  1. I'm just trying to do my research for my honeymoon. My fiance got to pick the place (since I didn't want to elope, which I"m kicking myself for right now) and I told him that I would figure out the food. We're staying at the CoCo Bay resort. Has anyone else stayed here and have issues with the food? Are there any other restaurants that you can recommend...

Gma has it Aunt has it (although self diagnosed after her daughter was diagnosed) Cousin has it I have it (and was tested due to heartburn/constipation and family history) And there is another cousin who is being tested for it. This is all on my father's side of the family...Just have you mom checked out to see if she has it...
  3. Michelle, I was going to make a batch of cupcakes (just a small batch) a couple of days before the wedding. We figured that if we can't get a gluten cake, we can put my gluten cupcake behind the actual cake...and cut that. Yes I definitly hear you on the embarrassing part....sometimes I got so frustrated that I would stomp my feet and make a loud noise and just walk away from the conversation I had with my fiance....then he'd think that he did something wrong. Poor guy. Not only does he think hormones are a crock....he's going to think that this new revelation is a crock...
  7. Very Interesting......I'll have to check the lables to see what they contain as these two are mixes (just add eggs and whatever other ingredients they ask throw it in the over and you're done). Heck I'll jsut try them and if they're nasty I just won't try them again!
  8. Could explain why my fiance looks at me weird when i say something....probably because I said it about 5 times already. There's been times when I haven't had a drink of alcohol and he's though I was drunk as a skunk talking to him about something.
  9. I've noticed that I've been spacey (very spacey) lately....almost where at times I feel like a real idiot. I know it's not nice to say things like that about yourself....but since I just started going back on the diet....I'm kind of thinking....was me being a "space cadet" linked to going off my diet???

  11. My future mother-in-law and sent me some Bob's Red Mill brownie, pancake and bread mixes. I already devoured the brownies (I've come to realize that pretty much anything gluten-free chocolate is pretty darned good), but what about the pancake and breadmix? If they're good I'll make them, if not I"ll see if I can' bring them to my local store to exchange...

He has seen a renal dietician about his diet and he said that he can have regular pasta and white breads....but he shouldn't have whole grains and other considered to be gluten-free because it can raise his potassium and...
  14. Yeah I know it's not about a bowl of pasta...and maybe it's just harder now that not only do I have to watch what I eat...but what my fiance eats (he has kidney disease). I don't eat that much cheese...I'm a veggie freek...and I think I swim in all the water i drink. Maybe it's time to go back to the benefiber.... Maybe I'm just having an off...

  16. I have celiac....my fiance has IGA Nephropothy (sp?) - major kidney issues. Eating out is so much harder. when we first started dating we actually joked around a bit about out "issues." We both said that we would have one cheap date since we can share one dish. I can eat what he can't and vice versa. He has to limit his protien to 75g/day...phosphorus...

  23. Hello Everyone....I'm trying to find the best way to store my gluten-free flours to help keep them longer. I usually use the premade baking ingredients (brownies out of a bag/box) but I'm starting to bake stuff on my own. Are gluten-free flours ok to be stored in an airtight canister (like one of those stainless steel jars) and they won't go bad? I'm trying...
  24. Note to self.....might use this for my bridal shower cupcakes as well!!! Poor mom thinks she can make gluten-free cakes/cupcakes in her 20 year old KitchenAid Mixer....that's been used for regular cookies and cakes, etc. I think Mom's trying to off me before my shower! lol Happy Birthday!   25. I have no other allergies and I like just about anything other than seafood (which I highly doubt will be in a cupcake recipe). I've been staying away from a lot of sweets since I was told I had celiac disease so the only sweets I've had were some brownies (Red Mill I think) and Foods by George Coffee Cake. I've heard that Pamela's is really good too.....
