Hi Sandra Yes, it really does sound like you have an intolerance to at least wheat, if not gluten entirely. Either way, it's probably best for you to cut out gluten completely for at least 6 months (as suggested) and see if you start doing better. It takes a lot of patience. You won't be 100% overnight. I usually (but not always) have things in the fridge in about an hour. I like to let it cool off first, and usually have it eaten up within 3 days. If it's longer, it usually gets a good frying, or gets chucked. I hate wasting food... But yeah, it could be more that something got to me in the meantime. Hi Mindwarp, I've also never been officially diagnosed for Celiac (blood-test negative, went on the gluten-free diet rather than wait for a biopsy). However, I've got pretty firm evidence that I do have the disease and not just an intolerance, and I can live without an official diagnosis because I don't even want to think of what a Gluten challenge would...

Welcome to the forum, Panda. I think you've probably caught your Celiac in very early stages, so that's really lucky! I had very low iron in my late teens, and looking back it was probably the first sign of the disease popping up. Klin, are you still drinking/eating dairy? Sometimes it's a good idea to cut it out while you heal. That might help with the stabbiness, or at least let you know that it's indeed gluten getting to you and not something else. Just a suggestion (that I didn't follow when I started. Yes, as the others have said, eating gluten "just to see" is definitely not worth it. You're still healing, still figuring out what you should be eating. As you manage to cut all possible gluten out and heal up, then trust me, you'll know when you've accidentally gotten glutened. Damn, I never thought of the frying... Now that I can't eat cheese, nachos are (sniff!) off the menu for me. But I often take a risk and as long as they don't deliberately have gluten on/in anything, I'll go for it rather than starving (usually resulting in a fun time that night...) Eating out it hard, but we have to do it and risk looking like picky complainers...

Personally, I think the cross-reactivity theory is on to something, in that proteins like casein and soy are similar to gluten, so Celiacs are more likely to have trouble with them. I don't think they cause the same damage as gluten, though, but the jury's still out on that one. All these theories aside, if it bothers you, cut it out. Trying an elimination...
