I was flipping through channels this evening and was thrilled to find an episode of the cooking show Emeril Green devoted to gluten free cooking! Emeril made gluten free chicken etouffee, corn bread, and pecan pie. It was AWESOME! I love how Celiac Awareness is growing in the United States...
  4. I agree! I am so much healthier than most people because of all the fresh, natural foods I eat. (fruit, veggies, etc....) Since going gluten free 2 years ago, I haven't gotten sick once (with the exception of the occasional accidental gluten-ing)!
  5. I use the Laura's certified Gluten Free Rolled Oats. They are very good. I cook them in the microwave and add frozen blueberries and cinnamon to them. YUMMY!

  7. I have to eat baked goods in order to maintain the weight I gained back since going gluten free 2 years ago (about 25 lbs.).   11. Actually, my hubby and I have found some AMAZING gluten free breads and pastas. Kinnikinnick bread is pretty good as far as pre-made bread goes. I prefer to make my own. Gluten Free Pantry makes a good bread mix. Chebe also makes AMAZING mixes for pizza crust, breadsticks, etc... plus they are very easy to make. Quinoa pasta is good. Tinkyada pasta is even...
  12. My husband, a non-gluten-free'er, made a great discovery with kinnikinnick bread. If you wrap the frozen slices in a damp paper towel and then microwave them for about 30 seconds (turning over once during cooking) they stay surprisingly moist and "uncrumbly". I highly recommend trying this method. It works well for brown rice tortillas too! Treen Bean
  13. I love, love, love, using Kinnikinnick's frozen pizza crusts. They are gluten and casein free. Chebe also makes an excellent pizza crust mix. It is super easy to make and very versatile. Treen Bean
  14. It's fine.. I travel with touring Broadway shows.
  15. I have to travel by bus with the group. I also have to stay in the same hotel as everyone else. Some hotels have refrigerators, but most do not. Also, en route to the hotels would mean 8+ hours of unrefrigerated food. There is not room for a small refrigerator or cooler on the bus, or a place to plug one in. Mainly I am worried about losing all the weight...

  17. Me too! Whenever I get CC I get really dizzy, tired, and start losing feeling in my hands and feet. Then I get a migraine, etc.... I've learned to push through the symptoms (if it's only trace amounts of CC), but I still feel awful for days after. Treen Bean gluten-free for 2 years!

  20. Thank you for all the helpful tips. I was especially excited about the minimus website! The difficulty I face is I do not have access to a refrigerator and only sometimes to a microwave. I travel for 8 months straight. I never go home the entire time. Also, I am rarely in a city for longer than 2 days. It is a rather hectic schedule. Treen Bean

  22. I know how all of you feel. My husband and in-laws completely understand. In fact, my in-laws have completely changed the way they cook to make everything gluten free.
