ARCHIVED Falling Into Temptation.
Treen Bean replied to SeMeCl's topic in Coping with Celiac Disease
I agree with the others, it is a mindset. I'm not saying it is always easy to have a positive mindset. I often lose mine when I'm at a gluten filled party and everyone is enjoying amazing food but me. However, I am finally healthy. I can go to the gym and run and play. I still have pity parties. However, the positives of a gluten free diet far outweigh the... -
ARCHIVED My Unthinking Husband
Treen Bean replied to dilettantesteph's topic in Coping with Celiac Disease
I had an interesting reaction a few days ago similar to yours. I was making my little sister a sandwich. I have done this before with no problems, as long as I thoroughly wash my hands afterwards. However, this time I actually smelled the bread. This is something I haven't done in two years. I don't know what possessed me to do it. I always smell my fruit... -
I couldn't figure out which category to post this under... BUT.... I was flipping through channels this evening and was thrilled to find an episode of the cooking show Emeril Green devoted to gluten free cooking! Emeril made gluten free chicken etouffee, corn bread, and pecan pie. It was AWESOME! I love how Celiac Awareness is growing in the United States...

I agree! I am so much healthier than most people because of all the fresh, natural foods I eat. (fruit, veggies, etc....) Since going gluten free 2 years ago, I haven't gotten sick once (with the exception of the occasional accidental gluten-ing)!

ARCHIVED Gluten Free Oatmeal - Taste
Treen Bean replied to jenkay's topic in Coping with Celiac Disease
I use the Laura's certified Gluten Free Rolled Oats. They are very good. I cook them in the microwave and add frozen blueberries and cinnamon to them. YUMMY! -
ARCHIVED Diagnosed By A Gluten Free Diet Alone?
Treen Bean replied to dizzygrinch's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have a question too. I was never tested for Celiac Disease. Instead, my doctor just had me cut gluten from my diet. I have now been gluten free for 2 years. In those two years, I have gained back the 25 pounds I lost, I have regained my energy, stopped having migraines, began having my menstrual cycle again, been able to sleep at night, gained control of... -
ARCHIVED Eating Enough Post Diagnosis
Treen Bean replied to Knightley's topic in Coping with Celiac Disease
I have to eat baked goods in order to maintain the weight I gained back since going gluten free 2 years ago (about 25 lbs.). I immediately begin losing weight when I stop eating gluten free bread, etc.... It is actually frightening how quickly my weight drops. Last time I went on vacation I lost 5 lbs. in one week at an all inclusive resort. I never had a... -
ARCHIVED Another Neurology Question
Treen Bean replied to eta5's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My neurological symptoms are finally gone after 2 years on the diet. However, when I get "glutened" my symptoms return for 2-3 days. -
ARCHIVED An Attempt At Gluten Free Dating
Treen Bean replied to Erin Elaine's topic in Coping with Celiac Disease
I was not married when diagnosed. However, I was engaged so my experiences are different. My fiance and I just found a few restaurants where I could eat. I agree with the other members. The man should really take care of the woman and vice versa. My husband eats gluten free at home and most times when we eat out (I like to share his food!) He has never... -
ARCHIVED I Dont Have Celiac, But Its Ruining My Life!
Treen Bean replied to littleone's topic in Parents, Friends and Loved Ones of Celiacs
Actually, my hubby and I have found some AMAZING gluten free breads and pastas. Kinnikinnick bread is pretty good as far as pre-made bread goes. I prefer to make my own. Gluten Free Pantry makes a good bread mix. Chebe also makes AMAZING mixes for pizza crust, breadsticks, etc... plus they are very easy to make. Quinoa pasta is good. Tinkyada pasta is even... -
ARCHIVED Kinnikinnick Breads?
Treen Bean replied to Live2BWell's topic in Gluten-Free Recipes & Cooking Tips
My husband, a non-gluten-free'er, made a great discovery with kinnikinnick bread. If you wrap the frozen slices in a damp paper towel and then microwave them for about 30 seconds (turning over once during cooking) they stay surprisingly moist and "uncrumbly". I highly recommend trying this method. It works well for brown rice tortillas too! Treen Bean -
ARCHIVED Roben Ryberg Pizza?
Treen Bean replied to IMWalt's topic in Gluten-Free Recipes & Cooking Tips
I love, love, love, using Kinnikinnick's frozen pizza crusts. They are gluten and casein free. Chebe also makes an excellent pizza crust mix. It is super easy to make and very versatile. Treen Bean -

ARCHIVED Restaurant Freak-outs
Treen Bean replied to Treen Bean's topic in Coping with Celiac Disease
I have to travel by bus with the group. I also have to stay in the same hotel as everyone else. Some hotels have refrigerators, but most do not. Also, en route to the hotels would mean 8+ hours of unrefrigerated food. There is not room for a small refrigerator or cooler on the bus, or a place to plug one in. Mainly I am worried about losing all the weight... -

ARCHIVED How Long Does Dizziness Last If It's Cc?
Treen Bean replied to a topic in Coping with Celiac Disease
Me too! Whenever I get CC I get really dizzy, tired, and start losing feeling in my hands and feet. Then I get a migraine, etc.... I've learned to push through the symptoms (if it's only trace amounts of CC), but I still feel awful for days after. Treen Bean gluten-free for 2 years! -
ARCHIVED Wow, People Really Don't Get It...
Treen Bean replied to samcarter's topic in Coping with Celiac Disease
I actually love educating people about what gluten is. Most people are very receptive and interested. In fact, they get really excited when the find something labeled Gluten Free and always call me to tell me about it and ask if I want them to buy it for me! I have gotten some comments that maybe I'll outgrow this. And, some people do make me feel like... -
ARCHIVED Poll- How Many Do Or Don't Eat Distilled Grain Vinegar
Treen Bean replied to fedora's topic in Coping with Celiac Disease

ARCHIVED Restaurant Freak-outs
Treen Bean replied to Treen Bean's topic in Coping with Celiac Disease
Thank you for all the helpful tips. I was especially excited about the minimus website! The difficulty I face is I do not have access to a refrigerator and only sometimes to a microwave. I travel for 8 months straight. I never go home the entire time. Also, I am rarely in a city for longer than 2 days. It is a rather hectic schedule. Treen Bean -
I'm sort of new at this whole posting thing. But, I figured I would give it a try. My job forces me to travel and eat out for months at a time. This is particularly unfortunate since I can not eat gluten. I have come to know what I can eat at most restaurants. However, at times I am forced, due to lack of options, to eat at unfamiliar restaurants. In these...

ARCHIVED Family Doesn't Get It
Treen Bean replied to cookiequeen's topic in Coping with Celiac Disease
I know how all of you feel. My husband and in-laws completely understand. In fact, my in-laws have completely changed the way they cook to make everything gluten free. They even use rice pasta when I'm not coming over for dinner! My own family, however, is another story. My own mother still tries to get me to eat regular pasta, etc... I have been gluten-free...
