  1. A bunch of my friends celebrated another friend's graduation from nursing school last night by going to a local pub. Although they all know I have celiac disease and can't drink most alcoholic beverages, I knew I'd be "expected" to join in. I considered having plain soda but I don't tolerate caffeine well (I get symptoms very similar to celiac disease)...
  2. Blue Cheese dressing is one of my favorites and I stayed away from it initially because of the controversy over the blue cheese being started with a bread mold. Did some research and found that most blue cheese in the US is started with a laboratory-synthesized mold and not bread mold - in other words, it would be celiac disease safe. I rejoiced and...
  3. I had a similar rise in BG's like this before I got diagnosed with my gluten issues and went gluten-free. My doc ordered an OGTT. My one hour was 185 and my two hour was 141. I also had an A1C done that was 6.0%. My doc said she wasn't concerned about either result. She said she thought they'd improve after committing to the gluten-free diet and my body...
  4. I haven't had a chance to read your links yet, but I'm really starting to think I should *make* some time. Since my original post, I noticed that I'm once again able to eating dairy without experiencing the stomach pains that I was having. What I have found, though, is that my blood sugars are remaining elevated from where I had been. Prior to having...
  5. Not sure if I'm experiencing something real or whether I'm just going off my rocker... I've been searching this board as well as Googling the internet to find symptoms of dairy intolerance...not lactose intolerance...but reactivity to dairy like to gluten. Here's the thing...went gluten-free on my own due to a doc who was unwilling to be open-minded...
  6. I've only been dealing with the whole world of gluten-free living since getting my diagnosis in late April '09 but in that short time there's a few HUGE lessons I've learned... 1.) Not everyone reacts the same way to gluten. (Wide range of symptoms reported in this forum's posts) 2.) Not every gluten reaction you have will be the same as the others...
  7. I've read that many of you have had milk sensitivities in addition to your gluten issues. Before we discovered my gluten problem, I was convinced that lactose intolerance was at the root of my intestinal symptoms. I started using Lactaid and it seemed to help initially. Over time, my intestinal symptoms worsened, both in severity and number, and it became...
  8. I've been gluten-free since May '09...although I will admit to giving in to temptation (why does pizza and General Tso's chicken have to taste so good?) a handful of times before I had an especially bad reaction in early Oct. and came to my senses. Since then, I've been committed to being on a strict gluten-free diet. I had a horrible history with dairy...
  9. Boy, am I glad that I found this thread! Before I went gluten-free, whenever I was quiet, I found I was having myoclonic muscle spasms. If I was sitting watching TV or stretched out on the couch with a good book, the muscle spasms in my arms and legs were so frequent and so intense that I looked like I was in the throes of a seizure. The ones I experienced...
  10. If everyone on this site was honest, I'd bet 99% of us "failed miserably" at least a few times in the beginning. I know I let my cravings get the better of me 5 or 6 times before I finally learned my lesson! And what a lesson it was, too!! I can't even remember now what it was that I'd eaten, but I sure remember the results! The first symptom hit...
  11. This just might be one of my own personal "weirdisms", but I've also found that my fingernails have improved since going gluten-free. I've always been plagued by short, ragged, easily peeling fingernails - a fact that was only made worse by a truly uncontrollable compulsion to chew on them. I tried all sorts of things to stop - applying bitter tasting stuff...
  12. My biggest problem right now is that I literally have to re-learn how to dress! I've found myself dressing in the same weights and layers as I always have and I start sweating. I had to run to the ladies room a LOT lately and strip off a layer at work because I was steaming hot dressed like I always had. My co-workers have jokingly told me that I must...
  13. I thought I was the only person on earth who considered air conditioning to be a menace!!! LOL. My co-workers would laugh at me for wearing long sleeves with a zip-up sweater over top at work, but I always felt like the air conditioning gave the place a glacial feel. In fact, I didn't have air conditioning in my home for the first 39 years of my life...
  14. I was diagnosed in May '09 so this is my first Winter on a gluten-free diet. My question is so ridiculous that I'm almost embarrassed to ask... Did any of you notice that your ability to regulate body temperature has changed since going gluten-free? Before I was diagnosed and knew to avoid gluten, I was finding that I sweat my way through the warm...
  15. I really don't know if I'm NCGI or Celiac since I had already gone gluten-free on my own and was unable to complete the 6 week gluten challenge needed for a colonoscopy and/or bloodwork. I made it only 12 days back on gluten and had such horrible diarrhea and felt so wretched that I refused to continue and went back to being gluten-free. As far as I'm concerned...
  16. I really found this thread and its responses to be very interesting. I, too, find that I have issues with yeast overgrowth when I get glutened. I seem to have the opposite problem from many of you, though. My blood sugars go UP when I've been glutened and/or have yeast overgrowth. Maybe it's that I'm eating more carby, sugary foods when I have the...
  17. I have to agree with you on this although...I would like to add that I might be more inclined to say there was an actual reaction going on if the jump in values was significant - not just the few "points" noted here. As an example let me relate something that happened to me recently... I attended an employee picnic/fun day/health fair that included screening...
  18. Just be REALLY careful making the assumptions that you're making. True, the ingredient lists of some foods don't SHOW gluten, such as the Duncan Hines brand of frosting, but DH won't call their frostings gluten-free any longer because they might be made on equipment that processes other gluten-containing products...i.e. cross-contamination. If in doubt...
  19. Hi, Melissa... I was the one that had actually emailed you specifically about the Southwestern Omelet. I did find the gluten-free list you mention on the website but, as you said, it needed updated for the new breakfast items you have. I really appreciate you going the extra mile to provide not only me, but this whole forum, with up-to-date info on...
  20. I still have a little pain from time to time but I'm more certain than ever that its root cause was the glutening I received. Although the Costo was a good suggestion, I know for a fact that the pain I was experiencing was not Costo. I can't say that I like your doctor's explanation of what Costochondritis is. Costo is an inflammation of the cartilage...
  21. If the scope and biopsy are such a wonderful diagnotic tool for Celiac, how do you explain those people who have positive blood tests and yet show no villous changes on a biopsy? Or what about those that have a confirmed diagnosis of DH but still have negative intestinal studies? Is it due to that person not having been exposed to gluten long enough to...
  22. Cool! Thanks so much. That should make food prep a little bit easier.
  23. I can honestly say, Ahorsesoul, that I'm a bit disappointed with the way in which you chose to respond to the posts. JasonD2, Jana315 and myself were completely honest and laid ourselves open in talking about our individual difficulties and asking for simple, polite ways that those who have been doing this longer than us talk with wait staff, friends, acquaintances...
  24. I was going to buy a package of shredded cheese at the store the other day but I wasn't sure if the one term on the ingredient list was safe, or not. The label said, "Powdered cellulose added to prevent clumping". I'm pretty sure cellulose is a plant product (?) but, if so, WHICH plant? Is "cellulose" considered a celiac disease safe additive? Thanks...
  25. FiddleFaddle... I agree with you 100%. Dietary response really should be the number one diagnosis as the gluten is obviously doing something bad to our systems or we wouldn't be reacting to it. I also agree with TotalKnowledge that, IMHO, Celiac Disease and gluten-intolerance are one in the same. I mean, when a woman is only a few weeks pregnant her...
