  1. I have celiac and I'm pretty sure my son does too (He's 13 months now). I figure when he's older and can somewhat make the choice to be diagnosed that is when we'll do the biopsy. When he needs to know that it will make him sick to eat gluten and not just because I'm trying to be mean. Until then he's gluten free because mommy loves him and says so. But...
  2. OMG! So we did some in rice flour and you'd be amazed at how well the rice flour really turns out. So you dip them in a little bit of egg first then rice flour (with salt and pepper or any other seasonings you prefer added) and then we cooked them in about 1/4 of veggie oil in a cast iron skillet. Fantastic!
  3. well I have a soy and a lecithin allergy so some of those are out for me, but I use the Hersey's Special Dark Chocolate Coacoa powder for the frosting (there is the recipe on the back of the container) and I love love love the Ener-G brownies for cake or the Bob's Red Mill brownie mix. I'm so having a chocolate craving now. Oh and I have a local bakery...
  4. I hate the walk of shame to the gluten free aisle as well. Really. Even after six years I hate stopping in that aisle. I live in Texas so when I do stop in that aisle people make assumptions about you and your "alternative" diet and "alternative" lifestyle. Like this is something I chose?! So I don't shop in that aisle anymore. I shop at the Deli (and...
  5. I think that warrants a food journal and serious consideration for an elimination diet. It's rough but well worth it. I tested for so many food sensitivities that this is how my doctor started me out. Start with two food items you know you don't have any issues with. I started with rice and white potatoes (the staple of my diet). And sadly enough this...
  6. Ack! I'm so sorry your trip was a bummer. I hope you're feeling better soon.
  7. It sounds like you have a good plan of action. I know a few people have recommended an allergy test, but consider a food sensitivity test. I know the words tend to be used interchangeably, but a doctor's office does not really view them as the same thing. vomiting later on after eating sounds more like a sensitivity than an allergy (allergy being more...
  8. This is my lazy recipe gluten-free Corn tortilla Spaghetti sauce Garlic Powder Onion Powder cheese smear spaghetti sauce on the corn tortilla. Sprinkle on garlic and onion powder to taste. Top with cheese and bake at 350F for 7-10 minutes in the oven. I also like to add oregano, but hubby doesn't like oregano so much. And you can add ham...
  9. haha well you know you're an addict when you start to think it tastes like junk but you still drink it anyways. I used to have a six pack a day habit in college but I was extremely abusive to my body then. I was so depressed about being a celiac I think in some ways it was like trying to commit indirect suicide. I even kept smoking for two years after...
  10. I think I was in a similar boat. I was so sick that I wasn't eating much of anything. I didn't have the leaky gut syndrome but went the other direction and actually couldn't go for five weeks which is what prompted getting me in to a GI specialist pronto. In short, I came back with one negative marker on the blood test and one positive (so it was interpreted...
  11. Oh that made my day! But now I don't have an excuse to give up soda other than it's not healthy for me! hehe. Thanks for telling me.
  12. Okay, so I know this is absolutely the wrong place to admit this, but I can't give up my Dr. Pepper. I know I should because of the caramel coloring possibly having gluten (and no I haven't ever called the DP company to check because I'm afraid to hear them say "it sure can have gluten" and then I would force myself to give it up). I've really cut back...
  13. So does that mean on scholarship applications and employment applications I can check that I have a disability? That would be awesome! sorta.. feels like cheating... I'm only missing a functional intestinal gut.. not a leg or something.
  14. Does anyone know if Celiac Disease falls under the Americans with Disabilities Act?
  15. What's the likelihood that they are using starch in their placebo that contains wheat? wouldn't that be sad if it's the placebo that's making people sick in the trial and not the medication?
  16. After reading this thread, I sent them a comment requesting that they remove the wheat from their french fries. If you want, you could do the same: Open Original Shared Link
  17. I remember complaining most of my childhood that my stomach always hurt and I had an itchy mouth. Constantly. It just never stopped. When I was 12 I fell down some stairs and my back started hurting pretty badly. Despite repeated visits to the doctor, no one ever did an x-ray. I was a pill popping junkie by 14. Skelaxin, Lexapro, Bextra, Daypro, vicadin...
  18. I think at some point you have to realize there is only so much you can control. You can control yourself and your surrounding environment pretty well. At work, I don't think you're crazy for wiping things down, but I work at a University and we wipe every touchable surface down with clorox wipes once a month just to keep everyone from becoming sick every...
  19. you poor guys! I always call in advance and ask who the caterer is and to tell them that I have a gluten intolerance (and black pepper and soy and orange and 10 million other things) And then I call the caterer and work out a substitution for me that will still fall into the same pricing as what the event coordinator has ordered. Then when I show up I...
  20. Yeah.. you know I don't know if that's a disorder or something but I can't eat solids for two hours after I've been awake. I don't throw up (usually) but it makes my stomach hurt in the worst possible way. I tend to stick to things like juice and yogurts for breakfast. It seems like more liquid foods do okay and fruits do okay. But everything else is...
  21. I have to ditto Ursa again. Especially when it comes to your calcium. Because your blood calcium will stay the same but if you are deficient in calcium in your blood, your body will start to rob it from your bones in order to keep your blood level the same. Calcium is extremely important, especially when trying to grow a baby. An old wive's tale is that...
  22. Yeah, I was going to ditto on the year comment. I was gluten free for three years before I became pregnant and no complications there.
  23. Open Original Shared Link She has a few good recipes up there that help with my sweet tooth cravings. But Bette Hagman is where I started. She has an excellent intro in her Gluten Free Gourmet books that talk about the different flours and substitutions and what not. Right now, I'm pretty much just winging it in the kitchen but only because her books...

    ARCHIVED Poll

2.5 years on bone density drugs. I don't have a noticeable response.. until you check my bone density.
  25. I actually stopped going to an MD when I broke my collar bone and my doctor told me it was a sprained shoulder. I then went to an Osteopathic doctor. She immediately did a bone density scan and found that at 20 I had osteoporosis and then she did a food sensitivity blood test (not an allergy test) and sent me to a GI specialist who did the usual testing...
