I think I know what's wrong! At 5:17 last Tues., the Vernal Equinox occurred, setting off a round of Seasonal Affective Depression Disorder. It might take me a little bit to adjust. 	That sounds more like it to me. Wanted to check for piece of mind.. I use canola oil for frying (don't often fry), and either Olive oil or butter for sauteing. Big butter fan- use it and have for years with HDL of 95. I can't even say the "M" word! Thanks.

	I've been on the gluten free diet for 8 months, and have only regained 10 of the 25 lbs. I lost. Sometimes it's slow going, just keep doing it. I might drop Dairy for awhile to see if there's any improvement. I also eat 5 times a day, and sometimes have to force myself because I'm just not hungry.

Could be blood sugar issues. Eat some protien- The apple juice would spike you and then crash you. If you can , have your blood sugar checked. Also, I believe sublingual B-12 can help you with anxiety. And, more time on the gluten free diet should help. - 
	I read somewhere that most of the oils I use for frying (olive, canola,ect.) turn into transfats once they're heated, and that we should only use lard or butter. Anyone no if this is true?

I think you are doing the right thing. Many on this forum tested negative But gluten still made them sick. As they say, the proof is in the pudding, and my pudding is thickened with cornstarch. Glad you're feeling better. - 
	Husband eats gluten- I don't. The other night, we had Mac and Cheese made with Tinkinyada rice pasta and cheese sauce thickened with cornstarch. Dh loved it. I make 8 in. pizza crust for me, freeze them, and buy him a frozen or delivered pizza. He eats glutteny things outside of the house, but our shared meals are almost always gluten-free. 	Maybe it's because I'm older and married that I just don't get it, but, I just don't get it. I'm very sensitive, but go out to eat with my friends, stop and have a drink, ect. Beers not the only thing to drink. Celiac does impact my life, but not nearly as much as, say, stage 4 breast cancer (Which my friend has). I agree that you could benefit from some...
