survivor" and "Lost," and mind you, I do carry a lot... -
Look, this is starting to worry me. Are you running a temperature? Is there swelling or drainage or do you have a puffy looking face that looks like the glands at the side of the jaw are swollen? Any redness ? When did the headaches start, after the tooth extraction? Do they get worse about an hour after taking the medication? Is your heart rate elevated...

ARCHIVED Best State To Live In For The gluten-free Diet?
Takala replied to crayola's topic in Coping with Celiac Disease
It's not the restaurants, it's the groceries that should concern you the most, whether or not you can purchase staple products that are gluten free, relatively close to where you live. Restaurants and their policies come and go, but most of your eating at home needs to be safe. I will stick around here in CA (north of Sacramento) because I seem to be... -
ARCHIVED Fibre-enriched Gluten-free Bread Gets Formulation Boost
Takala replied to kenlove's topic in Publications & Publicity
  Oh, for ****'s sake, would they get off the "fibre" horse, quit mucking about figuring out how to screw up gluten free goods, and leave the bread alone. An entire class of people being catered to by advertisers, and their main problem is they're too dumb to eat a salad ! -

ARCHIVED Article On Celliac In The Press Newspaper, Christchurch
Takala replied to mushroom's topic in Publications & Publicity
The article may not be online, but surely it has an author who has other things online. What is the name of the publication and who wrote it ? There's a ton of stuff online about Dr Rodney Ford, a pediatric gastroenterologist. -

ARCHIVED Any Vegetarians Who Became Meat Eaters After Diagnosis?
Takala replied to foodiegurl's topic in Coping with Celiac Disease
I'm a lapsed vegetarian. When I started going to a grainless diet initially I had to add it back in or starve. It turned out that I still had the ability to digest meat as long as I didn't eat grain at the same time. I was eating a lot of fruit, nuts, vegetables, olive oil... you get very hungry on this with no meat. I could not do dairy initially, either... -
ARCHIVED Not Diagnosed (yet)
Takala replied to lesson's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes. I am a less sensitive type and could probably eat a piece of normal bread and not feel too bad. But wheat based refined starches used in some processed foods just about lay me flat out. If you don't get anywhere with the neuro, try a gastro. If that fails, try a self monitored elimination diet with a food diary. Absolutely INSIST that ALL doctors... -
ARCHIVED Just Diagnosed- But Untraditionally. Need Validation.
Takala replied to anniebeth's topic in Coping with Celiac Disease
I just tell people I AM gluten intolerant, if the subject comes up. Sometimes when it has to be a super short conversation and we're both in a hurry, I abbreviate it to "sorry, wheat allergy, thanks for offering, but I really can't !" While technically, this is not correct, it does get the point across that the food offering has cooties and that's why I'm... -
ARCHIVED Amaranth May Extend Gluten-free Bread Shelf-life
Takala replied to kenlove's topic in Publications & Publicity
_____________ If it turns out that a significant number of celiacs and gluten intolerant people have this allergy, they ought to leave it out of the manufactured goods and just make the certified gluten-free amaranth flour in bags more available on the grocery shelves. And since we already have such a large list of avoidables, that significant number... -
ARCHIVED Milk, Buttermilk, Butter...what's Your Sub?
Takala replied to SUZIN's topic in Gluten-Free Recipes & Cooking Tips
I use yogurt (this does not solve your problem, just mentioning it for the people trying to avoid lactose instead of all dairy) and/or nut milks and coconut milks. For example, maybe hemp milk mixed with coconut milk and water, with a bit of vinegar added, or some yogurt whey mixed in- whatever I have open in the refrigerator, blended. Coconut milk, once... -

ARCHIVED Son Just Diagnosed With Celiac Disease
Takala replied to Mommy2Many's topic in Parents, Friends and Loved Ones of Celiacs
Oh, heck, don't sugarcoat it or he won't get it. Tell him it will ruin his social and dating life as he gets older, it gets worse, and he has to spend most of his time in the bathroom. I would go ahead and switch the soaps and shampoos because the residue is impossible to rinse off if you have hard water. Ivory bar soap is okay and Dove shampoos are... -
ARCHIVED Update - Son's Testing :(
Takala replied to kaiess's topic in Parents, Friends and Loved Ones of Celiacs
Pizza, easiest. Take two pure gluten-free corn tortillas and sprinkle bagged gluten-free cheese between them. Put in microwave a few seconds to start to melt the cheese. There is your crust. Spread with tomato paste, sprinkle with oregano and basil, sprinkle more shredded cheese on top. Add gluten-free pepperoni (hormel). Run under the broiler a minute... -
ARCHIVED What's The Deal With Wm Great Value Products?
Takala replied to hhdavid's topic in Coping with Celiac Disease
I've had enough reactions to Miracle Whip in the past, that I no longer eat it. I adore the stuff, so I know that is what was doing it, before anyone goes postal on my anecdotal evidence and wants a double blind study coordinated by scientists in 5 NATO allied nations. Now if I want something that tastes like it, I take regular mayonnaise which is... -
I use millet flour in baking bread, in a mixture of sorghum, amaranth, and millet. I use about half that in the bread, and half other gluten-free flours or meals like almond or almond and potato starch or cornstarch. I also add sunflower seeds and sometimes some whole millet that I've steamed in the microwave. This makes a bread that is very much like conventional...

ARCHIVED I Don't Think I'm Crazy, But I'm Open To The Possibility.
Takala replied to samhill's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sane. Don't be upset when your biopsy comes back negative because the gastro made up some number off the top of his head that has no basis in reality. They make money in American medicine by running tests, not by diagnosing you. You can do internet searches for the emotional effects of gluten on the gluten intolerant and celiac, technical and not so... -
ARCHIVED Cadbury's Cream Eggs
Takala replied to Kyalesyin's topic in Gluten-Free Foods, Products, Shopping & Medications
____________________ While from a strictly "scientific" standpoint this might have some validity, I will continue to protest the fact that it is not a long term study done over several decades and generations to follow the results, and it is still being done as rationalizing a way for food manufacturers to continue to contaminate all processed foods WITH... -
ARCHIVED New Ad For Quaker Rice Cakes
Takala replied to The Kids Folks's topic in Gluten-Free Foods, Products, Shopping & Medications
_____________________ It's a marketing gimmick. The person who writes the script for the new labeling will be absolutely clueless as to why a person might be eating a rice cake for in the first place. Manufacturers will tend to use whatever is cheapest and then task the marketing people to come up with the slogans to foist it off on the consumer. I... -

ARCHIVED Simple Bread Recipe / Need Flour Replacement
Takala replied to River*'s topic in Gluten-Free Recipes & Cooking Tips
Ha ha, I know what that is, and yes, you can do it with gluten free flour mixes (I did it once already out of curiosity, when another forum had a big discussion on it) but you need its own gluten free recipe technique adaptation. the gluten-free adaptation of the over rated no knead bread out of the east coast newspaper recipe 3 cups total, gluten... -
ARCHIVED I Am Having A Hard Time With This!
Takala replied to johncgaiser's topic in Parents, Friends and Loved Ones of Celiacs
My husband and I have been together for over 3 decades, and we both cook. He, much to my astonishment, voluntarily gave up eating most gluten items in the house when I decided to stop eating it. There is occasionally a box of a bit of wheat free instead of gluten free cereal showing up, but that's about it. He thought it was gluten free, when I explained...
