Wheat is a major allergen; barley, rye and oats aren't. Celiac disease isn't an allergy but an autoimmune disorder. Brilliant thinking on the bone broth. I noticed ages ago that chicken backs are very cheap, and I've always had a proclivity for chicken noodle, um, it would be soup if I didn't boil all the fluid away. Call it chicken noodles, I guess. Think I'll lay in a stock of rice noodles and give in to this tendency.

I've been very frustrated trying to find casein-free non-dairy cheese substitutes. I'll probably just use the nutritional yeast in place of Parmesan and otherwise do without. Dairy is so much worse than gluten because it was my crutch to allow me to give up gluten easily. I just made gluten-free pizza, gluten-free pasta, etc., and it was mainly similar to how I ate before because of the cheese. I don't care about milk, I don't care about cream, sour cream or yogurt, and even ice cream isn't much of a wrench (though those Julie...

I think the local health food market had Vegan Gourmet cheese, but am not sure. The local healthy supermarket (Earthfare) either had no cheese substitute or was hiding them cunningly. Go figure. So I've still been having symptoms, though mild ones, and I've decided to see if doing without dairy will help. One of my go-to lunch items is spinach-cheese-onion-pepper-garlic thing sprinkled with picante sauce and wrapped in a soft corn tortilla. Is there any caffeine in your life? On the long, long quest to figure out what was wrong with me, at some point I eliminated caffeine, and suddenly started sleeping all night for the first time in decades. I suspect it has a stronger effect on us that others. If you're already caffeine-free, sorry that I don't have any other suggestions. -

Another thing to think about is that a gluten reaction can happen any time up to 3 or 4 days after ingesting the gluten. So it may very well be that when it appeared that you were reacting to the bagel or to the wheat bread that you were in fact reacting to something you had eaten days earlier. I had the same problem (though not to the point of weight loss) but it got better when I quit gluten. However, I'm still having diarrhea to a lesser degree and suspect casein sensitivity. All I can tell you is there's no egg in Nature's Own honey wheat bread Open Original Shared Link and none in bagels unless it was an egg bagel. Was the bagel maybe whole wheat? It sounds like you might benefit from trying the gluten-free diet. You don't have to have celiac disease for it to do you good. -
