  1. From a farmer's market probably means made in a home kitchen which is not gluten free. I'd vote for CC . . .or, yeah, reaction to the sesames or the pistachios.
  2. Ok, here's a different idea. Your daughter is old enough to take some responsibility herself. If the tests are all positive, assuming she only sees her father infrequently, she will feel MUCH better off gluten. If you coach her, she will start seeing how much better she feels when she avoids gluten. Be sure to tell her everything you serve her, explain...
  3. I believe I'd heard that single spices are gluten free. Most of the gluten in spices will be in blends, such as lemon pepper or seasoned salt. Cayenne pepper should literally be just ground dried peppers. However, I havent called any companies.
  4. There is a woman who created a few short videos of herself making some Gluten-free Casein-free dishes for her son. She actually has a 2-part video about making chicken nuggets - not that its a hard recipe, but she just talks a lot about so many different thing. Go you youtube and search for kimmie krocker. She only dips the chicken in rice milk and ground...
  5. I did seem to be constipated at first when i quit gluten - i think it was just because my body had adjusted to what gluten did to me and tried to make my stools harder, if that makes sense. It seemed to wear off. I also had a very bad reation to tapioca, which is in almost every gluten-free product. You could also have other food issues - like chocolate...
  6. great how the little things in life bring us joy - now go cook up a gluten-free storm!!
  7. My experience is that 'pre-existing conditions' such as celiac are only a problem if you are trying to get insurance on your own or through a very small company. Most decent-sized company's insurance policies are group policies and do not require you to reveal pre-existing conditions.
  8. just wanted to say, tho, that you still will have to go back to eating gluten for the tests - but it should be ok to take a one week break if its a really important week.
  9. Ok, my 2 cents: Many, many people will stronly recomend you go thru all the testing before quitting gluten . There are some good reasons. For example, as enthusiastic as you are now, if you know for sure that you have celiac, you may have an easier time sticking to the diet. Your family and friends may be more supportive of your new eating habits if...
  10. Thanks, but i'm on a major elimination diet right now, becuase i reacted to 1/3 of 175 foods on my sensitivity test, and 90% of the 60 foods my allergist tested me for. I am only adding things every 3-4 days, and only if i'm symptom-free. So right now i'm using millet, but i'm not entirely sure i'm not still reacting to something when i bake, maybe xanthan...
  11. I havent been doing much baking since i tested reactive to rice However, here is a page of flour mix recipes: Open Original Shared Link and the parent site of this board has a page, too: https://www.celiac.com/categories/Gluten%25...ee-Flour-Mixes/ They have recipes too. You can certainly use these recipes and sub arrowroot for tapioca...
  12. Wow, that is really frustrating! However, it sure doesnt SOUND like its all in your head. You are an adult and you can certainly keep yourself on a gluten-free diet without anyone's permission. Heck, even if it WAS all in your head, so what . .. if it makes you happy, why should they object? However, your daughter is a different thing - they might...
  13. There was a post started w the title, you know you need a new doctor when . . . it started off mild, but got worse and worse. There are folks on this list who went over 15 years undx'd while going from specailist to specailist. Its so incredibly frustrating, it makes you wonder if there's a competent doctor in the world. But then others come on and say...
  14. I went thru two rounds of broad food testing (see siggy) and each time, i was a bit overwhelmed at how many foods I had to cut out. But once I did cut everything out, I just felt so much better . . . the adjustment is definitely worth it.
  15. I've always been to spacey to keep a food journal. I'd start one, keep it up for a day and a half, and suddenly, 2 weeks later, I notice that I had stopped. I did a lot of testing (A.L.C.A.T and allergist) to find the foods I was probably reacting to. I have 3 kids and just didnt have the energy and patience to figure it out on my own. I do believe...
  16. I had the same experience with gluten-free items, even tho i was making most of them at home. I thought it was either the tapioca or sorghum flour, but i read on this forum that several celiacs have trouble with the tapioca. I have avoided tapioca ever since and felt much better. However, if rice gives you the same symptoms, then it could be the rice...
  17. wow, bath was one of the first things i'd do when they got cranky . .. just run some water, throw in some bubbles and some toys, tell the oldest one to catch the younger ones if they fall under and yell for me . . . then go somewhere within ear-shot and get a break. If they were bored or cranky or trying to make a mess w water somewhere else .. . throw them...
  18. Wait, have you only used canned chick peas? I have a lot of intolerances, and I'm on a huge elimination diet. I tried canned black beans once, and I seemed to have a reaction to them, same w canned refried beans. So finally I made my own refried beans - soaked pintos over night, boiled until soft, then mashed slowly while cooking in a pan w oil and water...
  19. I've searched and searched and cant find them. Their website seems to be not there any more? However, I"m sure that they, like every other blend, contain tapioca, which I cannot tolerate. It seems to be the key to replicating wheat flour texture . . .
  20. I just want to say that sometimes when my kids are having a really bad day like that, I'll just sit down calmly with them and say, You arent having a very good day, are you. I'll try to hold them or rub their back and see if they can say what might help, but some days are just like that. I find this also helps when they see another kid (sibling or neighbor...
  21. I think you shoudl thank your lucky stars you found this doctor! The way I understand it, if you have the celiac gene, eating gluten is a serious crap shoot. Even if you arent having symtpoms now, anything stressfull could bring it on. Furthermore, when I started reading about the blood tests they do for celiac, I read that they had been fine-tuned so...
  22. The other thing to remember is that you may have other food issues - i found out quickly that I cant handle tapioca, and almost every gluten-free product you can buy includes tapioca flour in it. Have you been eating a lot of gluten-free baked items? Alternatively, have you gone carb-free? are you still eating something with some starch in it? Make...
  23. Ok, two questions. How sick do you get buying bread in the store? I am buying lunch breads for my kids all the time . . . sometimes when my legs ache a little or my feet are sore just from normal household duties, i wonder if maybe i got glutened. My stomach has been really good tho. The cheese cake - i've had tofu cheesecakes and hated them. I find...
  24. Yes, you are absolutely right. I am not taking it seriously enough. Partly I think its because i am working thru so MANY food sensitivities now, it seems like just one more, but I know its the mother of all food sensitivities. But yes, I need to take it more seriously, I think you really hit the nail on the head.
  25. I"m in the middle of a massive elimination diet. I took a sensitivity test (A.L.C.A.T - look it up, but dont try to spell it w/out the dots on this website), and went to the allergist also. The allergist tested me for 60 foods and I reacted to all but 6. He suggested eating the foods which were 0 or 1 reaction, for 10 days, and then doing a challenge....
